3 medium sweet potatoes, peeled and cut into 1/2-inch slices
1 large onion, chopped
1 large green pepper, coarsely chopped
1-1/2 cups frozen corn
1/2 teaspoon salt
1/4 teaspoon pepper
4 boneless pork loin chops (6 ounces each)
1 can (10 ounces) mild green enchilada sauce
1/2 cup sour cream
2 tablespoons reduced-sodium teriyaki sauce

Steps:

  • In a 6-qt. slow cooker, combine sweet potatoes, onion, green pepper, corn, salt and pepper. Top with pork chops. In a small bowl, mix enchilada sauce, sour cream and teriyaki sauce; pour over meat., Cook, covered, on low until meat is tender, 6-8 hours.

My DD makes this chile verde whenever we get together for Mexican dinners. It is a family favorite. The recipe is from a Sunset Mexican Cookbook,from 1977. Mild canned California green chiles season this meaty pork stew. Serve it with rice or as a burrito filling. For Burritos, spoon pork into warm, soft flour tortillas, add sour cream, tomato wedges, and a squeeze of lime juice and fold to enclose. We also serve this Chile Verde with Tamales. This chile Verde is also good served with scrambled eggs, Enjoy!

3 lbs lean boneless pork butt
2 tablespoons canola oil
1 large onion, chopped
2 garlic cloves, minced (I add more)
2 large green bell peppers, seeded and chopped
1 (7 ounce) can california green chilies, seeded and chopped
1 teaspoon dried oregano leaves, crumbled
1/2 teaspoon ground cumin
1 1/2 teaspoons salt
1/2 cup fresh cilantro, chopped
1 tablespoon wine vinegar
1/4 cup water
tomatoes, cut in wedges
cooked rice
sour cream
lime, cut in wedges

Steps:

  • Trim and discard fat and cut pork in 1-inch cubes.
  • In a large frying pan, heat oil over mediun-high heat; add meat a few cubes at a time and cook until very brown.
  • Push meat to side of pan and add onion, garlic and bell peppers; saute until limp.
  • Stir in chiles, oregano, cumin, salt, cilantro, vinegar, and water.
  • Cover and simmer until meat is fork tender(about 1 hour).
  • Skim off fat & discard.
  • Serve with rice or make burritos or serve in your favorite way.

1 boneless pork shoulder butt roast (2-1/2 to 3 pounds), cut into 1-inch cubes
1 tablespoon canola oil
1 cup chopped onion
3 garlic cloves, minced
2 cups water
1 can (28 ounces) stewed tomatoes
1 to 2 cans (4 ounces each) chopped green chilies
2 cups cubed peeled potatoes
1 tablespoon chopped fresh cilantro
2 teaspoons ground cumin
2 teaspoons dried oregano
2 teaspoons fennel seed
1 teaspoon salt
1/4 teaspoon pepper
1 can (15 ounces) pinto beans, rinsed and drained

Steps:

  • In a Dutch oven, brown pork in oil over medium heat on all sides. Add onion and garlic; saute for 3-5 minutes. Drain. Add the water, tomatoes, chilies, potatoes and seasonings; bring to a boil. Reduce heat; cover and simmer for 45 minutes. , Add beans; cover and simmer for 20-30 minutes or until the meat and vegetables are tender.

1/2 cup unsalted butter
3/4 cup all-purpose flour
1/2 gallon chicken stock
2 pounds braised pork butt, shredded
2 cups roasted, seeded and diced green chiles
2 tablespoons Cajun spice
2 tablespoons fresh parsley leaves, minced
1 cup medium-diced tomatoes

Steps:

  • Over medium heat in a medium saucepan, heat the butter until melted. Then reduce the heat to low and slowly whisk in the flour to create a roux. Continue to cook until the butter has been absorbed into the flour and is a smooth consistency.
  • Once the roux has cooked, return the mixture to medium-high heat. Add the stock and allow to simmer, whisking throughout the cooking process. Once simmered and thickened, 8 to 10 minutes, add the pork, chiles, spice and parsley. Allow this to cook for an additional 20 minutes, with reduced heat to medium-low. Finally, add the tomatoes and cook for a final 10 minutes. Taste and adjust spice to preference.

1 1/2 pounds boneless country-style pork ribs, patted dry
Coarse salt and ground pepper
3 teaspoons extra-virgin olive oil
1 3/4 cups low-sodium chicken broth
3 tablespoons all-purpose flour
Chili powder
2 sweet potatoes (1 pound), peeled and cut into 1-inch pieces
1/2 cup sour cream
2 teaspoons sugar
3 garlic cloves, thinly sliced
1 pound green beans, trimmed

Steps:

  • Season pork with salt and pepper. In a large straight-sided skillet, heat 1 teaspoon oil over medium-high. Add pork and cook until browned on both sides, about 7 minutes total. Whisk together broth, flour, and 1/2 teaspoon chili powder and add to skillet. Bring liquid to a boil; reduce to a rapid simmer, cover, and cook 30 minutes. Uncover and cook until pork is tender and sauce is thickened, about 20 minutes.
  • Meanwhile, in a medium pot, bring sweet potatoes to a boil in salted water over high. Reduce to a rapid simmer and cook until tender when pierced with a knife, 20 minutes. Drain potatoes and return to pot; mash until fluffy and almost smooth. Stir in sour cream and sugar, season with salt and pepper, and keep warm over low heat.
  • In a large skillet, heat 2 teaspoons oil over medium-high. Add garlic and cook until fragrant, 30 seconds. Add green beans and 1/4 cup water, cover, and cook 3 minutes. Uncover and cook, stirring occasionally, until crisp-tender and water is evaporated, 2 minutes. Season with salt and pepper and serve with pork, sauce, and sweet potatoes sprinkled with chili powder.
