2 ½ quarts chicken stock
2 pounds skin-on, bone-in whole chicken legs (drumsticks and thighs)
3 carrots, chopped
1 white onion, chopped
2 stalks celery, chopped
¼ cup chopped fresh cilantro
1 clove garlic
1 tablespoon chopped fresh mint
salt and ground black pepper to taste
3 cups cooked rice
1 avocado, peeled and chopped
2 serrano peppers, minced
2 limes, quartered

Steps:

  • Bring stock to a boil in a large pot over high heat. Add chicken legs; return to a boil. Reduce heat, cover, and simmer for 10 minutes, skimming away foam that forms on the surface. Add carrots, onion, celery, cilantro, garlic, and mint.
  • Cover pot and cook until chicken is no longer pink at the bone and the juices run clear, about 30 minutes more. Remove chicken from the pot; discard skin and bones. Shred meat using 2 forks.
  • Return chicken meat to the pot and season with salt and pepper. Add rice. Let chicken and rice warm up, about 5 minutes. Remove from heat and pour soup into serving bowls. Top with avocado and serrano peppers and squeeze in lime juice.

4 Roma tomatoes, quartered
½ onion
3 cloves garlic
1 tablespoon olive oil
2 ½ quarts chicken stock
2 pounds ground chicken breast
3 Roma tomatoes, seeded and finely chopped
½ onion, finely chopped
1 egg
¼ cup basmati rice
1 tablespoon finely chopped mint leaves
¼ teaspoon dried oregano
salt and ground black pepper to taste
2 large zucchini, cubed
2 chayote squash - peeled, cored, and cubed
2 carrots, peeled and cubed
salt to taste

Steps:

  • Combine 4 tomatoes, 1/2 an onion, and garlic in a blender. Blend until smooth.
  • Heat oil in a soup pot over medium heat. Add the blended tomato mixture; cook until mixture changes color, about 5 minutes. Add chicken stock, reduce heat, and simmer while you prepare the meatballs.
  • Place ground chicken in a bowl. Add 3 chopped tomatoes, chopped onion, egg, rice, mint, oregano, salt, and pepper. Mix well with your hands until mixture is uniform. Take about 1/4 cup of mixture and form into round meatballs using wet hands. Place on a baking sheet. Repeat with remaining chicken mixture.
  • Bring stock mixture to a boil. Place a meatball into a ladle and submerge into the boiling stock. Remove ladle and repeat with remaining meatballs.
  • Place zucchini, chayote, and carrots into the stock. Bring to a boil again. Lower heat, season with salt, and cover. Simmer until meatballs are no longer pink in the center and vegetables are soft, about 30 minutes.

This Mexican soup recipe cheerfully stolen from: Mario's La Fiesta Mexican restaurant in Berkeley, CA.

1 whole chicken
1 large russet potato
2 carrots
1 large tomatoes
2 stalks celery (with leaves)
2 garlic cloves
1 tablespoon salt (or more)
1/2 white onion (do not use red onion)
1/2 cup rice, washed
1/4 head cannonball cabbage
1/8 cup chopped cilantro
1/8 teaspoon ground cumin
1/8 teaspoon white pepper
1 dash Crystal hot sauce
1 -2 quart water or 1 -2 quart chicken stock

Steps:

