Chinese-style ingredients like almonds, water chestnuts, mushrooms, celery and chow mein noodles combine with a creamy broth, soup and milk mixture - and chicken, of course - to form this casserole. The name comes from the fact that people who have it seem to be pleasantly surprised and wonder what is in it. This is a good recipe for potlucks, etc., as it can be prepared ahead of time and refrigerated or frozen until ready to bake.

- Place chicken in bottom of shallow oven pan.
- Combine cream of chicken soup, milk and half and half.
- Spread soup mixture over top of chicken breasts evenly.
- Sprinkle with pepper, garlic powder, onion powder, parsley flakes and Italian seasoning.
- Place Swiss cheese slices over soup.
- In saucepan, mix melted butter and 1 box of the stuffing (bread and all).
- Spoon stuffing mixture over cheese slices evenly.
- Cover pan with foil.
- Bake at 450 degrees for 45 minutes or until chicken is done.
CREAMY LEFTOVER CHICKEN SURPRISE
I invented this recipe a long time ago and make it when I have leftover chicken. It's quick and made with simple ingredients. Feel free to make substitutions and experiment with it. Fresh or frozen broccoli. Cream of chicken soup or cream of mushroom. Any type of cooked chicken will do, but I prefer breast. If the leftover chicken has been marinated or seasoned, it will be a bonus. Any type of small pasta. Cheeses are flexible as well. I often use a combination of whatever I have on hand. Just be sure its sliced or shredded so that it melts quickly.It's a great all in one meal to keep on the stove on nights when family members are coming and going at different times.

- 1. Cook pasta al dente and drain.
- 2. Cook or steam broccoli until tender
- 3. In a large pot combine cream of chicken soup and milk on medium high heat.
- 4. When heated, add pasta, chicken, cheese, curry powder and pepper. Mix ingredients thorougly.
- 5. In about 3-5 minutes when cheese is completely melted, stir in the broccoli.
- 6. Give the broccoli a minute or two to heat up.

Easy Chicken dish which all my family loves including the grandchildren. This receipe came from my turn to cook Sunday dinner and what I had in the pantry and frig. We like the receipe because it is easy, spicy and a meal all in one. We serve it with green salad.

- Boil chicken breast until tender.
- Remove meat from bone.
- Spray 9 by 13 pan with low fat spray.
- Cut at least 9 tortillas into strips.
- Line the bottom of the pan until covered.
- In a small skillet, melt cream cheese and the jar of cheese with chilies.
- Add milk to a sauce consistency.
- Sprinkle red pepper.
- Break chicken into small pieces and place in pan, layer with tortillas strips and alternate until pan is filled.
- Pour cheese mixture over the top.
- Sprinkle cheddar cheese on top.

This recipe was one of those great surprises you invent by throwing everything you have in the house together. It is a very versatile recipe in that you can substitute any chicken parts for the thighs, use whatever vegetables and herbs you have in the house, or any cheese you prefer. I have used broccoli when I have no zucchini on hand, and added dill when I have some of that. Any way you make it, it is an easy weeknight meal that has a sauce that is delicious over rice.

- Step 1- Filling.
- In a sauce pan saute mushroom in 2 tbsp of butter until golden brown, then set aside.
- Next lightly saute shallots and garlic in same pan.
- Mix mushrooms and shallots together add thyme, salt, pepper and flour to vegetables and mix well.
- Now add the white wine and cook till all liquid is absorbed.
- Taste, reseason if necessary and set aside to cool.
- Once cooled add grated cheese to mixture.
- Step 2- Phyllo Preparation- Preheat oven 350 degrees.
- Brush 1 sheet of phyllo with melted butter.
- Place a second sheet over the first and brush with melted butter.
- Place the flattened chicken breast in the lower half of the phyllo sheet.
- Put 1/4 of the filling mixture ontop of the chicken.
- Fold the sides of the phyllo over the chicken envelope style.
- Place on a baking sheet, seam side down, brush with melted butter.
- Do the same to remaining chicken and bake in a 350 degree oven for 35 minutes.
- Step 3- Apricot Lemon Glaze.
- Heat apricot preserves and lemon juice together until well mixed.
- Pour a small amount of glaze overtop of cooked phyllo chicken and serve the rest of the sauce on the side.
- Enjoy.

