CORN FRITTERS WITH SWEET CHILI SAUCE

If you like savoury potato pancakes, latkes, etc. you'll love this one! Goes well as a lunch, casual dinner or even appetizer. We ate the leftovers for breakfast :-) This recipe comes from my new favorite cookbook "Bill's Food" by Bill Granger - an Aussie chef.

Number Of Ingredients 17

1/2 cup rice flour (throw it in your coffee grinder or buy it this way)
1/2 cup plain all-purpose flour
1/4 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1 egg, lightly beaten
1 teaspoon lemon juice
2 cups corn kernels
4 spring onions, finely sliced
3 tablespoons chopped fresh cilantro
1/4 cup oil
3 large fresh red chilies, finely chopped
1 cup rice vinegar
2 teaspoons salt
3/4 cup sugar
1 clove garlic, chopped

Steps:

  • Corn Fritters: Sift the ground rice, flour, baking powder, salt, corander and cumin into a bowl.
  • Add the egg, lemon juice and 1/2 c.
  • water and beat to a smooth batter.
  • Add the corn, spring onion and chopped cilantro and stir to combine.
  • Heat the oil in a large non-stick frying pan over med to hi heat.
  • When oil is hot, add 2 tblsp of mixture for each fritter and flatten with the back of a spoon.
  • Cook about 2 to 3 min, or until golden brown, then flip.
  • Sweet Chili Sauce: Combine all the ingredients for the sauce in a small saucepan and stir over a low heat until the sugar dissolves.
  • Bring to a boil, then cook for 5 min or until the mixture thickens to a slightly syrupy consistency.
  • Remove from the heat and allow to cool and serve with the fritters.

GREEN CHILE CORN FRITTERS



Green Chile Corn Fritters image

Chilies and salsa turn up the tempo of these corn fritters. Bisquick® mix adds ease in preparation.

Vegetable oil
4 cups Original Bisquick™ mix
1 cup cold water
2 eggs
2 cans (15.25 ounces each) whole kernel corn, drained
2 cans (4.5 ounces each) Old El Paso™ chopped green chiles, well drained
Old El Paso™ salsa (any variety), if desired

Steps:

  • Heat oil (2 to 3 inches) in deep fryer to 375°F.
  • Stir Bisquick mix, cold water and eggs in large bowl with spoon until smooth. Stir in corn and chilies.
  • Drop batter by small spoonfuls into hot oil. Turn and fry until evenly golden brown. Drain on paper towels. Serve with salsa.

These wonderful corn fritters came down from my great-grandmother. They can be served with maple syrup for breakfast, or as a side dish with jambalaya, chili, or a Mexican dinner.

1 (14.75 ounce) can creamed corn
¾ cup all-purpose flour, or as needed
½ cup milk
1 egg, beaten
¼ cup white sugar
2 ½ teaspoons salt
2 teaspoons vegetable oil
2 teaspoons baking powder
1 teaspoon vanilla extract
1 dash ground black pepper
¼ cup oil for frying, or as needed

Steps:

  • Combine creamed corn, flour, milk, egg, sugar, salt, 2 teaspoons oil, baking powder, vanilla extract, and pepper in a bowl to create a thick batter. Add more flour to the mixture if it seems too thin.
  • Heat oil in a large deep skillet over medium-high heat.
  • Test the readiness of the oil by dropping a small drop of batter into the oil; it should immediately start to bubble and cook, indicating that the oil is hot enough. Carefully drop tablespoons of batter into the hot oil. Cook no more than 4 fritters at a time to avoid cooling the oil, which causes the fritters to absorb more oil than necessary.
  • Cook fritters in the hot oil for 1 1/2 to 2 minutes. Turn over and cook until both sides are golden brown, about 1 minute more. Lift from the oil and place on a paper towel to drain. Continue with remaining batter.

FRESH SWEET CORN FRITTERS



Fresh Sweet Corn Fritters image

Unbelievably light, these fritters are best with fresh sweet corn. Great for breakfast and with ham or ribs. Serve with maple syrup. Easy to make too! My husband loves these and anticipates corn season.

1 cup all-purpose flour
1 teaspoon baking powder
3 ears fresh corn, kernels cut from cob
2 eggs, separated
½ cup heavy whipping cream
salt and freshly ground pepper to taste
1 quart vegetable oil for frying, or as needed
2 tablespoons cane syrup, or as desired

Steps:

  • Whisk flour and baking powder into a bowl and mix in corn kernels. Whisk egg yolks with cream in a small bowl and stir into the corn mixture; season with salt and black pepper. Beat egg whites with an electric mixer until fluffy and stiff peaks form in a separate bowl. Gently fold egg whites into the batter, retaining as much volume as possible.
  • Pour vegetable oil into a deep heavy skillet to a depth of 3 inches. Heat to 375 degrees F (190 degrees C).
  • Drop fritters into the hot oil, 2 to 3 tablespoons at a time, and cook until golden brown, 2 to 3 minutes per side. Drain fritters on paper towels and serve drizzled with cane syrup.
