2 tablespoons oil
1 teaspoon garlic, minced
6 oz. (170 g) chicken breast, cut into strips
1 cup bamboo shoots, sliced into thin pieces
1 red chili, sliced into thin strips
1 cup fresh mint leaves
1 squirt lime juice
2 tablespoons fish sauce
1 teaspoon sugar or to taste
2 teaspoons chili sauce, I used Rooster brand chili garlic sauce
4 tablespoons thick coconut milk or coconut cream

Steps:

  • Mix the Sauce ingredients in a small bowl and set aside.
  • Heat up a wok with cooking oil and add garlic until aromatic.
  • Add in the chicken and stir-fry for a couple of minutes, add the bamboo shoots, chili, and mint leaves and stir fry until the chicken is cooked.
  • Add the Sauce and stir evenly. Add a few squirts of lime juice, dish out and serve with steamed rice.

6 ounces julienned white chicken meat
1/2 egg white
1 teaspoon cornstarch
1/2 cup finely chopped bamboo shoots
1 teaspoon black vinegar
1 teaspoon soy sauce
1/2 teaspoon sugar
1/8 teaspoon white pepper
3 tablespoons peanut oil
2 tablespoons finely chopped celery
1 thinly sliced spring onion
2 tablespoons finely chopped red bell pepper
1 1/2 teaspoons chili paste
2 tablespoons chicken stock

Steps:

  • Cut chicken into strips about 1/8 inch wide and 2 inches long. Mix with egg white and cornstarch. Set aside.
  • Rinse and drain bamboo shoots and slice with a thick slicing blade in food processor. Cut slices into small dice.
  • Combine vinegar, soy sauce, sugar and white pepper and set aside.
  • Heat 1 tablespoon peanut oil in wok until it shimmers. Stir-fry bamboo shoots, celery, spring onion and red pepper about 2 minutes; remove and set aside. Wipe out wok.
  • Heat remaining 2 tablespoons peanut oil in wok until it shimmers. Stir-fry chicken until it turns white.
  • Add chili paste; stir-fry. Add vinegar mixture and stir-fry.
  • Return the vegetables to wok and stir in chicken stock; stir-fry to mix well.

An easy to make Thai curry that you can substitute other vegetables in if you like. Goes great with jasmine rice. Recipe posted by request.

Number Of Ingredients 11

1 lb diced boneless chicken
1 -2 tablespoon red curry paste
3/4 cup unsweetened coconut milk
1/2 cup sweet basil
5 kaffir lime leaves, halved
1 -3 fresh hot red chili pepper, sliced lengthwise into narrow strips (amount to taste)
1/2 cup sliced zucchini
2 tablespoons fish sauce
1/3 cup water
5 ounces sliced bamboo shoots
1 1/2 teaspoons palm sugar or 1 1/2 teaspoons brown sugar

Steps:

  • Heat about 1/2 the coconut milk to a boil in a large pan.
  • Stir in the red curry paste.
  • Add the chicken, reduce heat, and simmer until chicken is cooked through, 5-7 minutes.
  • Add the rest of the coconut milk, water, bamboo shoots, sugar, and fish sauce and return to a boil.
  • Stir in the zucchini, kaffir lime leaves, and hot chillies.
  • Cook several minutes or until zucchini are done to your liking.
  • Garnish with sweet basil before serving.
  • Serve with hot rice, if desired.
