This casserole got me and my family our '10 minutes of fame'. It was entered in the "News Channel 7 Kitchen Recipes" and I had 6 news crew members here at my home eating it! Not only is it easy to make, it is truly delicious, too! Serve with a fresh green salad if desired.

1 (3 pound) whole chicken
8 ounces dry bread stuffing mix
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of celery soup
1 ¼ cups chicken broth (from boiling the chicken)
1 cup evaporated milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Layer the deboned chicken meat in a lightly greased 9x13 inch baking dish. Sprinkle stuffing mix over the chicken layer.
  • In a large bowl mix together the soups, broth and evaporated milk. Stir well. Pour this mixture over the stuffing mix, making sure it gets to the bottom of the baking dish (poke around with a fork to let it saturate into the bottom layer). Bake in the preheated oven for 35 to 45 minutes, until it starts to bubble in the center.

We took our favorite casserole and turned it into a light and easy foil pack dinner, filled with classic flavors and fresh vegetables.

1 can (10 1/2 oz) condensed cream of chicken soup
1 1/2 cups Progresso™ unsalted chicken broth (from 32-oz carton)
3 teaspoons Montreal chicken seasoning
2 cups uncooked instant white rice
1/2 cup shredded carrot
1 cup halved, seeded and sliced mini sweet peppers
4 boneless skinless chicken breasts (6 oz each)
4 slices cooked bacon, coarsely chopped
2 green onions, sliced

Steps:

  • Heat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy-duty foil. Spray with cooking spray.
  • Measure 1/2 cup of the condensed soup, and reserve. In 4-cup glass measuring cup, mix remaining condensed soup, the chicken broth and 1 teaspoon of the seasoning; beat with whisk to blend. Add instant rice; stir and let stand about 8 minutes or until most of the liquid is absorbed. Stir in carrots and peppers.
  • Season chicken with remaining 2 teaspoons seasoning; place on center of each sheet of foil. Dividing evenly, spoon rice and vegetable mixture around each chicken breast. Divide any remaining soaking liquid over tops of breasts. Spread 2 tablespoons reserved soup over each breast; evenly top with bacon.
  • Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • Place packs on grill over medium heat. Cover grill; cook 10 minutes. Rotate packs 1/2 turn; cook 9 to 10 minutes longer or until juice of chicken is clear when center of thickest part is cut (at least 165°F). Remove packs from grill; cut large X across top of each pack. Carefully fold back foil, and garnish with green onions.

I made this up the other day when I couldn't find a recipe like what I wanted. The kids all but inhaled it so it must have been darn good! I make it with my own stuffing; however, I have posted it using the "easy" way! Please note that if you make your own stuffing it will take longer to bake!

2 1/2-3 cups cooked chicken, cubed
1 1/2 cups shredded cheese, your choice
1 (10 3/4 ounce) can cream of mushroom soup
1 (10 3/4 ounce) can cream of chicken soup
1/2 cup sour cream
1 teaspoon garlic
1 teaspoon Pickapeppa Sauce (optional)
24 ounces dry bread stuffing mix
16 ounces mixed vegetables, thawed

Steps:

  • Preheat oven to 350 degrees F.
  • If using box stuffing mix according to directions ( I always add a little celery and onion to it) --
  • Spray a 9x13 pan with Pam cooking spray. Place cooked chicken on the bottom of the pan -- add the thawed mixed vegetables, then the cheese. In a small bowl, combine the soups, sour cream, Pickapeppa if using and garlic. Pour over the top of chicken/vegetable mixture. Top with stuffing. Baked covered 30 minutes -- then uncovered for 30 minutes.

3 skinless boneless chicken breasts, trimmed and cut in half lengthwise
Salt
Pepper
1/3 cup Gold Medal™ all-purpose flour
3 tablespoons vegetable oil
2 tablespoons butter
1 container (8 oz) sliced fresh mushrooms
1/2 cup cream sherry wine
1 can (18 oz) Progresso™ creamy mushroom soup
6 slices Muenster cheese
3 tablespoons chopped fresh parsley

Steps:

  • Heat oven to 350°F.
  • Sprinkle both sides of the chicken with salt and pepper. Spoon flour onto shallow dish or pie plate. Coat both sides of chicken with flour; shake off excess.
  • In 12-inch skillet, heat oil over medium heat. Brown chicken on both sides. (You don't need to cook the chicken completely because it will finish cooking in the oven.) Transfer chicken to 13x9-inch (3-quart) glass baking dish.
  • Place butter in same skillet; let melt over medium-high heat. Add mushrooms; sprinkle with salt and pepper. Cook and stir mushrooms until golden brown. Stir in sherry; cook and stir for additional 1 to 2 minutes. Stir in soup; mix well. Cook until thoroughly heated.
  • Pour mushroom sauce over chicken; top each piece of chicken with one slice cheese. Fold cheese in half if it is too wide for chicken piece.
  • Cover dish with foil; bake 30 minutes. After 30 minutes, turn oven to broil setting. Remove foil from dish; broil 1 to 2 minutes to brown the cheese. Remove from the oven; set aside to cool slightly.
  • Top with parsley.

This recipe was quite a hit at my son's engagement party a few years ago.

4-2/3 cups water, divided
2 boneless skinless chicken breast halves
1 small onion, quartered
1 celery rib, cut into 1-inch pieces
1 large carrot, cut into 1-inch pieces
Salt and pepper to taste
2 cups herb stuffing mix
1/4 cup butter, melted
3 tablespoons Homemade Cream-Style Soup Mix
1/2 cup sour cream
1/2 cup frozen peas

Steps:

  • In a large saucepan, combine 4 cups water, chicken, onion, celery, carrot, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until chicken juices run clear and vegetables are tender. Remove and set aside chicken and carrot. Strain broth, discarding remaining vegetables. Set aside 1/2 cup chicken broth. (Discard or save remaining broth for another use.), In a bowl, combine stuffing mix and butter. In a microwave-safe bowl, whisk together the soup mix and the remaining water. Microwave, uncovered, on high for 1-1/2-2 minutes, whisking occasionally. Add sour cream and reserved broth. Stir soup mixture into stuffing mixture. Place half the stuffing mix in a greased shallow 5-cup baking dish; top with reserved chicken and carrots, then peas. Cover with remaining stuffing mix. Cover and bake at 350° for 20-30 minutes or until heated through.

This is a very versatile recipe. It calls for cream of mushroon soup but I make it with cream of chicken or cream of celery. It calls for mixed vegetables but I have made it with frozen corn, or green beans or peas. I use 2 boxes of stuffing mix because we like lots of stuffing.

1 (6 ounce) package Stove Top stuffing mix
1 1/2 cups water
1/4 cup butter or 1/4 cup margarine
4 boneless skinless chicken breast halves (about1-1/4 pounds)
1 cup frozen mixed vegetables
1 (10 3/4 ounce) can condensed cream of mushroom soup
1/3 cup sour cream (milk if you don't have sour cream)

Steps:

  • Set oven at 375F.
  • Mix stuffing according to instructions and set aside (do not cook)
  • Place chicken in 13X9 inch baking dish, or casserole dish.
  • Top with vegetables.
  • Mix soup and sour cream, pour over chicken.
  • Top with stuffing Bake for 45 minutes or until chicken is cooked through.
  • Make-Ahead: Assemble recipe as directed: cover.
  • Refrigerate overnight.
  • When ready to to serve, bake at 375F for 55 minutes or until chicken is done.
