1/4 cup fresh squeezed lime juice
2 tablespoons ancho chili powder
3 cloves garlic, coarsely chopped
6 chicken thighs
2 tablespoons canola oil
Salt and freshly ground black pepper
Peanut-Red Chile BBQ Sauce, recipe follows
2 tablespoons canola oil
1 large Spanish onion, coarsely chopped
5 cloves garlic, coarsely chopped
3 cups canned plum tomatoes and juices, pureed
1 cup water
1/4 cup ketchup
1/4 cup red wine vinegar
1/4 cup Worcestershire sauce
3 tablespoons Dijon mustard
3 tablespoons dark brown sugar
2 tablespoons honey
1/4 cup molasses
3 tablespoons ancho chili powder
3 tablespoons pasilla chili powder
2 tablespoons pureed chipotle chiles in adobo, pureed
Salt and freshly ground pepper
1 tablespoon canola oil
2-inch piece fresh ginger, peeled and finely chopped
1 1/2 cups Mesa BBQ Sauce
2 cups homemade chicken stock or low-sodium canned chicken broth
2 tablespoons soy sauce
1/4 cup peanut butter
Salt and pepper
1/2 head red cabbage, finely shredded
1 small red onion, halved and thinly sliced
1/4 cup rice wine vinegar
1/2 cup freshly squeeze orange juice
1/4 cup canola oil
1 tablespoon honey
1/4 cup chopped cilantro leaves
2 tablespoons finely chopped fresh mint leaves
3 cups corn masa mix
1 1/2 teaspoons salt
2 1/4 cups warm water
Vegetable oil, for frying
Shredded chicken, guacamole, beans and cheese or your favorite filling
1/2 finely chopped roasted peanuts
1 tablespoon light brown sugar
2 tablespoons finely chopped cilantro leaves

Steps:

  • Whisk together orange and lime juices, chili and garlic in a shallow baking dish, add the chicken thighs, turn to coat and marinate 1 to 4 hours in the refrigerator.
  • Preheat grill to high or grill pan over high heat. Remove thighs from the marinade and season with salt and pepper on both sides. Grill for 4 to 5 minutes on each side or until just cooked through. Brush with some of the peanut sauce during the last few minutes of grilling.
  • Place tacos, chicken, peanut-red chili sauce, red cabbage slaw and relish in bowls and on serving platters and serve.
  • Heat the oil over medium-high heat in a heavy-bottomed medium saucepan. Add the onions and cook until soft, 3 to 4 minutes. Add the garlic and cook for 1 minute. Add the tomatoes and water. Bring to a boil and simmer for 10 minutes. Add the remaining ingredients and simmer for an additional 30 to 40 minutes until thickened, stirring occasionally.
  • Transfer the mixture to a food processor and puree until smooth, season with salt and pepper, to taste. Pour into a bowl and allow to cool at room temperature. Sauce will keep for 1 week in the refrigerator stored in a tightly sealed container.
  • Heat the oil in medium saucepan over medium heat; add the ginger and cook until soft. Increase heat to high, add the BBQ sauce and chicken stock and cook, stirring occasionally, until reduced by half.
  • Whisk in the soy sauce and peanut butter and cook for 5 to 7 minutes longer. Season with salt and pepper.
  • Place cabbage and onion in a large bowl. Whisk together the vinegar, orange juice, oil and honey and pour over the cabbage. Add the cilantro and season with salt and pepper. Garnish with mint. Let sit at room temperature for 20 minutes before serving.
  • Combine the masa mix, salt and warm water in a large bowl and mix until a smooth dough forms. Pull off pieces of dough and roll them into balls about the size of a ping pong ball.
  • Cut a quart size resealable plastic bag open down both sides, to form a rectangle. Use the bag to line the tortilla press as you shape the tortillas so they do not stick: Lay 1 side of the plastic over the bottom of the press. Place a ball of dough in the center, and fold the other side of the plastic over the dough. Shut the top of the tortilla and press firmly down on the dough to shape the tortilla.
  • Meanwhile, pour 2 inches of vegetable oil into a large deep pot and heat to 350 degrees F.
  • Drop a tortilla into the hot oil and, using a metal spatula, repeatedly douse the tortilla with the hot oil until it begins to puff up. Flip it over and, using the spatula, make an indentation in the center of the tortilla to form a taco shape. Transfer to paper towels to drain.
  • Fill each taco with 2 tablespoons of shredded chicken, guacamole, beans and cheese or your favorite filling.
  • Combine all ingredients in a small bowl just before serving.

