This recipe came from my sister in law--the best baked chicken I have ever eaten! You can use a whole chicken or a cut up chicken.

1 tablespoon salt
2 teaspoons sugar
1/4 teaspoon garlic
1/4 teaspoon onion
1/4 teaspoon paprika
1/2 teaspoon lemon juice

2 tablespoons extra virgin olive oil

Steps:

  • add all ingredients together in bowl; mix well.
  • Cover chicken with rub.
  • Bake at 350°F uncovered for about 1-2 hours.

1 tablespoon kosher salt
1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon ground thyme
2 teaspoons dried sage

1 ½ teaspoons dried rosemary
½ teaspoon cayenne pepper

Steps:

  • Stir celery flakes, salt, paprika, garlic powder, onion powder, thyme, sage, black pepper, rosemary, and cayenne pepper together in a bowl. Transfer spice mixture to a spice grinder or food processor and blend until smooth.

4 chicken breast halves, boned and skinned
2 tablespoons all-purpose flour
2 tablespoons butter
1 cup chicken stock
3 tablespoons fresh lemon juice
3 tablespoons chopped fresh basil
1 tablespoon lemon zest

Steps:

  • Place chicken breasts on a cutting board. Flatten slightly using the smooth side of a meat mallet. Dust both sides lightly with flour.
  • Melt butter in a large skillet over medium-high heat until bubbling. Saute chicken breasts until lightly browned, about 3 minutes per side. Add chicken stock, lemon juice, basil, and lemon zest. Cover and simmer until chicken is no longer pink in the center, about 10 minutes.
  • Transfer chicken to a warm platter. Cover loosely to keep warm. Boil remaining liquid over high heat, uncovered, until reduced to 1/2 cup. Spoon sauce over chicken.

1 medium lemon
2 garlic cloves, peeled divided
1/4 cup minced fresh basil, divided
1 broiler/fryer chicken (3 to 4 pounds)
2 tablespoons butter, melted
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 375°. Finely grate enough peel from lemon to measure 2 teaspoons. Cut lemon in half; squeeze juice from one half. Set aside. Slice one garlic clove; place sliced garlic, 2 tablespoons basil and the remaining lemon half in the chicken cavity., Place on a rack in a shallow roasting pan; rub with reserved lemon juice. Mince remaining garlic; combine with butter and reserved lemon peel. Rub mixture over chicken. 1 tablespoon garlic powder
2 teaspoons salt
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon paprika
1/2 teaspoon crushed red pepper
1/2 teaspoon poultry seasoning
1/8 teaspoon ground cumin
1/8 teaspoon ground thyme
1/8 teaspoon finely ground black pepper
1 (3 to 3 1/2-pound) chicken, giblets and neck removed, rinsed and patted dry
2 teaspoons olive oil
Chicken stock, or water
Steamed long-grain white rice, accompaniment
Steamed assorted vegetables, accompaniment

Steps:

  • Poultry Rub:
  • In a small bowl, combine all the ingredients thoroughly and store in an airtight container for up to 3 months.
  • Chicken:
  • Preheat the oven to 350 degrees F.
  • Rub the chicken on all sides with the oil and sprinkle with the poultry rub. Place the chicken upright on a vertical roaster, making sure the top of the roaster pokes through the neck cavity.
  • Place in a small roasting pan and add enough chicken stock or water to come about 1/4-inch up the side of the pan. Roast until the juices run clear and the chicken reaches an internal temperature of 165 degrees F, 1 hour to 1 hour and 15 minutes.
  • Remove from the oven and carefully transfer from the roaster to a platter. Let rest for 10 minutes before carving.
  • To serve, carve the chicken into pieces. Serve hot with the rice and vegetables.