  • Extract giblets from chicken and remove the liver.
  • Place chicken in a pot of water just large enough to hold it.
  • Cover with 1-2 quarts of water and add the giblets.
  • Add salt and bring to a boil, skimming off any foam.
  • Reduce heat, cover pot, and simmer for 20 or more minutes.
  • Chicken should fall apart after cooking.
  • Completely bone out the cooked chicken.
  • Separate white meat for use in the finished soup.
  • Crack the bones and return them to the stock with the skin.
  • Add all other non-meat parts of the chicken back to the stock.
  • Bring stock and giblets back to a fast simmer.
  • Cook stock for 1/2-1 hour longer.
  • Begin washing rice.
  • Strain stock and remove most, but not all of the fat.
  • Peel the potato, tomato and carrots.
  • Bring stock to a boil and reduce heat.
  • Cut carrots into coins, dice potato into 1/2" cubes and add with cabbage cut into 1" chunks.
  • Chop onion coarsely and add along with pressed or finely minced garlic.
  • Remove strings by breaking the top of the stalk backwards and pulling down to strip them out, slice celery into medium pieces and add.
  • Peel and seed tomato, strain tomato juice from seeds and add with chopped cilantro leaves.
  • Chop some of the celery heart's leaves and add with diced chicken white meat in 1/2" chunks.
  • Finish washing rice and add to soup.
  • During last half hour of cooking add all other spices.
  • Adjust salt to taste (this recipe can take a lot of salt).
  • Avoid adding too much cumin, it will spoil the flavor.
  • DO NOT let the soup boil, it will turn to mush.
  • DO NOT use the chicken liver in the soup.
  • When the rice begins to "bloom" turn off the heat.
  • Elbow macaroni, stars or alphabet pasta may be used.
  • If using pasta, omit or reduce the amount of rice.
  • If the stock is made right it will gel when chilled.
  • Note: This recipe took years to figure out.
  • DO NOT use chicken bullion cubes or paste when making this.
  • They will cloud the soup and destroy its delicate bouquet.
  • Tinned broth is acceptable but will not compare to using the stock described above.

I have been eating this soup since I was a little kid. It is a staple recipe in hispanic third world countries. I especially enjoy it during cold winter months. It is usually served with rice and warn corn tortillas.

1 broiler-fryer chicken (whole, cut up, skin removed, rinsed and dried)
1 chayote (peeled, cut in 4 quarters then each piece cut in half)
2 large white potatoes (peeled, cut in 4 quarters then each piece cut in half)
1 large yucca root (peeled, sliced into 1.5 in wide round pieces, then that piece cut in half)
1 plantain (DO NOT peel, slice into 6 round even slices)
1/2 head green cabbage, quarted
1 -2 carrot (peeled, cut into small diagnol slices)
2 whole yellow corn on the cob (each cut into 4 large round pieces)
1 celery, chopped
1/4 cup chopped green bell pepper
1/2 cup chopped onion
1/4 cup cilantro leaf
2 tablespoons Knorr chicken bouillon (chicken flavor)
2 tablespoons Knorr chicken bouillon (with tomato flavor)

pepper
salt
1/2 tablespoon cooking oil
6 -8 cups water

Steps:

  • On medium high heat in a Very large pot, add oil and heat. Once oil is heated, add bell pepper, onion and celery. Saute for about 1 1/2 minutes. Add chicken pieces and brown for about 6-8 minutes (raising the heat to high heat if neccesary to brown chicken if medium heat is causing to much moisture to build up and not enough browning). Add 6 cups of water to the pot.
  • Bring the soup to a quick simmer and then add the rest of the veggies to pot EXCEPT for the cabbage (the yucca should go at the very top of the pot as it has a tendency to stick to the bottom of the pot). If there is not enough water to cover the veggies, this is the time to add a bit more water. Once veggies are in the pot, season the soup with both of the chicken bullions, cumin and black pepper to flavor. Add some salt if neccesary.
  • Carefully add the quartered cabbage to the pot, being careful to try and keep the leaves together. Place a lid on the pot and cook on medium high for about 20-25 minutes or atleast UNTIL the potatoes/chayote squash are tender. Add the cilantro at the last 10 minutes of cooking.
  • Serve with white rice. The plaintain is peeled when the person eats it. The peel helps keep the plantain from getting all mushy during the cooking and it gives the soup a different apeal.

1 (3 pound) chicken - cooked, deboned and cut into bite size pieces
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
1 (4 ounce) can diced green chiles
1 cup chicken broth
1 cup shredded Cheddar cheese
12 (6 inch) corn tortillas

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Put the chicken into a mixing bowl. Add the chicken soup, mushroom soup, green chiles and broth. Mix well.
  • In a 9x13 inch baking dish place a layer of corn tortillas to cover the bottom, then a layer of the chicken mixture, then a layer of cheese. Continue to layer, like you would lasagna, until all of the chicken mixture is gone. Bake in the preheated oven for 20 minutes or until the cheese is bubbly and brown. Let cool and serve.