Honey Bourbon Glazed Smoked Spareribs, with Beer Bacon BBQ sauce and Southwestern Green Chili Mac 'n' Cheese image

1/2 cup bourbon
2/3 cup honey
2 tablespoons brown sugar
3 tablespoons unsalted butter
1/2 cup diced white onion
2 teaspoons chopped garlic
One 12-ounce bottle of your favorite beer
1/2 cup cooked bacon, coarsely chopped
1/8 cup apple cider vinegar
2 cups ketchup
1/4 cup molasses
1/3 cup granulated sugar
3 tablespoons brisket drippings
2 tablespoons chili powder
1 tablespoon Worcestershire
Kosher salt and pepper
1/4 cup kosher salt
1/4 cup coarse black pepper
1/8 cup Korean chile powder
1/8 cup granulated garlic
Canola oil, for rubbing the ribs and smoker grates
2 racks pork spareribs
1 cup apple cider vinegar, in a spray bottle
Garnish: sliced green onions
4 to 6 cups half-and-half
1 tablespoon chopped garlic
1 tablespoon chipotle hot sauce
1 teaspoon ground roasted cumin
1 teaspoon seafood seasoning
1 teaspoon fresh thyme leaves
1/2 cup shredded American cheese
1 pound medium pasta shells, cooked to al dente
1 cup diced cooked green chiles
1 cup shredded jack cheese
1 1/2 cups shredded sharp Cheddar
1 cup shredded smoked Gouda
Kosher salt and pepper
2/3 cup toasted buttered breadcrumbs
1 teaspoon Korean chile powder

Steps:

  • For the honey bourbon glaze: Pour the bourbon into a saucepan over low heat; ignite bourbon to burn off the alcohol for about 5 minutes. Add the honey and brown sugar and whisk to thicken. Simmer for another 3 minutes, then remove from heat. Pour glaze into a small bowl and set aside.
  • For the beer bacon bbq sauce: Heat a large pot on high heat, then add the butter and let it melt for 1 to 2 minutes. Reduce heat to medium. Add the onions and garlic. Saute until translucent. Add the beer and bacon and cook for 8 to 10 minutes. Add the apple cider vinegar and reduce by a quarter, then add ketchup, molasses, granulated sugar, brisket drippings, chili powder, Worcestershire, salt and pepper and cook on low heat for 30 to 45 minutes, stirring occasionally. Let cool for 10 minutes, then puree in a blender until smooth, and season with salt and pepper to taste.
  • For the ribs: Whisk together the salt, pepper, chile powder and garlic powder in a small bowl. Drizzle a little canola oil over the ribs, front and back, then rub the oil in. Holding your hand high, season both sides of the ribs with rub. Be sure to get an even coating on both sides, along with the sides of the ribs.
  • Soak 5 to 6 paper towels with canola oil, then open the smoker lid and place soaked paper towels in the smoker with 1 chunk hickory, 2 small chunks apple wood and a few handfuls charcoal. Light the paper towels. Let the coals burn down for 20 to 30 minutes. Add a couple more chunks hickory, apple and charcoal, then let smoker come up to 250 degrees F. Place a small pan of water on smoker rack, then place ribs in smoker. Let cook 30 to 40 minutes.
  • Add another chunk of each wood and more charcoal; repeat this process every 30 to 45 minutes. At 2 hours into the cooking process, spritz ribs with apple cider vinegar, then spritz every 30 minutes until the third hour of cooking. At the third hour, wrap the ribs in foil and place back on the smoker. At the 4 1/2-hour mark, take the ribs out of foil and glaze with the honey bourbon. Let glaze set in for 20 to 30 minutes in the smoker meat-side up. Let ribs rest for 10 to 15 minutes, then slice. Drizzle ribs with Beer Bacon BBQ sauce and toss. Garnish the ribs with sliced scallions.
  • For the Southwestern Green Chili Mac 'n' Cheese: Meanwhile, heat four cups half-and-half to a gentle boil in a medium-large saucepot. Add the garlic, chipotle sauce, cumin, seafood seasoning and thyme, then add the American cheese, whisking until smooth and melted. Fold in the pasta and green chiles and heat through until lightly bubbly. Add the shredded jack, Cheddar and Gouda. If the pasta is too thick, add in another cup or two of half-and-half to smooth it out. Season to taste with salt and fresh ground pepper. Garnish with toasted buttered breadcrumbs and a sprinkle of Korean chile flakes.
  • If you prefer baked mac 'n' cheese, place pasta into a casserole dish, sprinkle a handful of extra Cheddar and jack cheeses on top and bake at 350 degrees F until browned and bubbly, about 30 minutes.

