This is the actual Arby's Chicken Salad Sandwich recipe from the restaurant. This is a scaled down version, so I'm guessing on serving sizes. You may need to have more bread and lettuce on hand.

8 ounces chicken breasts, cooked, cubed
8 ounces mayonnaise
2 ounces celery, finely chopped
2 ounces pecans, chopped
4 ounces apples, chopped (they use red delicious I believe)
4 ounces red seedless grapes, chopped
4 -8 slices honey-wheat bread, thick
2 -4 lettuce leaves

Steps:

  • 1. Combine the first six ingredients and mix well.
  • 2. Use two pieces of bread and one lettuce leaf for each sandwich.
  • 3. Slide lettuce leaf on to one piece of bread.
  • 4. Put two large scoops of chicken salad mixture on lettuce leaf; top with other piece of bread.
  • ENJOY!

1/2 cup reduced-fat mayonnaise
3 tablespoons fresh lemon juice
1/2 teaspoon coarse salt
1/4 teaspoon ground pepper
Half of a leftover chicken from Easy Thyme-Roasted Chicken with Potatoes
2 peeled and thinly sliced Golden Delicious apples
3 to 4 thinly sliced celery stalks
1/2 cup coarsely chopped toasted walnuts

Steps:

  • In a large bowl, whisk together mayonnaise, lemon juice, salt and pepper.
  • Remove skin from half of a leftover thyme-roasted chicken.
  • Shred meat, and add to dressing. Add apples, celery stalks and walnuts. Serve over a bed of lettuce.

1 whole cooked chicken, rotiserrie-deli style, cut up, skin removed
1/3-1/2 cup mayonnaise
2 tablespoons sour cream
1 cup green seedless grape, sliced
1 apple, cored and diced in 1/2-inch chunks
3 green onions, thinly sliced
1 celery rib, thinly sliced
1/2 cup walnut pieces
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon lemon juice
1 teaspoon honey

Steps:

  • Combine the diced chicken with 1/3 cup mayonnaise, sour cream, sliced grapes, sliced green onions, sliced celery, walnuts, salt, pepper, and lemon juice.
  • Stir in the honey and more mayonnaise, if needed.
  • For best results, chill overnight.
  • Serve the chicken salad mixture on a bed of lettuce, in a wrap, in croissant rolls or a nutty grain bread.

I had chicken breasts left over from a BBQ I had and decided to make a chicken salad. I couldn't find a recipe that I liked so I played around and came up with this. It is delicious!

4 cooked chicken breasts, shredded
2 Granny Smith apples, cut into small chunks
2 cups chopped walnuts, or to taste
½ red onion, chopped
3 stalks celery, chopped
3 tablespoons lemon juice
½ cup vanilla yogurt
5 tablespoons creamy salad dressing (such as Miracle Whip®)
5 tablespoons mayonnaise
25 seedless red grapes, halved

Steps:

  • Toss shredded chicken, apple chunks, walnuts, red onion, celery, and lemon juice together in a large bowl.
  • Whisk vanilla yogurt, salad dressing, and mayonnaise together in a separate bowl; pour over the chicken mixture and stir to coat. Gently fold the grapes into the salad.