Steps:

  • Heat oven to 325°F. Grease 6 (2 1/2-cup) individual baking dishes (ramekins) or oven-proof bowls with shortening or cooking spray.
  • In 12-inch skillet, heat oil over medium-high heat. Cook onion in oil 5 minutes, stirring occasionally, until tender. Stir in soups, broth, chiles, garlic powder and chicken. Remove from heat. Stir in tortilla pieces and 1 cup of the cheese.

Fideos (Fidelini noodles), 10 oz bag – you should be able to find these in the Latino/Hispanic food aisle at your local Walmart or can even purchase them on Walmart.com
Potatoes, about 3 medium, rinsed, peeled, and chopped into eighths
Carrots, about 10 baby carrots
Adobo
Meat tenderizer
4 cups water
Sazón, 1/2 packet
1 Tbsp sofrito
1 Tbsp tomato paste
2 Tbsp tomato sauce
1/2 Tbsp cooking oil
Salt to taste

Steps:

  • Season chicken with adobo and meat tenderizer. Add chicken to large pot with water, sazón, sofrito, tomato paste, tomato sauce, oil, and salt. Cook on medium heat until chicken is somewhat tender. Add carrots and continue cooking on medium heat until carrots are tender, about 30-35 minutes. Add potatoes and continue cooking on medium heat until potatoes are tender, about 15 minutes. Add noodles and raise heat to medium-high heat. Cook about 10 minutes until noodles are cooked and broth thickens a bit. Keep an eye on the pot – if the broth thickens enough, but noodles aren’t cooked, lower heat again to medium and simmer longer.

This Mexican version of chicken noodle soup uses fideos, vermicelli or capellini for the noodles. It's garnished with cilantro, green chiles, avocado and cheese.

2 medium onions, peeled and chopped
2 cloves garlic, peeled
8 fresh tomatoes, peeled and seeded, or 6 large canned tomatoes, drained
6 tablespoons melted lard or light olive oil
Pinch powdered saffron, optional
Pinch chili powder, optional
1 recipe Basic Chicken Soup (see recipe)
Kosher salt and freshly ground pepper to taste
1 1/2 cups diced cooked chicken breast meat
1/4 pound Mexican fideos, vermicelli or cappellini, broken into 2-inch lengths
Fresh cilantro sprigs
Minced seeded hot green chilies
Diced avocado
Slivered Monterey Jack and/or grated Parmesan chees

Steps:

  • Puree the onions, garlic and tomatoes in a food processor, adding a little water if needed. Heat 3 tablespoons of melted lard or oil in a large saucepan over medium heat. Slowly pour in the vegetable liquid, being careful to avoid spattering.
  • Add saffron and chili powder, if using them. Simmer gently, partly covered, for 10 minutes. Add the chicken soup and simmer gently, partly covered, for about 20 minutes more. Season with salt and pepper and add the chicken, keeping the soup warm over very low heat.
  • Heat the remaining oil in an 8-inch skillet over medium heat. When hot, add the noodles and saute, turning them gently, until golden brown. Remove with a slotted spatula and drain on paper towels. The soup can be prepared to this point up to 30 minutes before finishing and serving.
  • Bring the soup to a simmer. Add the noodles and cook until tender, about 7 to 8 minutes. Serve immediately, garnishing each portion with a sprig of cilantro. Pass the other garnishes at the table.

  • Boil whole chicken until meat falls off bone.

6 poblano chiles
1 1/2 teaspoons dried oregano or 1 tablespoon chopped fresh oregano
3 tablespoons corn or canola oil, plus 1 cup for frying the tortillas
3 cups finely chopped yellow onion
5 cloves garlic, chopped
2 teaspoons freshly ground cumin, from toasted seeds
2 cups roasted chicken stock or reduced-sodium chicken broth
2 cups Lupe's Salsa Verde, recipe follows, or other good-quality green salsa
1 (7-ounce) can chopped green chiles, drained
Kosher salt
1 1/2 tablespoons chopped fresh cilantro
6 cups shredded roasted chicken (from about a 3-pound bird)
24 (6-inch) corn tortillas
Nonstick spray
3 cups shredded Monterey Jack cheese
3 cups shredded sharp Cheddar cheese
1/2 cup sour cream, whisked until smooth, plus more for serving
Sprigs fresh cilantro, for serving, optional
1 pound tomatillos, husked and rinsed
2 to 3 fresh serrano chiles, stemmed

