3 medium yukon gold potatoes (diced)
2 c. fresh green beans (cut into 1 inch pieces)
1 lb chicken breasts (pounded to 1/2'' thickness)
1/2 c. butter
.7 oz package dry Italian dressing mix

Steps:

  • Cut green beans up. Line one side of the pan with green beans.
  • Cut potatoes up. Line opposite side of pan with the potatoes.
  • Line the chicken breasts down the middle of the baking dish.
  • Cut butter up and layer over the green beans, potatoes and chicken. Sprinkle Italian dressing over the entire pan. Cover with foil.
  • Bake at 350 degrees for 1 hr.

5 small bone-in chicken thighs (approximately 2 pounds)
1 pound small red potatoes (halved)
1 pound fresh green beans
1/4 cup olive oil
2 tablespoons fresh lemon juice
2 cloves garlic (minced)
1 1/2 teaspoons kosher salt
1 teaspoon dried basil *
1 teaspoon dried oregano *
1 teaspoon dried thyme *
1 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 400°F. Place the chicken, potatoes, and green beans on a large baking sheet.
  • Stir the olive oil, lemon juice, garlic together with all of the spices. Drizzle the spice mixture over the meat, potatoes, and vegetables. Use your hands to stir the pieces around a bit and make sure everything is well coated. Be sure to leave the chicken skin-side up.
  • Place the pan in the center of the oven and roast for approximately 50 minutes, until the chicken is golden brown and cooked through. The potatoes should be tender and slightly crisp and the green beans should be browned, crisp, and somewhat shriveled. Enjoy!

.7 ounce Italian salad dressing seasoning packet (1 packet)
½ cup butter (divided into 8 slices)

Steps:

  • Line the side of the 9x13-inch baking pan with green beans and then the other side of the pan with the cubed potatoes. Then place the chicken between the green beans and potatoes. There can be some overlapping.

6 tablespoons olive oil
2 lemons, 1 thinly sliced, 1 juiced
4 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
3/4 lb fresh green beans
8 small red potatoes, quartered
4 chicken breasts (bones left in, with skin) or 3 1/4 lbs chicken breasts (bones left in, with skin)

Steps:

  • DIRECTIONS.
  • Preheat oven to 400°F Coat a large baking dish or cast-iron skillet with 1 tablespoon of the olive oil. Arrange the lemon slices in a single layer in the bottom of the dish or skillet.
  • In a large bowl, combine the remaining oil, lemon juice, garlic, salt, and pepper; add the green beans and toss to coat. Using a slotted spoon or tongs, remove the green beans and arrange them on top of the lemon slices. Add the potatoes to the same olive-oil mixture and toss to coat. Using a slotted spoon or tongs, arrange the potatoes along the inside edge of the dish or skillet on top of the green beans. Place the chicken in the same bowl with the olive-oil mixture and coat thoroughly. Place the chicken, skin-side up, in the dish or skillet.
