6 large boneless skinless chicken breast halves
1/2 teaspoon salt
1/2 teaspoon black pepper
3 ounces goat cheese
1 teaspoon finely grated lemon rind
1 large firm apple, peeled, cored, and shredded
flour, for dusting
1 large egg
1 1/3 cups breadcrumbs
1/2 cup parmesan cheese
2 tablespoons unsalted butter
2 tablespoons olive oil

Steps:

  • Place chicken breast on a large sheet of waxed or plastic; cover with another sheet; pound chicken breast to 1/4 inch thickness, remove the top sheet and season with salt and pepper.
  • Combine the goat cheese, lemon rind, and apple; divide the apple mixture among the chicken breast and spread the mixture evenly over half the surface of each breast; fold each breast in half and press the edges together, forming a pocket.
  • Sprinkle the flour onto a sheet of waxed paper.
  • In a small bowl combine the egg and water; In a shallow bowl, combine the bread crumbs and Parmesan cheese.
  • Dust each chicken breast lightly with flour and dip into egg mixture, moistening all surfaces.
  • Coat with bread crumb mixture, patting the crumbs gently in place. (The chicken can be prepared to this point several hours ahead; cover and refrigerate, when ready to cook, bring the chicken to room temperature).
  • In a large, heavy skillet, heat butter and oil over medium heat; Add chicken; cook until browned and cooked through, about 8 to 10 minutes per side, drain on paper towels and serve.

3 whole (6 split) chicken breasts, bone-in, skin-on
12 ounces Montrachet goat cheese, with garlic and herbs
Fresh basil leaves
Good olive oil
Kosher salt
Freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees.
  • Place the chicken breasts on a baking sheet. Loosen the skin from the meat with your fingers, leaving one side attached.. Cut 12 thick slices of the Montrachet and place 2 slices plus a large basil leaf under the skin of each chicken breast. Rub each piece with olive oil and sprinkle generously with salt and pepper. Bake the breasts for 35 to 40 minutes, until just cooked through. Serve hot or at room temperature.

2 skinless, boneless chicken breasts
½ cup chopped apple
2 tablespoons shredded Cheddar cheese
1 tablespoon Italian-style dried bread crumbs
1 tablespoon butter
¼ cup dry white wine
¼ cup water
1 tablespoon water
1 ½ teaspoons cornstarch
1 tablespoon chopped fresh parsley, for garnish

Steps:

  • Combine apple, cheese, and bread crumbs. Set aside.
  • Flatten chicken breasts between sheets of waxed paper to 1/4 inch thickness. Divide apple mixture between chicken breasts, and roll up each breast. Secure with toothpicks.
  • Melt butter or margarine in a 7 inch skillet over medium heat. Brown stuffed chicken breasts. Add wine and 1/4 cup water. Cover. Simmer for 15 to 20 minutes, or until chicken is no longer pink.
  • Transfer chicken to a serving platter. Combine 1 tablespoon water and cornstarch; stir into juices in pan. Cook and stir until thickened. Pour gravy over chicken, and garnish with parsley. Serve.

1 poblano chile, oil-roasted, peeled, cored, and seeded (page 154)
2 cloves garlic, minced
Kosher salt
1 1/2 pounds boneless, skinless chicken breasts
2 tablespoons vegetable oil
2 teaspoons green chile powder (page 151)
3/4 teaspoon dried Mexican oregano, toasted and ground (page 164)
1 cup unfiltered apple cider
1 1/2 cups cored, peeled, thinly sliced Gala, Jonathan, or Fuji apples (about 2 apples)
6 ounces semidry goat cheese, crumbled
8 (5 1/2-inch) flour tortillas (page 16), for serving
Garnish: Lightly toasted pine nuts (page 164), basil pesto, sun-dried-tomato cheese spread, or grated cheese like asadero, Cotija, Romano, or Parmesan

Steps:

  • Cut the prepared poblano chile into 1/4-inch-thick strips (rajas); set aside. Mash the garlic and about 1 teaspoon salt together with the side of knife to make a paste; set aside.
  • Season the chicken breasts with a little salt. In a large, heavy skillet, heat the oil over medium-high heat. Brown the chicken pieces lightly on both sides, 2 1/2 to 3 minutes per side. Decrease the heat to medium; add the garlic paste and sauté 30 seconds (do not let it burn). Stir in the green chile powder, oregano, and apple cider. Cook, uncovered, until the liquid is reduced to a syrup and the chicken is cooked through, about 6 minutes. Remove from the heat. Slice the chicken breasts into 1/4-inch-thick strips and return the strips to the pan along with the apples and the rajas. Remove from the heat, sprinkle with cheese, and serve immediately or keep warm in the pan until ready to serve.

2 tablespoons butter
1 large onion, sliced
salt, plus more to taste
4 teaspoons white sugar
5 medium apples - peeled, cored, and cut into 1/4-inch slices
1 pound Yukon Gold potatoes, cut into 1/4-inch slices
2 tablespoons olive oil
6 bone-in, skin on chicken thighs
2 tablespoons chopped fresh rosemary
ground black pepper

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray the top and bottom parts of a broiler pan with cooking spray.
  • Melt butter in a skillet over medium heat and add onion slices. Sprinkle onions with 1 teaspoon salt and saute for 2 minutes. Add sugar and continue cooking until onions are translucent but not browned, 6 to 8 minutes. Remove from heat.

1 large shallot, peeled and sliced
1 1/2 lbs chicken breasts, skinless, boneless, cut into 1 inch cubes
salt
1 tart green apple, thinly sliced
baby arugula leaf, enough for a salad for four
1/4 cup toasted walnuts, roughly chopped
1/4 cup goat cheese, broken up into little pieces
lemon juice
salt and pepper

Steps:

  • Heat stick-free frying pan to medium heat.
  • Add a tablespoon of olive oil and lightly sauté the shallot slices until translucent. Remove from pan.
  • Add another tablespoon of olive oil and cook the chicken breast pieces, stirring occasionally, until just cooked through - 5 to 10 minutes.
  • Sprinkle some salt on the chicken while you are cooking it. Remove from pan and chill.
