ROASTED SPICED CHICKEN AND APPLES



Roasted Spiced Chicken and Apples image

One 3- to 4-pound chicken, patted dry
Kosher salt
2 tablespoons Baharat, recipe follows
1 small yellow onion, quartered
8 sprigs fresh thyme
4 sprigs fresh rosemary
4 Gala apples, cored and quartered
1 teaspoon sugar
1 tablespoon olive oil
Splash of apple cider vinegar
1 tablespoon coriander seeds
1 tablespoon black pepper seeds
1 tablespoon cumin seeds
1 teaspoon whole cloves
1/2 teaspoon cardamom seeds
2 tablespoons sweet paprika
1 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg

Steps:

  • Place the chicken breast-side up in a 9-by-13-inch pan. Season inside and out with 2 1/2 teaspoons salt and the Baharat. Refrigerate, uncovered, for at least 1 hour and up to overnight; this will help the skin get crispy!
  • Preheat the oven to 450 degrees F.
  • Stuff the cavity of the chicken with the onion, 4 sprigs of thyme and 2 sprigs of rosemary. Scatter the apples and remaining sprigs of thyme and rosemary around the chicken, sprinkle with the sugar and a pinch of salt and drizzle with the olive oil. Roast the chicken until the juices run clear and the internal temperature reaches 160 degrees F, about 1 hour. Let the chicken sit for 10 minutes.
  • Discard the herb sprigs. Add a splash of vinegar to the apples and toss to coat. Carve the chicken and serve with the apples on the side.
  • In a dry skillet over medium heat, toast the coriander seeds, black pepper seeds, cumin seeds, cloves and cardamom seeds, stirring often, until fragrant, 3 to 5 minutes. Transfer to a spice grinder and blend. Stir in the paprika, cinnamon and nutmeg.

1/4 cup balsamic vinegar
1/4 cup orange juice
1/4 cup olive oil
2 tablespoons lemon juice
2 tablespoons reduced-sodium soy sauce
1 tablespoon brown sugar

1/2 teaspoon curry powder, optional
1/2 teaspoon salt

SALAD:

3 tablespoons peanut oil
2 medium skinless, boneless chicken breasts, cubed
2 unpeeled apples, cored and cubed
1 tablespoon grated ginger, or more to taste
1 bunch green onions, chopped
2 cups sliced mushrooms
2 tablespoons honey
salt and ground black pepper to taste

Steps:

  • Heat peanut oil in a large frying pan or wok over medium heat. Add chicken, apples, and ginger; cook and stir for 2 to 3 minutes. Add green onions and continue to saute until chicken is almost cooked through and apples start to soften, 5 to 6 minutes more.

Because of the combo of apples and honey, this Roasted Cider Chicken is a family favorite for Rosh Hashanah, but it's also perfect all through the Fall.

2 cups apple cider
2 tablespoons honey
6 whole cloves
1 teaspoon finely chopped fresh ginger
1 roasting chicken, 5-7 pounds
2 tablespoons vegetable oil, coconut oil or softened margarine
Salt and freshly ground black pepper to taste
2 teaspoons fresh thyme leaves or 1/2 teaspoon dried thyme
1 small red onion, sliced
2 tart apples, peeled, cored and quartered

Steps:

  • 1. Preheat the oven to 400°F. 2. Combine the cider, honey, cloves and ginger in a small saucepan. Bring to a boil over high heat and cook until the liquid has reduced to one cup. Discard the cloves. Set aside. 3. Rinse and dry the chicken. Place it on a rack in a roasting pan. Rub the chicken with the vegetable oil and sprinkle with salt, pepper and thyme. Place the chicken breast side down on the rack. Scatter the onion in the bottom of the roasting pan. Place the pan in the oven. Immediately reduce the oven heat to 350°F. Roast for 30 minutes. 4. Pour the reduced cider over the chicken. Roast for another 30 minutes, basting the chicken once or twice, then turn it breast side up. 5. Place the apples in the pan. Roast for another hour or so, or until a meat thermometer inserted into the thickest part of the breast reads 160° F. Baste several times during the roasting period. 6. Transfer the chicken to a carving board. Strain the pan fluids, remove the fat and pour the fluids into a small saucepan. Let the chicken rest at least 15 minutes before carving. While carving, cook the pan fluids to reduce them to a syrupy consistency. Serve the chicken and fluids separately.

