SLOW COOKER CHICKEN TACO SOUP
You can call this soup or chili, but either way it is wonderful! This recipe is also very adaptable to your personal taste. I recommend using Bill Echols' Taco Seasoning from this website. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if you like. I hope you enjoy!

CHICKEN TACO SOUP
I found this hearty recipe online several years ago and often make it instead of chili. Made mostly of canned ingredients, this soup lets the slow cooker do the work for you so you can go about your hectic schedule. This recipe is very adaptable to your personal taste. To add more kick simply omit the one can of diced tomatoes and add a second can of diced tomatoes with green chilies.

CHICKEN TACO SOUP
This recipe came with some canned chicken we bought at Sam's Club. We were short on time so we made it on the stove top instead of in a Crockpot. My son, who is a cook, came up with the idea to pan roast the corn before adding. It turned out great! We served it with Tostito Scoops for "dipping" which our grandson loved. Next time I am going to add some Cilantro and Lime Juice to brighten it up a little. Hubby says it is a keeper!

CREAMY CHICKEN TACO SOUP
This is a creamy version of taco soup. Using cheap bone in chicken thighs and a crock pot make this a cheap and easy way to feed your family. I've put in the rice as optional. I always have pre-cooked rice in the freezer and it made a great addition, but this soup is also good on its own. The spice is on the mild side for my family. If you like hot, use hot taco seasoning or add hot sauce at the table. Add a salad and a nice piece of cornbread and dinner is served.

CROCK POT CHICKEN TACO CORN SOUP
This is something I made that is based on the Chicken Taco Crock Pot recipies found here. While I was making it, I found that this proved to be better as a soup than as tacos. Maybe because I used too much chicken broth. Still, the result was tasty, so here it is. This is based on a crock pot that only has on/off as a setting, so timing may vary from pot to pot

- 1. Put all ingredients except for the lime juice in a large stockpot.
- 2. Bring to a boil, reduce to a simmer, and cook for 10 minutes.
- 3. Remove from heat and stir in lime juice.
- 4. To serve, top with chopped cilantro (optional for you cilantro haters), low-fat sour cream, or low-fat shredded cheese.
- 5. To make this as healthy as possible, I suggest you use organic salsa, as it usually has half the sodium of the regular stuff. Also, make your own taco seasoning, because the stuff from the store has sugar in it. There are several taco seasoning recipes on Justapinch.
