RAO'S CHICKEN SCARPARIELLO (SHOEMAKER'S CHICKEN)
Chicken scarpariello, also known as shoemaker's chicken, is a classic Italian-American dish of chicken, sausage, vinegar, onions and peppers that has all the flavors and textures: Tangy and rich, spicy and sweet, tender and crunchy. Our version is adapted from one found on the menu at Rao's, the reservations-impossible Southern Italian restaurant and celebrity hangout in Harlem. It starts with pan-frying chicken pieces and Italian sausage in a little olive oil until golden brown. Bell peppers, jalapeños, onion and garlic go into the pan and are sautéed until soft. All of that - plus hot peppers, potatoes, vinegar and wine - goes into a roasting pan and into a hot oven until the sauce thickens and the chicken is cooked through. (The potatoes are totally optional, by the way, but they are a nice, pillowy counterpoint to the prickly heat of the peppers.) Serve with a hunk of good bread to mop up the sauce.

- Heat the oven to 400 degrees. Season chicken pieces with salt and pepper. Heat the oil in a large pot or Dutch oven over medium-high heat. In batches, brown the chicken, skin side down to start, about 5 minutes on each side. Remove the chicken to a plate. Add the sausage and sauté until brown, about 3 to 4 minutes. (They will not be cooked all the way through at this point.) Remove with a slotted spoon, cut into 1-inch slices and set aside.
- Remove all but 2 tablespoons oil from the pot and sauté the bell peppers, jalapeños, onion and garlic until soft and beginning to brown, about 5 minutes.
- Return the sausage to pot, add the cherry peppers, potatoes (if using), chicken broth, wine, vinegar, oregano and season with salt and pepper. Gently mix together, then transfer everything in the pot to a roasting pan. Nestle the chicken in the vegetables and sausage and roast in the oven until chicken is cooked through and sauce has reduced slightly, about 30 minutes.

- Heat a large, heavy skillet over medium high heat. Cut chicken into large chunks and season with salt and pepper and poultry seasoning. Add 1 tablespoon extra-virgin oil to the hot pan, 1 turn in a slow stream. Set chicken into pan and do not turn for 2 or 3 minutes or you will tear the meat. Brown chicken 3 minutes on each side and then remove all of the chicken to a warm plate. Add bell peppers, hot peppers and garlic to the pan. Saute the peppers and garlic for 5 minutes, tossing and turning them frequently. Add wine to the pan and reduce 1 minute. Scrape up the pan drippings. Add the chicken stock and bring it up to a bubble. Set the chicken back into the pan. Toss the parsley with the chicken and peppers and cook the chicken through, 2 or 3 minutes. Scatter a little hot pepper juice over the pan and serve the Scarpariello over a bed of lemon orzo. WOW!
- Cook orzo in salted water about 12 minutes, to al dente. Drain orzo well. Do not run under cold water. You want the cooked pasta to remain hot. Transfer pasta to a serving bowl. Drizzle orzo with a tablespoon of extra virgin olive oil and season with salt and pepper. Add lemon zest and parsley and toss to combine the flavors with the pasta.

- Cut chicken breasts into 1 x 3 inch strips, and dredge in flour.
- In 10 inch skillet, heat oil and butter. Add chicken. Cook, turning occasionally, until lightly browned on all sides (3 to 4 minutes). Using tongs, remove chicken from skillet. Set aside and keep warm.
- To same skillet, add shallots and garlic. Saute until softened (1 minute). Add water, wine, broth mix, and seasonings. Mix well. CHICKEN SCARPARIELLO
Many Italian-American families have their own riff on this homey chicken-and-sausage dish: Some add sweet peppers, others white wine. Flour dusted on the chicken thighs helps them brown; it forms a nice crust and also thickens the sauce at the end. - Preheat oven to 375°F. Season chicken with salt and pepper; lightly dust with flour, shaking off excess. Heat oil in a braiser pan or a large straight-sided ovenproof skillet over medium-high. When it shimmers, add chicken, skin-side down, in a single layer.
- Cook, flipping once, until browned on both sides, 6 to 8 minutes total. Transfer to a plate. Add sausages to pan and cook, turning a few times, until browned all over but not cooked through, about 5 minutes; transfer to plate with chicken.

- In a skillet, heat oil. Add chicken and sausage in batches; brown on all sides. removing pieces to a plate as they brown.
- Discard all but 2 tablespoons drippings from pan. To hot drippings, add the mushrooms, red bell peppers, sliced cherry peppers, onion, potatoes, and garlic; saute until tender.