1 3- to 4-pound chicken, cut into 16 pieces
1 to 2 tablespoons corn or canola oil
1 large onion, chopped
1 clove garlic, minced
1/4 cup dry white wine
1 cup apple juice
1 tablespoon fresh ginger, finely chopped
1 tablespoon cornstarch
1 cup plain low-fat or nonfat yogurt
2 well-flavored apples, cored and cut into small chunks
Freshly ground black pepper to taste
8 ounces medium egg noodles, cooked and drained

Steps:

  • Remove as much skin and external fat as possible from chicken. Heat 1 tablespoon oil in nonstick skillet or 2 tablespoons oil in regular skillet large enough to hold chicken pieces in single layer. Brown chicken on both sides in hot oil over medium heat; remove and set aside.
  • Saute onion and garlic in same pan until onion is soft. Add wine, apple juice and ginger to pan and cook over medium-high heat until liquid is reduced to 1 cup.
  • Stir cornstarch into yogurt. Add to pan with apples and chicken and season with pepper. Cook, covered, for about 20 minutes, until chicken is cooked through.
  • Arrange noodles on each of 4 plates. Spoon chicken and sauce over noodles.

1kg pack boneless skinless chicken thighs
1 thumb-size piece of fresh ginger, peeled and very finely chopped
4 garlic cloves, finely chopped
1 tsp mild chilli powder
15g pack fresh coriander, chopped
juice of 1 lime
2 tbsp sunflower oil
2 medium onions
1 tsp ground turmeric
400ml can reduced-fat coconut milk
1 fresh red chilli, deseeded and sliced
1 chicken stock cube

Steps:

  • Slice each chicken thigh into 2 or 3 large chunks, then put in a bowl with the ginger, garlic, chilli powder, half the coriander, lime juice and 1 tbsp of the oil. Stir well, then cover and leave in the fridge to marinate until ready to cook. For the best flavour, do this in the morning or, better still, the night before.
  • Peel and quarter the onions, then very finely chop them in a food processor; for a curry you want the onion really fine. Heat the remaining oil in a wok or large frying pan, then add the onion and stir-fry for about 8 mins until soft. Stir in the turmeric and cook for 1 min more, stirring well.
  • Tip in the chicken mixture with the marinade and cook over a high heat until the chicken changes colour. Pour in the coconut milk, add the chilli and stock, then cover and simmer for 20 mins until the chicken is tender. Stir in the remaining coriander, then serve with pilau rice, a bowl of mango chutney - we like Geeta's - and some poppadoms or naan bread.

1 red onion, halved, thinly sliced
1 apple, cored, halved, thinly sliced
2 tablespoons balsamic vinegar
1 teaspoon honey
1 teaspoon gingerroot, minced
2 boneless skinless chicken breasts
1/2 teaspoon salt (or to taste)
fresh ground pepper

Steps:

  • Preheat the broiler or a grill pan.
  • In a large skillet, heat the oil over medium heat; add the onion. Cook, stirring occasionally, until onion softens, about 5 minutes.
  • Add the apple, balsamic vinegar, honey and gingerroot. Cook, stirring frequently, until apple slices soften and onions caramelize, about 10 minutes.

2 tablespoons teriyaki baste and glaze (from 12-oz bottle)
2 tablespoons apple jelly
1/2 teaspoon grated gingerroot
2 teaspoons chopped fresh cilantro
2 boneless skinless chicken breasts (5 oz each)

Steps:

  • Heat gas or charcoal grill. In 1-quart saucepan, mix teriyaki glaze, apple jelly and gingerroot. Heat to boiling, stirring constantly, until jelly is melted. Spoon half of the mixture into small bowl or custard cup; stir in cilantro. Set aside to serve with chicken.
  • Cover and grill chicken over medium heat 15 to 20 minutes, turning and brushing with apple-ginger mixture during last 10 minutes of grilling, until juice of chicken is clear when center of thickest part is cut (170°F). Serve with reserved apple-ginger mixture.

4 boneless skinless chicken breasts
1 apple, cored and sliced
1/4 cup butter, real butter gives more flavor
1/2 cup heavy cream or 1/2 cup sour cream
1/2 cup white wine or 1/2 cup apple juice
1 teaspoon thyme

Steps:

  • Pan fry chicken in half of the butter just until no longer pink in the middle, turning once to ensure both sides are browned.
  • Remove chicken from pan and keep in a warm place or cover with foil.
  • Core and slice apples as desired. I like to use my apple slicer- looks like a wagon wheel with handles- and then slice each lengthwise to make them thinner. To peel or not to peel- hehehehe- up to you. Likewise, red or green- the choice is yours. I like peel on and red for color!
  • Add the rest of the butter, apples and thyme and fry until apples are as crisp or tender as you like.
  • Pour apples over chicken and keep warm.
  • Deglaze the pan with wine, cider or juice scraping all the yummy bits off the bottom.
  • Add the cream- could use reduced fat sour cream or reduced fat or nonfat yogurt to reduce fat/calories. Yogurt will and a nice 'tang' to the sauce.
  • Cook until slightly thickened.
  • Return the chicken and apple mixture to the pan to make sure apples and chicken are nice and warm.
  • When you are satisfied with the temperature of the dish, serve and enjoy!
  • Experiment with your favorite herbs and seasonings- I have not tried this but I think a pinch of cinnamon might be really yummy here or maybe some nutmeg -- hmm --.
