- Preheat oven to 375°. Cook rice according to package directions., Meanwhile, in a large skillet, saute onion in butter until tender. Remove from heat; stir in sour cream, chilies, cottage cheese, ricotta cheese, salt, pepper and rice., Transfer rice mixture to a 2-cup baking dish coated with cooking spray. Sprinkle with cheddar cheese. Bake 15-20 minutes or until cheese is melted. Sprinkle with parsley.

Steps:
- 1. Preheat oven to 350 degrees. Spray the bottom of a 9X13 inch glass baking dish. Cook rice according to package directions and pat into the bottom of the 9X13 inch glass baking dish.
- 2. Steam zucchini, bell pepper and onions in a saute pan until just tender. Shred the Jack Cheese. Slice tomato thinly.
- 3. Mix sour cream with garlic, salt and oregano.
- 4. Cover the rice with green chilies, half of the jack cheese, spread steamed vegetables over the cheese then 2/3 of sliced tomato. Spread sour cream mixture over top of tomato, top with remaining tomato and remaining cheese. Bake at 350 degrees for 35 minutes
