The yummy gingery-flavored sauce is delicious! To get every last drop, spoon stewed chicken, pepper and pineapple over hot cooked rice.

1 pound boneless skinless chicken breast, cut into 1 1/2-inch pieces
4 medium carrots, cut into 1-inch pieces
1/2 cup Progresso™ chicken broth (from 32-ounce carton)
2 tablespoons finely chopped gingerroot or 1 teaspoon ground ginger
1 tablespoon packed brown sugar
2 tablespoons soy sauce
1/2 teaspoon ground allspice
1/2 teaspoon red pepper sauce
1 can (8 ounces) pineapple chunks in juice, drained and juice reserved
1 tablespoon cornstarch
1 medium bell pepper, cut into 1-inch pieces

Steps:

  • Mix all ingredients except pineapple, cornstarch and bell pepper in 3 1/2- to 6-quart slow cooker.
  • Cover and cook on low heat setting 7 to 8 hours (or high heat setting 3 to 4 hours) or until vegetables are tender and chicken is no longer pink in center.
  • Mix reserved pineapple juice and cornstarch until smooth; gradually stir into chicken mixture. Stir in pineapple and bell pepper.
  • Cover and cook on high heat setting about 15 minutes or until slightly thickened. Note: This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturer's directions for layering ingredients and choosing a temperature.

Everyone's takeout favorite made right in the crockpot! The chicken is SO TENDER and JUICY bursting with so much flavor!

8 bone-in, skin-on chicken thighs
1 cup pineapple juice
1/2 cup chicken broth
1/4 cup brown sugar, packed
3 tablespoons reduced sodium soy sauce
2 tablespoons honey
2 tablespoons apple cider vinegar
1 teaspoon Sriracha, optional
1 teaspoon garlic powder
1/2 teaspoon ground ginger
1 (8-ounce) can pineapple chunks, juices reserved
1 (8-ounce) can crushed pineapple, juices reserved
2 tablespoons cornstarch
1 red bell pepper, chopped
1 red onion, chopped
1/2 teaspoon sesame seeds
2 tablespoons chopped fresh parsley leaves

Steps:

  • Season chicken with salt and pepper, to taste. Melt butter in a large skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side; drain excess fat and set chicken aside. In a large bowl, combine pineapple juice, chicken broth, brown sugar, soy sauce, honey, vinegar, Sriracha, garlic and ginger. Place chicken thighs into a 6-qt slow cooker. Stir in pineapple juice mixture. Top with pineapple chunks, crushed pineapple and reserved juices. Cover and cook on low heat for 5-6 hours or high for 2-3 hours, basting every few hours. In a small bowl, whisk together 1/4 cup water and cornstarch. Stir in cornstarch mixture, bell pepper and onion into the slow cooker. Cover and cook on high heat for an additional 30-60 minutes, or until sauce is thickened. Serve chicken immediately, garnished with sesame seeds and parsley, if desired.

4 chicken thighs, trimmed
1 cup pineapple chunks
¾ cup pineapple juice
½ cup soy sauce
⅓ cup brown sugar
2 tablespoons ketchup
1 clove garlic, minced

Steps:

  • Put flour into a shallow bowl. Dredge chicken thighs in the flour to coat; tapping thighs to remove excess flour.
  • Arrange chicken thighs in the bottom of your slow cooker crock; top with pineapple chunks.
  • Whisk pineapple juice, soy sauce, brown sugar, ketchup, and garlic together in a small bowl; pour over the chicken and pineapple in the slow cooker.

2 lb boneless skinless chicken thighs
1 to 2 cloves garlic, finely chopped
1 1/2 cups honey bbq sauce
1 can (20 oz) pineapple chunks, drained and 1/4 cup liquid reserved
1 small red bell pepper, cut into 1-inch pieces
1 small yellow bell pepper, cut into 1-inch pieces
2 tablespoons cornstarch
3 cups cooked rice
Chopped fresh parsley, if desired

Steps:

  • Spray 4- to 5-quart slow cooker with cooking spray. Place chicken thighs in slow cooker.
  • Top with garlic and sauce. Add pineapple chunks and 1/4 cup reserved liquid.
  • Cover; cook on High heat setting 3 hours or on Low heat setting 5 hours. When 30 minutes are left of cook time, add bell peppers. In small bowl, beat cornstarch and 1/4 cup water. Stir into slow cooker. Cover; cook on High heat setting for remaining time.
  • Serve with rice and parsley.
