CREAMY CHICKEN ANGEL HAIR
Our pasta-loving family often requests this recipe featuring chicken and vegetables. Lemon adds a light touch to the sauce, well seasoned with garlic and herbs.

Steps:
- Cook pasta according to package directions. Meanwhile, in a large skillet, saute the chicken, salt and pepper in 2 tablespoons oil until no longer pink. Remove and keep warm. , In the same skillet, saute carrot in butter and remaining oil for 1 minute. Add onion and celery; saute 3-4 minutes longer or until tender. Add garlic; cook for 1 minute., Stir in the cream, bacon, lemon juice and Italian seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until slightly thickened, stirring constantly. Return chicken to the pan., Drain pasta; toss with chicken mixture. Garnish with cheese.

Steps:
- In a large pot of salted boiling water, cook angel hair pasta until it is al dente, about 8 to 10 minutes. Drain, and set aside.
- In a large skillet, heat oil over medium-high heat. Saute the onions and garlic. Stir in the tomatoes, chicken, basil, salt and hot pepper sauce. Reduce heat to medium, and cover skillet. Simmer for about 5 minutes, stirring frequently, until mixture is hot and tomatoes are soft.
- Toss sauce with hot cooked angel hair pasta to coat. Serve with Parmesan cheese.

- In a large skillet, heat olive oil to medium high heat. Add the garlic, bell pepper and pea pods. Reduce heat to medium low and cover. Cook for 5 minutes.
- Cut chicken into strips, approximately 1/4 inch wide. Add the chicken, onion powder, ground black pepper and salt to the skillet. Cover and cook for 5 more minutes.
- In a separate small saucepan, heat the chicken broth to a near boil. Pour the hot broth into the vegetable/chicken skillet. Toss and serve mixture over cooked angel hair pasta immediately.
- Note.
- To make this OAMC, don't do the last step, or at least just the first part.

CHICKEN DIJON WITH ANGEL HAIR PASTA AND FRESH ZUCCHINI

Steps:
- Fill a large pot with water and begin to heat for pasta.
- Cut chicken breasts into thin slices, then into 1 inch pieces.
- Peel and quarter onion, then slice thinly.
- Trim stems off of mushrooms and slice thinly.
- Drain artichoke hearts and cut into small pieces.
- Trim zucchini and cut into 1/4 inch pieces.
- Place in a microwaveable dish and set aside.
- Place 1 tablespoon butter & 1 tablespoon vegetable oil in a wide frying pan or wok over medium high heat.
- Press garlic and add; add red pepper flakes, too.
- Then add chicken pieces and cook for 1-2 minutes.
- Microwave zucchini on high for 6 minutes.
- To pan with chicken, add onion slices and cook 1 minute more.
- Add mushroom slices and artichoke pieces.
- Continue cooking until chicken pieces are no longer pink (approximately 4 minutes) and remove pan from heat.
- Reduce burner temperature to low.
- Put pasta in boiling water and cook 1-2 minutes or until done.
- Add Dijon mustard, wine, & tamari to chicken mixture and stir carefully.
- Place pan back on burner and add light sour cream.
- Stir gently until sauce forms.
- Remove from heat.
- Remove zucchini from microwave.
- Season lightly with small amount of butter or margarine, salt, if using, black pepper, if using,
- Drain pasta in a large colander.
- Serve Chicken Dijon over pasta accompanied by fresh zucchini and green onions.
- Serve with bread sticks, a salad of European greens with raspberry vinagrette, and White Zinfandel wine.

- 1. Put a small amount of olive oil in a large frying pan. Heat pan to medium-high and add chicken. Saute until almost done, 5 to 10 minutes.
- 2. Add onion and zucchini and cook for 3 to 5 minutes.
- 3. Add garlic and cook for 1 more minute.
- 4. Add tomatoes with liquid and Italian seasoning. Cook for about 5 minutes.
- 5. Taste. Add salt and pepper if needed.
- 6. While chicken mixture is cooking, bring 8 cups of salted water to a boil.
- 7. Add pasta and cook according to package directions (usually 7 to 9 minutes).
- 8. When done, drain and put in a large bowl. Add pesto.
- 9. Toss.
- 10. To serve, put pasta on plates and spoon chicken mixture over top.
- 11. Grate fresh Parmesan cheese over top. Serve immediately.