Steps:

  • Over an open flame gas burner or under a preheated broiler, roast the poblanos, turning them occasionally, until the skins are lightly but evenly charred. Steam the poblanos until cool in a closed paper bag. Rub away the burned skins, slit the poblanos open along one side and discard the seeds. Open each poblano out flat.
  • In a small, heavy skillet over low heat, toast the oregano, stirring often, until it is fragrant and lightly browned, about 5 minutes. Remove and cool.
  • In a medium skillet over moderate heat, warm 3 tablespoons oil. Add the onions, garlic, cumin and cooled oregano. Cover and cook, stirring once or twice, until almost tender, about 10 minutes. Add the stock, salsa verde, chiles and 2 teaspoons salt. Bring to a simmer, then lower the heat, partially cover, and cook, stirring once or twice, until slightly thickened, about 20 minutes. Remove from the heat and cool. Stir in the cilantro. Set aside 4 cups of this sauce. In a medium bowl, stir the remaining sauce into the chicken.
  • In a medium skillet, warm 1 cup oil. When it is hot but not smoking, fry the tortillas, 1 at a time, turning them once with tongs, until they are flexible; do not allow them to become crisp. Drain the tortillas on paper towels.
  • Position a rack in the middle of the oven and preheat to 425 degrees F. Lightly coat a rectangular 9 by 13-inch glass baking dish, or any attractive ovenproof serving dish, with nonstick spray or canola oil.
  • Arrange 8 of the tortillas in an overlapping layer in the bottom of the dish. Spread half the chicken mixture evenly over the tortilla layer. Top with 8 more tortillas, overlapping them as necessary. Sprinkle 1/2 the Monterey Jack and 1/2 the Cheddar over the tortillas. Spread the remaining chicken mixture over the cheese. Arrange the poblanos in a layer over the chicken, overlapping them if necessary. Spread the reserved 4 cups sauce over the poblanos. Arrange the remaining 8 tortillas over the sauce. With a spatula, spread the sour cream over the tortillas. Top with the remaining Jack and Cheddar cheeses.
  • Bake until the top is lightly browned and the sopa is bubbling, about 45 minutes.
  • Let rest on a rack about 5 minutes before serving. Serve the sopa hot, topping each portion with a dollop of sour cream and a sprig of cilantro, if desired.
  • Bring a saucepan of water to a boil. Add the tomatillos and serranos, lower the heat, and simmer until tender, about 10 minutes. Drain and cool in ice water. Core the tomatillos.
  • In a blender, combine the tomatillos, half of the cilantro leaves, serranos, onions, garlic and 1/2 teaspoon salt. Puree on low speed for 30 seconds. Scrape down the sides of the blender jar and puree again until smooth.
  • Transfer to a bowl. Finely chop the remaining 3/4 cup cilantro. Stir the cilantro and green onions into the salsa. Adjust the seasoning, adding salt to taste and stirring in up to 1 teaspoon sugar, to taste, if the salsa seems bitter. Use immediately, or refrigerate for up to 3 days.

Steps:

  • Melt butter in saucepan, then add onions.
  • Cook until tender.
  • Add green chilies, taco sauce, three soups, and turkey or chicken.
  • Place a layer of tortillas on bottom of 2-inch deep casserole dish.
  • Place alternate layers of soup mixture, tortillas and cheese on top.
  • Repeat for 3 layers, making sure top layer is cheese. Bake at 350°F for 30 minutes to one hour, or until cheese is melted.

