4 cups torn romaine
1 package (14 ounces) coleslaw mix
1 large sweet red pepper, julienned
1 small red onion, halved and thinly sliced
3 cups shredded rotisserie chicken
1 medium ripe avocado, peeled and sliced
3 clementines, peeled and segmented, or 1 can (11 ounces) mandarin oranges, drained
3/4 cup crunchy garlic ginger or plain wonton strips
3/4 cup reduced-fat Asian toasted sesame salad dressing

Steps:

  • Divide all ingredients except salad dressing among six bowls. Serve with dressing.

For the potato salad:
2 pounds small new potatoes
1 1/2 teaspoons kosher salt, divided
1 tablespoon Dijon mustard
1 tablespoon whole-grain mustard
2 tablespoons cider vinegar
1 medium shallot, diced
1/4 teaspoon black pepper
1/4 cup olive oil
For the slaw:
3/4 cup plain low-fat Greek yogurt
1 teaspoon lemon zest
2 tablespoons lemon juice
1/2 small habanero pepper, seeded and finely diced (about 1/2 teaspoon)
1 large clove garlic, finely grated
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 bunch collard greens, center ribs removed, thinly sliced crosswise (about 3 cups)
1/4 medium green cabbage, cored and thinly sliced (about 3 cups)
1 medium carrot, julienned (about 1 cup)
For the fried chicken:
3/4 cup all-purpose flour
1/8 teaspoon cayenne pepper
1 1/4 teaspoons kosher salt, divided
1/2 teaspoon black pepper, divided
2 eggs
3 dashes hot sauce
1 cup plain bread crumbs
Vegetable oil, for frying
4 (3-ounce) chicken cutlets, pounded to 1/4-inch thickness
For the sandwich:
1 frozen waffle
1/2 tablespoon butter
1/2 tablespoon honey

Steps:

  • Make the potato salad:
  • Place the potatoes in a pot of cold water with 1 teaspoon salt. Bring to a boil and simmer, partially covered, until potatoes are tender when pierced with a knife, about 12 to 15 minutes. Drain and let cool. Meanwhile, whisk the remaining 1/2 teaspoon salt, mustards, vinegar, shallot, and pepper in a small bowl. Pour in the olive oil while whisking to emulsify the dressing. Quarter the potatoes and toss with the dressing in a large bowl. Taste and adjust seasoning.
  • Make the slaw:
  • Whisk the yogurt, lemon zest and juice, habanero pepper, garlic, salt, and pepper in a small bowl. Place the collard greens, cabbage, and carrot in a large bowl and toss with the dressing to coat. Taste and adjust seasoning.
  • Fry the chicken:
  • Mix the flour, cayenne pepper, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a shallow bowl. Beat the 2 eggs with the hot sauce, 1/2 teaspoon salt, and 1/4 teaspoon pepper in another shallow bowl. Place the bread crumbs in a third shallow bowl. Fill a large Dutch oven or cast-iron skillet with oil to a depth of 1 1/2 inches and heat carefully to 350°F. Pat chicken dry and coat in flour, dip in egg mixture, and dredge in bread crumbs, pressing to adhere. Repeat with remaining 3 pieces chicken.
  • Fry 2 pieces chicken until golden brown and cooked through, turning once, 5 to 6 minutes. (The chicken should reach an internal temperature of 165°F.) Repeat with remaining 2 pieces chicken. Sprinkle with remaining 1/4 teaspoon salt and drain on a wire rack placed over a sheet tray.
  • Assemble the sandwich:
  • Toast the waffle, spread with butter and honey, and cut in half. Place 1 chicken cutlet on a plate and layer with 1/4 cup slaw, 1/2 waffle, and 1/4 cup potato salad. Top with another chicken cutlet to form a sandwich. Repeat with remaining chicken cutlets to make a second sandwich.
  • The leftover potato salad and slaw can be refrigerated for up to 3 days.

ASIAN CHICKEN BROCCOLI SLAW SALAD

1 lb of chicken
1/2 bottle of an Asian Dressing (something like toasted sesame)
1 bag of broccoli slaw
1 red bell pepper
3 green onions
1 package of ramen noodles

Steps:

  • Place the chicken in an oven safe dish and cover with the dressing, place in the oven at 350 degrees for 40-ish minutes or until cooked all the way through Thinly slice the pepper and chop the green onions, toss with the broccoli slaw. Once the chicken is done, slice the chicken into thin strips and add to the veggies, pour the remaining dressing over and any additional dressing as needed. Break up the ramen noodles and sprinkle over top. Serve with rice to help stretch the meal a little bit further

1 head romaine lettuce, shredded
1 (8 ounce) package baby kale
½ medium head green cabbage, shredded

3 cups bean sprouts, or more to taste
2 cups broccoli slaw
1 cup sliced radishes
1 cup frozen shelled edamame, thawed
½ cup salted dry-roasted peanuts
Dressing:
1 cup peanut satay sauce
¼ cup sweet chili sauce
1 tablespoon toasted sesame oil
½ medium lime, juiced

Steps:

  • Combine chicken, romaine lettuce, kale, cabbage, bell pepper, apple, bean sprouts, broccoli slaw, radishes, edamame, and peanuts in a large bowl.
  • Whisk satay sauce, chili sauce, sesame oil, and lime juice together in a small bowl. Pour over salad and toss to coat. Serve immediately.

This was one of my entries for RSC#13. The delicious homemade French-Salsa dressing makes this taco chicken salad stand out from all the rest. This main dish salad could be made earlier in the day and chilled. Or, if you prefer your chicken warmed, saute the chicken just before you are ready to eat. It takes very little time to make this satisfying meal for your family. Serving size will vary depending on your appetites. It will make approximately 2 cups of salad dressing so you may have some left over depending on how much dressing your guests like on their salad.

1/3 cup honey
3/8 cup ketchup
1/4 cup apple cider vinegar
1/2 cup canola oil or 1/2 cup olive oil
1 teaspoon sea salt
1 teaspoon paprika
1/4-1/2 teaspoon fresh ground black pepper
1/2 teaspoon garlic, minced
1/2 cup chunky salsa (medium or mild depending on taste)
1 -2 tablespoon olive oil
1 1/2 lbs boneless skinless chicken breasts, cut into 1/2 inch strips
1 teaspoon ground cumin
1 teaspoon barbecue seasoning or 1 teaspoon chili powder
1/8 teaspoon cayenne pepper (optional)
1/4 teaspoon sea salt
1/8 teaspoon fresh ground black pepper
2 (12 ounce) bags broccoli slaw mix
1 (15 ounce) can black beans, drained
1 (15 ounce) can chickpeas, rinsed and drained
2/3 cup canned corn, drained

Steps:

  • For dressing, combine the first 8 ingredients, making sure to mix very well.
  • Add the salsa and combine well.
  • Cover and keep refrigerated until ready to use (make sure you stir or shake the dressing before serving).
  • In a large nonstick skillet, heat 1 T-2 T olive oil over medium-high heat.
  • In a medium-sized bowl or plastic ziploc bag, add chicken, cumin, barbecue seasoning, cayenne pepper, if using, sea salt and black pepper; shake to coat chicken.
  • Toss the chicken mixture in the skillet and cook until nicely browned and it is no longer pink in the middle, about 10-15 minutes.
  • In large salad bowl, add broccoli slaw and then layer the beans, chickpeas, corn, cilantro, onions, tomatoes, cumcumber and chicken.
  • Squeeze the juice of the lime over the entire salad.
  • Top with the amount of dressing you prefer (you may not want all of the dressing on the salad, depending on your taste).
  • Serve with tortilla chips, sour cream and cheese, if desired.
