1/2 pound flank or tri-tip
salt
pepper
flour
cooking oil
1/2 cup green chile or plain chopped green chilies
1/2 cup monterey jack

Steps:

  • Pound steak thin Salt & pepper Dredge in flour Pan-fry in hot oil till tender Drain on paper-towels Place on baking sheet, cover with green chilies and cheese Bake @ 350 till cheese melts - about 10 minutes

Number Of Ingredients 7

2 pounds round or Swiss steak cut into 1 inch cubes
2 Tbsp oil
1 medium onion, chopped
2 large tomatoes, peeled and chopped or 1 cup can tomatoes
8 fresh green chilies, or 8oz can chopped green chilies
2 cloves garlic, chopped
2 potatoes diced into 1 inch cubes

Steps:

  • Brown meat lightly in hot oil and salt to taste. Add onions, cook until clear. Add tomatoes and water to cover. Add garlic and chiles. Add diced potatoes. Simmer 45 min to 1 hour. Serve with flour tortillas.

For the tortilla's I use Masa Trigo. It is available at most grocery stores in the baking section, near the flour, or in the mexican food section. Just follow the easy directions on the back of the bag.

Number Of Ingredients 6

large 10 new mexico green chili's
c 2 cups diced tomato
c or approx 2 lbs steak cut into bite size pieces
can(s) 2 cans or 1 carton of beef broth
Tbsp 3 tablespoons of garlic powder
tsp 1 1/2 teaspoons of salt or to taste

Steps:

  • 1. Brown the meat in a little cooking oil, add beef broth on high until it comes to a boil then turn it down to a low simmer cover. Let simmer for an hour to an hour and a half. Until meat is nice and tender.
  • 2. While meat is cooking: squeeze using your hands green chile and tomato together, add 2 tablespoons of garlic powder, and salt to taste.
  • 3. Add green chile mixture to meat, let simmer on low another half hour. This recipe takes awhile, but is totally worth it. Trust me!!!!! Serve with tortillas.