And than, General Mapahche, a character from one of my favorite movies "The Wild Bunch" by Sam Peckinpah, came to my mind. He is a very mean soldier, general, very demanding, it seemed like a challenge to make him a meal; so this dish must be good, otherwise, you are going down.

- Cut boneless and skinless chicken breasts into stripes (bones and skin use for cooking broth). Chicken stripes season with salt and soak into lemon juice. Leave it 1 hour in lemon.
- In the meantime cut onion into rounds; mince finely garlic; cut bell peppers into stripes; cut tomato into small pieces (remove seeds), cut zucchini into stripes.
- Wash canned corn and beans well to remove "can taste".
- Heat olive oil in a frying pan (big one) and fry chicken until gets brown.
- Put chicken aside, add some more oil and add vegetables following this order: first onion, sauté until softens; than peppers, sauté a bit, than tomato and garlic. Than add chicken, thyme, oregano, salt, pepper and chili. Add some broth and sauté until everything softens. Add corn and beans and stir. Add zucchini last (they get soft quickly).
- Sauté everything for 5-10 minutes or more: all liquid must evaporate and sauce must be sticky.

When I first saw this recipe, I was skeptical, (I mean, salsa and peanut butter??)....but the recipe came from the Looney Spoons cookbooks, and I have in the past enjoyed everything that has come from there!! Surprised me.... the ingredients marry up very well. This recipe is fast and easy to make up and dump into the crock pot....or prepare for the freezer for a later date (instructions for a quick thaw). We loved this one...so much that my lovely daughter took all the leftovers to work and didn't even save me some for my lunch!!

- Remove the skin and fat from the chicken thighs. Place them in a saucepan, cover with 6 cups of water and season with salt and pepper. Simmer for 45 minutes. Remove and let cool; reserve the broth.
- Remove the meat from the bones and set aside. In a frying pan, heat the oil over medium heat. Add the onion and mushrooms and saute for 5 minutes or until the mushrooms are cooked and the onion wilted. Set aside.
- In a saucepan, melt the butter over medium-high heat. Add the flour and stir well. Slowly whisk in 2 to 3 cups of the reserved broth to make a thin roux. Season with the thyme, lime juice, salt and pepper.
- Add the chicken, onion and mushrooms to the sauce and reheat slowly. Adjust the seasonings and serve.

- Preheat oven to 350°.Place one chicken breast half at a time, shiny-side down, between two pieces of waxed paper. With a wooden mallet or a rolling pin, flatten to 1/4 -inch thickness. Peel off waxed paper. Sprinkle chicken with salt.In a small bowl, mix cream cheese, parsley, onion and lemon juice until blended. Spread about 2 tablespoons of the mixture on each breast. Fold in sides roll up starting with narrowest end. Fasten with wooden picks. Coat rolls with flour, then dip in egg and roll in corn flakes.Into a 10-inch skillet, pour oil to a depth of 1/4 inch place over medium heat. When hot, brown chicken rolls, a few at a time. ROBIN'S CHICKEN SURPRISE
Breast of chicken with salmon and smoked bacon, either as Winter dish, or with a slight variation perfect for Summer days

- Take the smoked salmon and Philidelphia cheese and blend in processor until smooth
- Place this mixture into a piping bag and force into deepest side of the fresh chicken breast. It will swell as you pipe inside
- For the winter recipe - Place a sliver of blue cheese on top and wrap the smoked bacon around the breast. Place in tin-foil and cook in pre heated oven, bake at 180C/ Gas 6,remove foil for last five miunutes to crisp the bacon.
- For the Summer version. Omit the blue cheese and bacon, place the filled chicken breast in a little water with a couple of peppercorns, and gently simmer for about 10 minutes. Turn off the heat, but leave to stand in the water until cold, slice on the angle, to show off the glorious pink inside and the white flesh. Serve with a salad of your choice.