- Preheat the oven to 450 degrees F. Toss the broccoli with 1 tablespoon olive oil, 1/2 teaspoon salt and a few grinds of pepper on a baking sheet. Roast, stirring once, until tender and browned, 20 minutes.
- Meanwhile, season the chicken with salt and pepper. Heat the remaining 2 tablespoons olive oil in a large skillet over medium-high heat. Add the chicken and cook, turning, until browned, about 8 minutes. Transfer to a plate.
- Add the bell pepper, garlic and oregano to the skillet. Cook, stirring occasionally, until softened, about 3 minutes. Add the wine, scraping up any browned bits from the bottom of the skillet. - Heat olive oil in deep 12-inch nonstick skillet or 5-quart saucepot and brown chicken and sausage over medium-high heat. Remove chicken and sausage and set aside.
- Cook potatoes, onion and fennel in same skillet over medium-high heat, stirring occasionally, 10 minutes or until vegetables are tender and starting to brown. Stir in vinegar and roasted red peppers and cook 1 minute. Stir in Sauce and bring to a boil over high heat. Reduce heat to low, then return chicken and sausage to skillet. Simmer covered, stirring occasionally, 40 minutes or until chicken is thoroughly cooked. Garnish, if desired, with chopped fresh parsley.

CHICKEN SCARPARIELLO

- Preheat oven to 400 degrees. Place chicken in roasting pan and set aside. Mix mustard, lemon juice, wine, garlic, pepper, rosemary and oil in a bowl and pour over chicken halves. Marinate for at least 4 hours or overnight. After fully marinated, add carrot, celery, onion and rosemary to roasting pan evenly around and under chicken. Season with salt and pepper. Roast in oven for 45 minutes or until juices run clear when pierced with a fork. Remove from oven and let settle. Cut into 8 pieces. Serve with Scarpariello Sauce.
- Heat a medium size saute pan, add olive oil and saute for 1 minute. Add broccoli, mushroom and potatoes, saute for 2 minutes. Add chicken, wine and cook until wine reduces. Add chicken stock, cover and cook on low-flame for 10 minutes. To plate, remove chicken from pan and place on large platter. Add lemon, rosemary and butter to remaining sauce. Season to taste. Pour over chicken.

- Arrange racks in upper and lower thirds of oven; preheat to 450°. Toss potatoes with 3 Tbsp. oil on a rimmed baking sheet; season with salt and pepper. Arrange cut side down and roast on lower rack until tender and cut sides are browned, 20-30 minutes; set aside.

Add wine and cook, stirring occasionally, until reduced and you can no longer smell the alcohol, about 8 minutes. Add broth, peppers, vinegar, and rosemary and bring to a boil; cook until slightly reduced, about 5 minutes. Nestle chicken into onion mixture, then transfer skillet to upper rack of oven and roast chicken 10 minutes. Add sausages to skillet, pushing them into onion mixture, and continue to roast until chicken is cooked through and an instant-read thermometer inserted into thickest part of thigh registers 165°, 5-10 minutes.
- Top with parsley and serve with roasted potatoes alongside.

This translates to "shoemaker's" style chicken, which consists of golden brown pieces of roasted chicken topped with a lemon sauce. This is one of my absolute favorite dishes, especially when paired with roasted garlic-rosemary potatoes. I wouldn't recommend this for a dinner party, unless you do ALL of the prep work ahead of time.

- Preheat oven to 400 degrees.
- Mix together the flour and oregano. Season the chicken with salt and pepper and dredge in flour mixture.
- In a large, heavy, oven-proof skillet, heat the olive oil over medium-high heat and brown the chicken on both sides. Then remove the chicken to a plate.
- Pour off oven pan juices to leave 2 tbsp of juice (with brown bits) in the pan. Add the onion and cook until soft, then add the garlic.
- As soon as garlic starts to sizzle, add the wine and scrape the pan to release brown bits. Over medium heat, reduce the wine by half.
- Add the chicken stock and bring to a bowl over high heat. Once boiling, add the chicken pieces and the rosemary to the skillet. Spoon some pan juices over the chicken, and put the skillet in the oven to bake for 20 minutes.
- Just before cook time is over, mix the softened butter with the tablespoon of flour (to make a thickener).
- Remove skillet from oven, and move the chicken pieces from the skillet to a warmed platter. Bring the remaining sauce to a boil.
- Add the lemon juice and season with salt and pepper. Then add the flour-butter mixture plus the remaining two tablespoons butter. Remove rosemary and whisk the mixture until the flour-mixture is dissolved (no lumps).
- Once the sauce thickens, stir in the parsley, and pour the sauce over the chicken on the platter. Serve immediately.

