If you like tacos, you'll love this taco salad. It's made with chicken and green salsa, but you could use ground or shredded beef and red salsa instead. It's based on a salad from a little drive-through Mexican place I used to visit when I lived in southern California. Yummmmy! This one is a big hit with kids. Our picky eaters love it. Use Monterey jack, Cheddar, or colby-jack cheese.

1 (7.75 ounce) can Mexican-style hot tomato sauce
½ cup sour cream
½ cup mayonnaise
¼ cup green salsa
1 lime, juiced
1 tablespoon olive oil
½ cup diced onion
2 cloves garlic, crushed, or to taste
1 ½ cups diced rotisserie chicken meat
1 cup finely shredded Monterey jack cheese
1 (10 ounce) bag shredded lettuce, chilled
1 (4 ounce) can sliced black olives
½ cup crushed tortilla chips

Steps:

  • Whisk tomato sauce, sour cream, mayonnaise, green salsa, and lime juice together in a bowl until combined. Refrigerate the dressing while making salad.
  • Heat olive oil in a skillet over medium heat and cook onion in hot oil until translucent, about 5 minutes; stir often. Mix garlic into onion and remove from heat; stir cooked chicken in skillet and allow chicken to warm.
  • Transfer chicken mixture to a large salad bowl and sprinkle with Monterey jack cheese; cheese will warm and soften. Top chicken and cheese with cold lettuce and pour dressing over salad. Sprinkle in black olives. Toss salad thoroughly with dressing and sprinkle with crushed tortilla chips to serve.

1 cup cherry tomatoes or 1 cup grape tomatoes
1/2 medium bell pepper, cut in thin strips
1/2 cup red onion, slices separated into rings
1/2 cup sliced carrot
1/2 cup sliced cucumber
8 ounces cooked boneless chicken breasts, cut in thin strips
black pepper, 5 to 8 twists peppercorn grinder
1 tablespoon olive oil
1/2 cup small diced onion
2 teaspoons minced garlic
2 teaspoons chipotle chiles in adobo, chopped
2 pints fresh raspberries, rinsed
1/2 cup raspberry vinegar
3/4 cup granulated sugar
1/2 teaspoon salt

Steps:

  • Mix salad greens and vegetables in large bowl.
  • Just before serving, drizzle with Raspberry Chipotle Vinaigrette; toss to coat.
  • Arrange chicken strips on top of salad. Twist black peppercorn grinder over salad.
  • To prepare Raspberry Chipotle Vinaigrette, In a medium saucepan, heat oil over medium-high heat.
  • Add the onions and cook, stirring, until soft and slightly caramelized, 4 minutes.
  • Add the garlic to the pan and saute for 1 minute.
  • Add the chipotles and cook, stirring continuously, for 1 minute.
  • Add the raspberries and cook until soft, 2 to 3 minutes. Add the vinegar and stir to deglaze the pan. Add the sugar and salt, and bring to a boil.
  • Reduce the heat to medium and simmer until thickened and reduced by half, 8 to 10 minutes.
  • Remove from the heat and cool before using as a salad dressing.
  • Tips for other uses:.
  • For a clear glaze, strain through a fine mesh strainer, pressing on the solids with the back of a spoon to extract as much liquid as possible.
  • Serving Suggestions:.
  • Use as a barbecue sauce, glaze, or basting sauce for poultry, shrimp, and meats. Pour over a block of cream cheese and serve as a dip with club crackers. Use as a sauce for meatballs or cocktail sausages for a crowd-pleasing appetizer. Great in wraps.

1 lb boneless skinless chicken breast, cubed
1/4 cup low-sodium teriyaki sauce
8 cups mixed salad greens, torn
2 (11 ounce) cans mandarin oranges, drained well
2 large carrots, shredded
1/2 cup almonds, slivered and toasted
3 tablespoons green onions, sliced very thin
2 tablespoons white wine vinegar or 2 tablespoons cider vinegar
2 tablespoons extra virgin olive oil
1 tablespoon low sodium soy sauce
2 teaspoons sugar
1/2 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon pepper (or to taste)

Steps:

  • In a zippered plastic bag (gallon size), combine the chicken and teriyaki sauce. Seal the bag, turn to coat and refrigerate for 1-2 hours to marinate.
  • Drain and throw away the marinade and place chicken cubes into a large skillet that has been sprayed with non-stick spray.

A souped up chicken salad seemed like a good idea for a main dish. I use my WOK a lot, particularly when it's hot out. I invented a chopped cashew salad dressing for this sort of thing some time back. It's rather good for fruit type salads . So Here we go, written as I fix it. A lot of my recipes are done this way typing notes into textpad as I work/invent.(Grynn)This is a BIG serving salad main dish or there's enough chicken for 2.

1/2 large b&s chicken breast, cut in about 1 inch bite sized pieces
1/2 tablespoon oil, for woking the chicken
1/2 cup drained mandarin orange segments, usually canned
1 cup mixed greens, the crisper the better,like iceberg or romain,depending on what available
1 hard-boiled egg, diced because i had it to use up (optional)
1/2 cup mild salad oil
1/4 cup vinegar
1/4 cup honey
1/4 cup chopped roasted cashews (I suppose you could use peanuts)
1 pinch salt, to taste

Steps:

  • Fire up the WOK and chow the chicken chunks until cooked through and set aside.
  • Remember this time it will have no additional cooking.
  • If you have cooked chicken use it.
  • A Woolfe Tip, when B&Schicken breasts are cheap, I chunk, WOK, and vac-bag freeze for later use.
  • Put all the dressing ingredients in a blender or small food processor and ZAP until blended.
  • I throw the cashews in as is, as I buy the pieces it's a lot cheaper that way.
  • You can do both the Chicken and dressing ahead of time.
  • Tear up the greens into a bowl.
  • Add the orange segments and cooled chicken.
  • Toss with the dressing.
  • I had this with some torn off bread.

  • Whisk first 4 ingredients until blended. Pour 1/4 cup over chicken in shallow dish; turn to evenly coat both sides of each breast. Refrigerate 1 hour to marinate, turning after 30 min.
  • Heat grill to medium heat. Remove chicken from marinade; discard marinade. Grill chicken 6 to 7 min. on each side or until done (165°F).

Number Of Ingredients 16

2 cups water
2 cups cut fresh asparagus (1-inch pieces)
1/2 cup julienned carrot (2-inch strips)
4 cups mixed salad greens
2 cups coarsely chopped spinach
2 cups cubed cooked chicken breast
5 tablespoons fat-free mayonnaise
2 tablespoons olive oil
2 tablespoons fat-free milk
1 tablespoon lemon juice
1 teaspoon thinly sliced green onion
1 teaspoon honey
3/4 teaspoon dried basil
3/4 teaspoon curry powder
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a small nonstick skillet, bring water to boil. Add asparagus; cover and boil for 1 minute. Add carrots; cover and boil 1-1/2 to 2 minutes longer. Drain and immediately place asparagus and carrots in ice water. Drain and pat dry., In a large bowl, combine the salad greens, spinach, chicken and blanched vegetables. In a small bowl, whisk together the remaining ingredients. Serve with salad.