  • Add all of the basil leaves and 1 cup of chicken stock to a blender. Puree until smooth. Set aside.
  • In a medium bowl, combine chicken with ground cumin and salt and pepper to taste. Set aside.
  • In a large pot, heat vegetable oil over medium heat. Add annatto seeds and fry for about 6 minutes, stirring often. When the oil is dark orange and the seeds lose their red color, remove pot from the heat. Strain the oil to remove the seeds. Add the strained annatto oil back into the pot. Place the pot back on the burner over medium-high heat.
  • Add the chicken, browning on all sides, then transfer to a clean bowl and set aside.
  • Reduce heat to medium. Add onions and fry until softened. Make sure to scrape up the browned bits from the bottom of the pan. When the onions have softened, add the garlic and fry for one minute, stirring constantly. Add ají panca paste (if using) and stir to combine with the garlic and onions. Fry for one minute, stirring often. Add carrots and fry for one minute.
  • Add the tomatoes to the pot and cook for about 5 minutes, stirring often, or until the tomatoes cook down and the oil separates from the mixture.
  • Add basil puree and stir to combine. Wait for the mixture to come to a simmer. Add salt to taste. (You'll want this a little on the saltier side since you'll be adding pasta to this.)
  • Add the pasta to the pot so they're evenly spread out. Add the rest of the broth and raise the heat to high. Gently nudge the pasta with a wooden spoon around the edges of the pot. Be careful not to break the pasta. You just want to move the pasta around slightly in the sauce. Repeat this every 30 seconds or so until the pasta is pliable, which should take about 5 minutes. Gently stir to coat the pasta with the sauce. Add the chicken to the pot and stir to combine.
  • If the pot has not come to a simmer yet, bring to a simmer. Make sure the pasta is mostly submerged in the liquid.
  • After 5 minutes, uncover the pot and stir, making sure to scrape up any pasta that may have stuck to the bottom of the pot. Reduce the heat to medium-low and cover the pot again. After 5 minutes, uncover the pot and stir again.
  • Continue to cook uncovered over medium-low heat until the pasta is cooked through and has soaked up the liquid, about 5 to 10 minutes. You can opt to have a wetter sopa seca or a dryer sopa seca. It's a matter of personal preference, and one way is not considered more authentic than the other. When the sopa seca has reached the desired consistency, remove from the heat and stir in the parsley. Garnish with the optional avocado cubes.

4 - 6 cooked boneless, skinless chicken breasts, cubed (Do not overcook the chicken. It will be dry and chewey)
2 cans cream of chicken soup
3/4 cup chicken stock
1 can evaporated milk
1 4oz can chopped green chili - or sliced Jalapeno pepper in the jar
1/2 tsp crushed red pepper
salt & pepper
12 flour tortillas
1 onion, chopped
1 pound shredded cheddar cheese

Steps:

  • Combine liquids and stir in chicken, chopped chili, red pepper, salt & pepper. Cut tortillas into quarters. Put a layer of tortillas in bottom of 9x13 casserole dish. Spoon on a layer of half the chicken/soup mixture. Sprinkle with half the cheese and half the onion. Repeat layers of tortillas, chicken/soup, cheese, onion until all ingredients are used. Can be made 1 day ahead and refrigerated overnight. Let stand to bring to room temp. before baking. Bake @ 350 F until bubbling, about 45 mins. - 1 hour.

I have many recipes on how to make Tortilla Soup, even the ones from Ninfa's, Mansion on Turtle Creek, Felix's, etc. But none really equaled the Tortilla Soup my housekeeper made during my stay in Mexico. This is as close as I can come to her recipe. Good Tasting!

6 tablespoons olive oil
8 corn tortillas, halved and cut crosswise into 1/2 inch strips
1 onion, chopped
4 large garlic cloves, minced
1 tablespoon spanish paprika
2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon chili powder
1/2 teaspoon cayenne pepper
1 1/2 quarts homemade chicken broth
1 (28 ounce) can crushed tomatoes, in thick puree
1 (8 ounce) can Mexican-style corn, drained
2 bay leaves
2 1/2 teaspoons salt
1/4 cup fresh cilantro, chopped, plus
3 tablespoons fresh cilantro, for garnish
1 3/4 lbs boneless skinless chicken breasts, cooked and cut into 1/2 inch pieces
1 avocado, diced into 1/2 inch pieces
1/4 lb cheddar cheese, grated
lime wedge, for garnish

Steps:

  • In a large, heavy pot, heat oil over moderate high heat. Add half the tortilla strips and cook, stirring, until pale golden, about 1 minute. Remove with a slotted spoon and drain on paper towels. Repeat with remaining tortilla strips. Set cooked strips aside in warm oven.
  • Reduce heat to moderate low. Add onion, garlic and spices; cook, stirring for 5 minutes. Add broth, tomatoes, corn, bay leaves, salt, ¼ cup cilantro, and one third of the tortilla strips. Bring to a simmer. Cook uncovered for 30 minutes; remove bay leaves. Add chicken and bring soup back to simmer; cook until just done, about 5 to 10 minutes.
  • To serve, put the remaining tortilla strips in bowls, top with avocado and cheese, and pour in soup. Sprinkle with chopped cilantro. Serve with lime wedges.