CHICKEN SCARPARIELLO
The origins of this dish are uncertain, but many people believe that it is Italian-American, not Italian, and was invented by a Southern Italian chef in New York, where it is standard fare in every neighborhood. The recipe below was obtained from a friend in Sicily. Dishes called "scarpariello," which means shoemaker style, are made in Southern Italy. The "iello" ending is definitely a Southern language ending. Saying shoemaker-style in Naples or Bari either means that the dish is so meager it could even be made by the family of a poor shoemaker, or it contains such prosaic ingredients that it can easily be cobbled together. In its most Italian version, such as the following, it is no more than fried chicken chunks on the bone, lightly glazed with a lemon-wine sauce. Often, chunks of pork sausage, sweet pepper strips, even mushrooms are added to the dish, which makes it anything but humble. Sometimes the dish is saucy, which makes it more American than Italian. Without question, chicken cooked on the bone this way is significantly more succulent than chicken cooked off the bone. Some restaurants serve it boneless and dry anyway. I'd say this is not a dish for you if you don't like to pick at chicken on the bone.

CHICKEN AND SAUSAGE SCARPARIELLO WITH PASTA

- -Heat the oil in a large frying pan and dredge the chicken breast and set asside. when the oil is hot but not smoking add half of the chicken breast strips and cook until tender turning once (about four to five minutes). Remove with a slotted spoon and repeat with the remaining chicken breast strips. -Pour all but one tablespoon of the oil off of the frying pan(wipe any oil that runs off the edge of the pan) and heat the sausage until heated thoroughly but not browned and set asside with the chicken. -In another Large frying pan (I myself prefer a wok) Add two tablespoons of olive oil -Sautee the Shallots until tender about two minutes. Add the Garlic and and sautee an additional two minutes. Add the peppers, cherry peppers, and onion and Sautee until tender stirring often (about seven minutes) -Boil six cups of water and cook pasta until aldente. Drain in a colander, rince with cold water and set asside -Add the white wine and chicken broth to the peppers. and bring to a boil for four minutes. - in a small frying pan melt the butter on low heat and add the flour to the butter mixing well. Cook on low for five minutes. -Add the Roux in small amounts to the Scarparelli and stir until dissolved and the sauce thickens. Add more roux as desired until you have the thickness you want for the sauce.discard any unused roux -Add the chicken, sausage, and the parsley to the sauce mix and simmer on low for six minutes. -Pour the entire mixture over the pasta in large caserol dish From here you can serve immiedietly. For later serving just heat in the oven at 350 degrees for 30-45 minutes
SPICY CHICKEN SCARPARIELLO
Steps:
- 1. Rinse chicken, pat dry with paper towel & Salt and pepper. 2. Add the chicken, sausage, potatoes, onions, peppers, garlic, lemons, rosemary to the roasting pan. 3. drizzle with the oil and liqids from the peppers and then reseason with salt and pepper. 4. Place the pan in a preheated 375-degree oven and cook for 1-hour+ or until browned. 5. Remove to a serving platter and serve family style. 6. If you cant take the heat then get...Forgive me, for a more mild dish substitute the hot peppers with red and green ones. Sweet for Hot sausage and white wine for the pepper juice. enjoy please
CHICKEN SCARPARIELLO
We never seem to find this in Italian restaurants any more so I started cooking it. This really is a party in your mouth! It's a little involved but so worth it. Sometimes I serve it with spaghetti to soak up the sauce and sometimes we use crusty Italian bread. It''s good either way.

Steps:
- 1. Preheat oven to 425. Preheat a large skillet on stove top.
- 2. Salt and pepper chicken and dredge in flour.
- 3. Add butter and oil to skillet and brown chicken. Removing as they brown.
- 4. Brown the sausage. At the end add the onion and garlic and saute until tender.
- 5. Add the chicken back in. Add the rest of the ingredients to the pan EXCEPT the potatoes. Cover and turn to a low simmer. Add more water if needed during cooking. You want to keep it moist but not soupy. You may need a little more salt and pepper along the way.
- 6. Toss the potatoes with olive oil and spread on a baking sheet. Sprinkle with salt. Roast in the oven while everything else is cooking.
- 7. When chicken is tender toss with the potatoes.
- 8. Serve over thin spaghetti or with crusty bread to soak up the juice.
