3 cups shredded monterey jack cheese (12 oz)
1 cup shredded Fontina cheese
1 (3 ounce) package cream cheese, softened
3 -4 tablespoons prepared mustard
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
4 teaspoons chili powder

Steps:

  • Combine first 6 ingredients in a medium bowl,mix well.
  • Shape into 1 inch balls.
  • Sprinkle chili powder in a large bowl,add cheese balls,and toss gently to coat.
  • Cover and chill.

Helen's Fried Cheese Balls with Chili Mayonnaise image

These little appetizers remind me of little crab balls, without the crab. The chili mayo is the perfect accompaniment

- 1 cup grated sharp cheddar cheese
- 1/2 cup fine bread crumbs (i like panko for this recipe)
- 5 drops worcestershire sauce
- 1 egg, beaten
- vegetable oil for frying
- 1 cup mayonnaise
- 6 tbsp. chili sauce
- 1 tsp. lemon juice
- 1/2 tsp. salt
- 1/2 tsp. cayenne pepper or brined hot chopped peppers

Steps:

  • To make the cheese balls, cover a cooling rack with three layers of paper towels. In a bowl, mix cheese, bread crumbs, Worcestershire sauce and beaten egg. Roll dough into balls about 1 inch in diameter. Set aside.
  • To make mayonnaise,mix mayonnaise, chili sauce, lemon juice, salt and cayenne pepper in a bowl and mix well.Cover and chill til ready to use.
  • Heat 1 1/2 inches of oil to 375 in a heavy deep flat bottomed pan or electric fryer. Use a slotted spoon to transfer balls, one at a time, onto hot oil. Fry balls in batches of four (to keep oil temperature from dropping) turning once, til both sides are golden brown, about 2 minutes on each side. Remove with slotted spoon to prepared rack. Cover with additional paper towels and allot to drain. Serve at once or keep warm in a 200 oven ti ready to serve. Serve with chili mayo.
  • Tips on Deep frying: Always use an electric fryer following the manufacture's instructions or a deep flat bottomed heavy pot on a level surface. Do not use plastic utensils when frying Use fresh oil every time you fry. Heat oil gradually and in an uncovered pot. The pot should be only half filled with oi to allow for foaming that may occur when items are lowered into it. Use a thermometer to gauge the temperature of the fat at all times. Keep temperature of fat constant. Allow time for the temperature to adjust after each batch. If appropriate, dry items on paper towels before immersing in hot fat. Keep items the same size so they will fry uniformly Don't crowd items in the pan. Have a bowl of ice water handy for spatters and burns. Never leave the frying area unattended Let oil cool completely pan before discarding.

1 lb ground beef
1 lb ground pork
1 egg
1/2 cup milk
1 teaspoon salt
2/3 cup rice, uncooked
2 teaspoons chili powder
1 garlic clove, crushed
2 1/2 cups tomatoes, canned
1/2 cup onion, chopped
2 tablespoons onions, grated
2 1/2 cups water

Steps:

  • mix meat add egg milk
  • add rice
  • salt.
  • and 1 t chili powder and grated onion and garlic.
  • form 1 1/2 inch meatballs.
  • in stockpot
  • combine 1 t chili powder tomatoes water 1/2 c chopped onion
  • bring to a boil
  • drop meat balls into boiling stock
  • cover simmer 1 1/2 hours.

I LOVE chili and am always concocting new versions of this Texan chuck wagon mystery stew! Chili recipes are usually guarded secrets, but, what's the fun of it all if you don't share? Some of my other concoctions have "won" small town contests (charity ones), and those I have shared; but this one is the only recipe I haven't yet...

PART 1:
1 Tbl. vegetable oil
2 lbs. chuck roast, trim fat, cut into 1 1/2" pieces
1/2 lb. thick-cut lean bacon, cut into 1" pieces
1/2 tsp. coarse ground pepper
1/4 tsp. garlic powder
1 green bell pepper, diced
1 red bell pepper, diced
1 large sweet onion, diced
6 fresh jalapenos, chopped small, more if you like it hot
1/4 tsp. seasoning salt, i always use johnny's
PART 2:
1/3 cup good chili powder
1 3/4 cups ketchup
3 Tbl. lemon juice concentrate
1/3 cup dark brown sugar
1 Tbl. worcestershire sauce
2 tsp. vinegar
1 1/2 tsp. mustard
1 1/2 Tbl. cumin
3 cups spicy hot v-8 tomato juice
1 (16 oz.) can fancy dark red kidney beans, rinsed and drained
2 (8oz.) pkgs. fresh sliced mushrooms
1 (14 1/2 oz.) can del monte original stewed tomatoes with the juice, crush tomatoes with hands as adding
1 cup beef bouillon made with superior touch better than bouillon beef base (1 cup hot water + 1 1/2 tsp. base)
*more salt, pepper and garlic powder to taste (1/4-1/2 tsp. each)
MEATBALLS:

Steps:

  • 1. In large deep frying pan, saute PART 1 ingredients until bacon is done and beef is seared on the outside. Add, with slotted spoon to drain grease, into large pot.
  • 2. Add PART 2 ingredients, stir to mix. Turn heat to medium-high, bring to a high simmer just under a boil, reduce heat and low simmer for 2 hours before adding meatballs.
  • 3. While chili is simmering, preheat oven and make meatballs. Mix all meatball ingredients except coarse pepper and cheese. Roll meat mixture into 20 balls. Push a piece of cheese into center of meatball and reform meatball around cheese to cover and seal. Place on lightly greased cookie sheet, sprinkle tops with coarse pepper, and bake for 20-25 minutes at 400 degrees . Remove from cookie sheet with a spatula on to paper towel-lined bowl. Add meatballs to pot. Return to a simmer and simmer 30 minutes longer.
  • 4. MEATBALLS: (Adding here because this site is not allowing me to edit the ingredients at this time) 1 1/3 lbs. ground beef 1/2 cup dry italian seasoned breadcrumbs 1/2 tsp. italian seasoning 1/4 cup milk 1 1/2 tsp. dried onion flakes 1 tsp. salt 1/2 tsp. worcestershire sauce 1 egg beaten 1/4 tsp. garlic powder coarse ground pepper 20 (1/2" cubes) pepper jack cheese