1 large onion diced
6 clove(s) garlic minced
4 - poblano peppers seeded and diced
1 tablespoon(s) salt
2 - bay leaves

8 ounce(s) shredded cheddar cheese

Steps:

  • Place all ingredients except for cream cheese and cheddar cheese in a slow cooker. Cook on low 6 to 8 hours. Remove chicken and shred and set aside. Remove bay leaves and discard.
  • Add a couple of ladles of the soup to a food processor and add the cream cheese. Process until smooth. Add back to the slow cooker along with the chicken and cheddar cheese. let cook 15 more minutes.
  • Serve

1 whole chicken, cut into 8 pieces, bone-in skin removed
3 teaspoons kosher salt
1 teaspoon pepper
3 tablespoons olive oil
2 quarts of chicken stock
1 tablespoon oregano
3 tablespoons sofrito
2 celery stalks, small diced
1 large onion, small diced
1 medium carrot, sliced
1 large potato, small diced
1 envelope Sazon con Achiote
1 large bay leaf
14 oz fideo noodles or broken angel hair pasta

Steps:

  • Store the chicken wings in a resealable bag and freeze for later use. Remove the skin from the remaining chicken pieces, reserve the back of the chicken.
  • Rub the chicken pieces and back with salt, pepper and oregano and one teaspoon olive oil and set aside for 30 minutes.
  • Heat a large heavy bottom pot over medium-high heat. Brown all the chicken on all sides, transfer to a plate.
  • Add sofrito purée, onion, carrot, and celery with remaining olive oil to the pot. Cook for 5 minutes, or until onions are translucent. Return all the chicken to the pot.
  • Add the chicken stock sazon, and bay leaf, bring to a boil. Reduce to a simmer and cover, simmer for 30 minutes.
  • Uncover and add potatoes, simmer uncovered for 15 minutes, potatoes are tender, stirring occasionally.
  • Remove chicken pieces from the pot and carefully cut the meat off the bones. Return the chicken to the pot.
  • Add the noodles and cook until pasta for 8 minutes or until it is al dente.

2 cup(s) chicken broth
1 can(s) green chilies, chopped
1 can(s) cream of mushroom soup
1 large onion, chopped
1 - bag of fritos (do not sub because other tortilla chips may become soggy in this dish.)
2 cup(s) grated cheese

Steps:

  • Preheat Oven @ 350 degrees. Butter a 13 X 9 Pyrex casserole dish and sprinkle one layer of Fritos in the dish.
  • Mix the first 5 ingredients together. and place 1/2 of the mixture atop the Fritos. Repeat adding Fritos and the remainder of the chicken mixture. Place cheese on top as the finishing touch and bake.
  • *OPTIONAL* For a more spicy dish, I sometimes chop up a couple tablespoons of jar jalapenos and add it to the chicken mixture.

2-3 lbs of chicken (any parts you like but make sure you have bones, I use thighs)
2 quarts of water
2 potatoes
2 tablespoons sofrito
1 cube chicken bouillon
1/4 cup tomato sauce
1 pack Goya sazon
2 tablespoons fresh parsley, chopped (make sure it's fresh and not dry)
1/2 lb bow tie pasta
Salt and Pepper to taste

Steps:

  • Add chicken and water to a large pot. Bring to a boil and simmer covered for about an hour. After an hour remove the chicken and turn off stove. After the chicken has cooled, pull the meat off the bones and add back to the broth in the pot. Add the potatoes, sofrito (I freeze mine in ice cubes and add two cubes), chicken bouillon, tomato sauce, sazon, salt & pepper (taste it) and add more water if needed. Bring to a boil. Once it's boiling add the pasta and parsley and cook according to the package. Taste again for salt and add any if necessary.
