This is so refreshing and not too hard to make! It almost makes itself! You could use beef in place of the chicken, or turkey. Use melon, oranges, pineapple or papaya as fresh fruit alternatives.

4 cups torn baby spinach leaves
2 cups cubed cooked chicken
2 cups strawberries, cut in half
1 cup green grape
1/4 cup Italian salad dressing
1/4 cup orange juice
1 tablespoon Dijon mustard
1 dash pepper
2 tablespoons sliced almonds, toasted

Steps:

  • Arrange spinach on 4 chilled plates.
  • Place chicken onto spinach and top with strawberries.
  • In a small bowl, combine salad dressing, orange juice and mustard and mix well.
  • Drizzle over salads and top with almonds.

3 tablespoons apple juice
2 tablespoons strawberry spreadable fruit
2 tablespoons balsamic vinegar
1 lb boneless skinless chicken breasts
8 cups bite-size pieces spinach
1 cup strawberries, stems removed and strawberries cut in half
1/4 cup crumbled Gorgonzola cheese (1 oz)
1/4 cup chopped walnuts

Steps:

  • In small bowl, mix all dressing ingredients until blended; set aside.
  • Spray 10-inch skillet with cooking spray; heat over medium-high heat. Cook chicken in skillet 15 to 20 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°F). Remove chicken to cutting board.
  • Add dressing to skillet; stir to loosen any pan drippings.
  • Cut chicken into slices. Among 4 plates, divide spinach. Top with chicken, strawberries and cheese. Drizzle with dressing. Sprinkle with walnuts.

3 tablespoons thawed limeade concentrate
1/4 teaspoon pepper
3/4 pound boneless skinless chicken breasts, cut into thin strips
1 tablespoon canola oil
DRESSING:
1/2 cup white vinegar
1/3 cup sugar
1 teaspoon dried minced onion
1 teaspoon ground mustard
1/2 teaspoon salt
1 cup canola oil
1 tablespoon poppy seeds
SALAD:
1 package (6 ounces) fresh baby spinach
2 cups sliced fresh strawberries
1 cup fresh sugar snap peas, trimmed
1 small red onion, chopped
1/2 cup pecan halves, toasted

Steps:

  • In a large bowl, combine limeade concentrate and pepper; add the chicken. Cover and refrigerate for 2 hours., Drain and discard marinade. In a large skillet, saute chicken in oil until no longer pink., Meanwhile, in a blender, combine the vinegar, sugar, onion, mustard and salt. While processing, gradually add oil in a steady stream. Stir in poppy seeds., In a large serving bowl, toss spinach with strawberries, peas, onion, chicken and 1/2 cup dressing. Sprinkle with pecans. Refrigerate leftover dressing.
