Our recipe has chicken thighs browned then baked with tomatoes, white wine, mushrooms, and sliced black olives. It is delicious served with pasta or rice.

3 tablespoons olive oil
1 tablespoon butter
6 to 8 chicken thighs
1 tablespoon all-purpose flour
1 teaspoon salt
1/2 teaspoon ground black pepper
2 cloves garlic (minced)
1/2 cup dry white wine
1 can (14.5 ounces) diced tomatoes
8 ounces sliced mushrooms
1 small can (about 2.25 ounces) sliced black olives (drained)
1/2 teaspoon dried leaf thyme
2 tablespoons chopped fresh parsley

Steps:

  • Heat oil and butter in a large skillet.
  • Saute the chicken thighs, turning frequently until browned on all sides.
  • Remove chicken to a casserole dish and set aside.
  • Heat oven to 350 F.
  • Stir flour into the skillet juices. Cook, stirring constantly, for 2 minutes.
  • Add salt and pepper. Add the garlic, wine, and tomatoes. Bring to a boil.
  • Add mushrooms, olives, thyme and parsley. Cook over medium heat, stirring frequently, for about 4 to 5 minutes.
  • Pour over the chicken in the casserole.
  • Cover and bake for 40 minutes.

4 bone-in skin-on chicken thighs (about 1 1/2 lb total)
1/2 teaspoon dried thyme leaves
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 to 2 cups Progresso™ reduced sodium chicken broth (from 32-oz carton)
1 tablespoon olive oil
1 package (8 oz) baby bella mushrooms, sliced
2 teaspoons chopped garlic
1 package (12 oz) fresh green beans (in steam bag)
4 oz cream cheese, cubed (from 8-oz package)
1/4 teaspoon crushed red pepper flakes
Chopped fresh chives, if desired

Steps:

  • Season chicken with thyme, salt and pepper. Place chicken skin side down in 12-inch nonstick skillet over medium-high heat. Cook without moving 8 to 10 minutes, until skin is deep golden brown. Turn chicken over; reduce heat to medium, and cook 10 to 12 minutes or until deep golden brown. Remove chicken from skillet, and discard drippings.
  • Add 1 1/2 cups of the broth to skillet; return chicken to skillet. Heat broth to simmering, and continue cooking over medium heat 15 to 20 minutes or until juice of chicken is clear when thickest part is cut (at least 165°F). Remove skillet from heat, and transfer chicken to plate; cover and keep warm. Pour juices into 1-cup measuring cup. Add enough chicken broth to make 3/4 cup; set aside.
  • Return skillet to medium heat; heat olive oil, and add mushrooms to skillet. Cook 3 to 5 minutes, stirring frequently, until mushrooms are tender and browned. Add garlic; cook about 30 seconds or until fragrant.
  • Meanwhile, cook green beans in microwave as directed on bag for minimum cook time; set aside.
  • Add reserved 3/4 cup chicken broth mixture, the cream cheese and pepper flakes. Heat to simmering; cook over medium heat 4 to 6 minutes, stirring frequently, until cheese is melted and sauce is starting to thicken. Stir in green beans, stirring to coat in sauce. Return chicken to skillet to serve.
  • Serve chicken with pan sauce and green bean mixture. Garnish with chives.

4 bone-in chicken thighs, excess fat and skin trimmed (about 1 Ã 1/2 lbs.)
1/2 teaspoon salt, divided
fresh ground pepper
1/2 cup chopped yellow onion
8 ounces mushrooms, sliced
1/2 cup chopped red bell pepper
1 garlic clove, minced
1 (14 1/2 ounce) can whole tomatoes, slightly pureed in a food processor
1/4 cup red wine
1 teaspoon dried Italian seasoning
1/2 cup shredded mozzarella cheese
1 tablespoon freshly grated parmesan cheese

Steps:

  • Preheat oven to 350 degrees.
  • In a medium skillet over medium heat, warm ½ tablespoon of the oil.
  • Add the thighs and cook until lightly browned, about 5 minutes on each side.

1 ½ pounds boneless, skinless chicken thighs
1 teaspoon garlic powder
1 teaspoon onion powder
salt and freshly ground black pepper to taste
2 tablespoons olive oil, divided
8 ounces white mushrooms, sliced
4 cloves garlic, smashed
1 teaspoon herbes de Provence
1 medium onion, sliced horizontally into 6 slices
½ cup dry white wine
snipped fresh chives or parsley for garnish (optional)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Pat thighs dry with paper towels. Combine garlic powder, onion powder, salt, and pepper in a small bowl. Sprinkle seasoning on both sides of the chicken thighs.
  • Heat 1 tablespoon olive oil in a 12-inch nonstick oven-safe skillet over medium heat. Swirl the pan to coat the bottom with the hot oil. A one-skillet meal that's beautiful, delicious and - surprise! - super easy. Italian herb-seasoned chicken thighs are browned in a skillet and roasted on top of a tomato, white bean and sage mixture.

4 bone-in skin-on chicken thighs (about 1 1/2 lb total)
1 1/4 teaspoons Italian herb seasoning
1/2 teaspoon salt
1 can (15 oz) Progresso™ cannellini beans, drained, rinsed
1 can (14.5 oz) Muir Glen™ organic fire-roasted diced tomatoes, undrained
1 tablespoon chopped fresh sage leaves

Steps:

  • Heat oven to 400°F. In 10-inch ovenproof skillet, heat 1 tablespoon of the butter over medium-high heat. Season chicken with 1 teaspoon of the Italian herb seasoning and 1/4 teaspoon of the salt.
  • Place chicken skin side down in skillet. Cook without moving 4 to 5 minutes, until skin is golden brown and chicken releases easily from surface. Turn chicken over, and cook 2 to 4 minutes or until lightly browned. Turn off heat; remove chicken from skillet to plate, and drain fat from skillet.
  • In small bowl, add beans, and lightly mash with potato masher or fork. Place chicken thighs, skin side up, on top of tomato and bean mixture, and transfer to oven.
  • Roast 18 to 22 minutes or until bubbly and juice of chicken is clear when thickest part is cut to bone (at least 165°F). Top with additional chopped sage, if desired.

4 boneless, skinless chicken breast halves, about 1 1/2 pounds
Coarse salt and ground pepper
1 tablespoon olive oil
1 pound mushrooms, trimmed and quartered
2 garlic cloves, minced
1 can (14.5 ounces) stewed tomatoes
1/4 teaspoon dried oregano

Steps:

  • Season chicken with salt and pepper. In a large (5-quart) saucepan with a tight-fitting lid, heat oil over medium-high heat; swirl to coat bottom of pan. Cook chicken, turning when it easily releases from the pan, until golden, 4 to 6 minutes. Transfer to a plate.