CHILI BBQ SAUCE

This is a great BBQ sauce that takes just about no time at all to whip together. It's got a great flavor that melds together so nicely. This is actually better the second day, so if you have the time, make it the day before. I will tell you this, use the best chili sauce you can find. It makes all the difference. I use Heinz, and I heartily recommend that you do the same. The chili sauce makes up the bulk of the recipe, so you need to use the best.

2 tablespoons vegetable oil
2 tablespoons orange juice, fresh if possible

2 tablespoons tomato paste
1/3 cup brown sugar
1/4 cup malt vinegar
2 tablespoons honey
2 teaspoons chili powder

1/4 teaspoon ground cayenne pepper
1/4 teaspoon salt

Steps:

Chili Rubbed Pork Chops with a Ginger Plum Bbq Sauce and White and Yellow Yam Salad image

1 pound dried whole ancho chilies
2 ounces black peppercorns
3 ounces fresh coriander seed
3 ounces fresh cumin
3 ounces kosher salt
3 ounces sugar
6 tablespoons Chili Rub
6 ounces olive or vegetable oil
6 (12 ounces) pork chops
Salt and pepper
6 ripe medium sized plums
1 tablespoon olive oil
Salt and pepper
1 tablespoon butter
2 ounces fresh ginger, peeled and chopped
1 medium sweet Vidalia onion, minced
1 clove garlic, minced
3/4 cup brown sugar
1 cup chicken stock, preferably dark
1 tablespoon hoisin sauce
2 ounces cilantro, chopped
3 white yams, peeled and cubed
3 orange yams, peeled and cubed
1 red bell pepper, roasted, peeled and chopped
1 yellow bell pepper, roasted, peeled and chopped
3 ounces butter Salt and pepper to taste
3 ounces butter Salt and pepper to taste
2 tablespoons cilantro, chiffonaded

Steps:

  • Preheat oven to 275 degrees. Place ancho chilies on a sheet pan. Toast in oven for 15 to 20 minutes or until they become brittle. Remove from oven. Let cool. Snap off the tops and discard the stems, seeds and overleafs, leaving only the flesh. Grind the flesh in a food processor or grinder until it forms a powder, reserve. Toast the peppercorns, coriander, and cumin in a dry skillet over a low flame. Allow to cool. Grind into a powder. Add to chilies. Add salt and sugar to the rub. Strain through fine mesh strainer. If desired 2 ounces each of dried ground lemon and orange zest can be added. This rub can keep 3 to 4 months if covered and stored in a cool dry place.
  • Reconstitute chili rub with oil. Season each chop salt and pepper. Coat with Chili Rub. On a grill set to medium heat or in a saute pan set to low-medium heat, cook the pork chops to medium, about 5 to 6 minutes per side.
  • Preheat oven to 300 degrees. Toss plums in olive oil and a few pinches of salt and pepper. Place in baking pan and roast for 10 to 15 minutes. Let cool and discard skins. In a large saucepan, combine butter, ginger, Vidalia onion, garlic, plums and brown sugar. Stir in 1/2 cup chicken stock, so that the consistency of the mixture is slightly thick, adding more stock if necessary. Add hoisin and cilantro. Adjust seasonings, remove from heat and pass through a sieve.
  • Preheat oven to 285 degrees. Place yams on a baking sheet, preferably one made of teflon, Roast for 40 minutes. Let cool. In a skillet, saute peppers in butter. Toss with yams. Adjust seasonings. Saute until caramelized.
  • Assembly: Place some yam salad in the center of each plate. Place pork chop on top. Top each with some ginger plum BBQ sauce, and garnish with a chiffonade of cilantro.

SIRLOIN WITH CHILI-BEER BBQ SAUCE

1 1/2 c beer, can be non alcoholic
1 small onion, diced
3/4 c chili sauce
2 Tbsp soy sauce
1 Tbsp brown sugar
2 tsp chili powder
1 Tbsp garlic, minced
1/4 tsp dijon mustard
1/2 tsp salt and pepper
2 beef top sirloin steaks, 1 1/2 pounds each
1/8 tsp ground cumin

Steps:

  • 1. Sprinkle steaks with salt and pepper. Broil in oven 4 inches from top for 9-13 minutes on each side or grill on grill to desired doneness. In saucepan, combine the remaining ingredients. Bring to a boil. Reduce heat and simmer uncovered for 20 minutes. Baste occasionally with 1/2 cup of the sauce. When done slice and place on serving plate. Pour remaining sauce on top and serve.

1 cup chopped onion
2 teaspoons minced garlic
1 small jalapeno, minced (seeds removed, if desired, I've left it out before)
2 cups bell peppers, cubed (red or green)

1/2 teaspoon salt
2 teaspoons ground cumin
1 teaspoon dried oregano
3/4 cup chopped carrot
28 ounces can diced tomatoes with juice
1/2 cup barbecue sauce
1/2 cup water
15 1/2 ounces can black beans, with liquid
15 1/2 ounces can red kidney beans, with liquid

Steps:

  • Heat oil in a skillet over medium-high heat. Add onions, garlic, jalepeno, peppers, celery, salt, cumin, and oregano. Cook, stirring often until vegetables soften (8-10 min).
  • Transfer satueed vegetables to a slow cooker, add carrots, tomatoes and liquid, barbecue sauce, water, and beans, and liquid.
  • Cover; set on low; cook 8 to 10 hours.

1 (8 1/2 ounce) jar plum sauce or 3/4 cup sweet and sour sauce
1/3 cup hoisin sauce
1/4 cup soy sauce
3 tablespoons honey
3 tablespoons water
1 tablespoon sesame seeds
2 cloves garlic, minced
2 teaspoons grated ginger
1 1/2 teaspoons Asian chili sauce (I use Srirachi)
1/2 teaspoon five-spice powder
2 frying chicken, quartered or cut into 8 pieces

Steps:

  • For sesame-chili sauce: in a small saucepan combine all of the ingredients except chicken; cook over medium heat until bubbly, stirring frequently; reduce heat; cover and simmer for 5 minutes and set aside.
  • Rinse chicken and pat dry; remove skin if desired.
  • Place chicken, bone side down, on an uncovered grill over medium coals (or gas grill set to medium); grill for 20 minutes; turn, grill 15-25 minutes more or till tender and no longer pink (cut to test).
  • Brush with sauce frequently during the last 10 minutes of grilling.
  • Transfer chicken to a serving platter; heat any remaining sauce and pass with chicken.
