CHICKEN SCAMPI PASTA

Chicken takes the place of shrimp in this dish inspired by the Olive Garden classic -- making it even more weeknight friendly. Serve over angel hair pasta and you'll be in and out if the kitchen in less than 30 minutes. Molto bene!

Kosher salt
1 pound thinly-sliced chicken cutlets, cut into 1/2-inch-thick strips
3 tablespoons olive oil
8 tablespoons unsalted butter, cubed
6 cloves garlic, sliced
1/2 teaspoon crushed red pepper flakes
1/2 cup dry white wine
12 ounces angel hair pasta
1 teaspoon lemon zest plus the juice of 1 large lemon
1/2 cup freshly grated Parmesan
1/2 cup chopped fresh Italian parsley

Steps:

  • Bring a large pot of salted water to a boil for the pasta. Sprinkle the chicken with some salt. Heat a large skillet over medium-high heat until hot, then add the oil. Working in 2 batches, brown the chicken until golden but not cooked through, 2 to 3 minutes per batch. Remove the chicken to a plate.
  • Melt 4 tablespoons of the butter in the skillet. Add the garlic and red pepper flakes and cook until the garlic just begins to turn golden at the edges, 30 seconds to 1 minute. Add the wine, bring to a simmer and cook until reduced by half, about 2 minutes. Remove from the heat.
  • Meanwhile, cook the pasta until very al dente, reserving 1 cup of the pasta water. Add the pasta and 3/4 cup pasta water to the skillet along with the chicken, lemon zest and juice and the remaining 4 tablespoons butter. Return the skillet to medium-low heat and gently stir the pasta until the butter is melted, adding the remaining 1/4 pasta water if the pasta seems too dry. Remove the skillet from the heat, sprinkle with the grated cheese and parsley and toss before serving.

4 ounces uncooked linguine
3 tablespoons butter
2 tablespoons olive oil
2 green onions, thinly sliced
2 garlic cloves, minced
2 boneless skinless chicken breast halves (4 ounces each)

1/2 cup chopped seeded tomatoes
2 tablespoons lemon juice

Steps:

  • Cook linguine according to package directions. Meanwhile, heat a large skillet over medium heat. Add the butter and olive oil; cook the onion and garlic until tender. Sprinkle chicken with salt and pepper; add to skillet. Cook until a thermometer reaches 165°, 3-4 minutes on each side. Remove chicken and keep warm. , In the same skillet, combine the tomato, lemon juice and parsley; heat through. Drain linguine; toss with tomato mixture. 1 teaspoon dried parsley
1 teaspoon dried basil

1/4 cup flour
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons butter
1/2 cup minced onion

1 lb medium shrimp, cleaned

Steps:

  • Coat chicken with mixture of flour, salt, and pepper, reserve 2 T of flour mixture.
  • Heat butter in large skillet.
  • Brown chicken on both sides,turning often, about 12 minutes, until chicken tests done.
  • Remove chicken and keep warm.
  • To skillet, add onion and garlic, saute 1 minute.
  • Add reserved flour mixture, cook and stir 1 minute.
  • Add milk, cook and stir until milk boils.
  • Add shrimp, cheese, parsley and pepper flakes.
  • Simmer for 3 minutes.
  • Place chicken on plate, spoon scampi over the chicken.

Steps:

  • For white sauce: Heat 1 tablespoons butter in sauce pan, add 2 tablespoons flour and cook for 2 minutes on med. heat. heat stirring constantly. slowly add 3/4 cup hot milk (hot so it won't get lumpy). Set aside. (Make sure that the white sauce is hot when adding to the scampi sauce).
  • For scampi sauce: Heat butter over low heat. add the garlic, Italian seasoning, crushed red pepper and black pepper. cook for about 2 minutes on low heat. add the wine and chicken broth. stir until combined. (I usually cook mine for about 30-40 minutes). add 1/4 cup white sauce and cook till slightly thickened.
  • Flatten tenders, coat w Wondra flour & brown In a large skillet, in a little olive till nearly done. add the peppers and onions, saute till chicken is done. add the sauce. saute until everything is warmed. add roasted garlic cloves. serve over pasta.
  • ROASTED GARLIC: Separate head of garlic into individual cloves still in 'paper'. toss in olive oil and wrap tightly in aluminum foil or a small pint sized dish with a lid. bake in 350* oven for 30 minute when the garlic has cooled to the touch you should be able to squeeze it out of the 'paper' shell of the individual cloves.

1/4 cup parsley flakes

4 boneless, skinless chicken breasts
3/4 c scampi butter (recipe below)
1 c panko bread crumbs
1 1/4 c heavy cream
2 Tbsp lemon juice
1 lb linguini, cooked al dente or any pasta you prefer (i like angel hair)

Steps:

  • 1. Pound the chicken breasts to an even thickness, no more than 1/2" thick. Then melt the scampi butter over medium heat in a large skillet. Press the chicken into the bread crumbs and sauté until lightly browned on both sides, about 6 to 8 minutes. Slice in strips or keep whole. Remove the chicken from the skillet and turn the heat to low. Add the heavy cream and lemon juice, stirring to combine, until the mixture thickens slightly. To serve, arrange sliced chicken breast or a whole breast over linguini and pour the cream sauce over the chicken.
  • 2. SCAMPI BUTTER: 1/4 pound unsalted butter, softened 1 tablespoon minced garlic 2 tablespoons minced red onion 1 tablespoon chopped fresh parsley leaves 1/2 teaspoon garlic powder 1/2 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper Dash white pepper Dash Worcestershire sauce 1 lemon, juiced 1 tablespoon white wine

3 -4 chicken breasts, cut into pieces
1/4 cup olive oil
1/2 cup butter
2 teaspoons minced garlic
1/2 cup chopped green onion
1 teaspoon italian seasoning

4 roma tomatoes (cut into 1 inch pieces)
rice or noodles, enough for about 3 people

Steps:

  • Put olive oil and butter in skillet on low heat.
  • Add the green onions and minced garlic and saute.
  • Add Italian seasoning, salt and pepper.
  • Put chicken that has been cut into pieces in the skillet with the garlic onion and seasonings.
  • Heat until chicken is no longer pink.
  • I usually let the chicken sit with the other ingredients in the skillet for a few moments on low just to get the seasoning set in really well.

1 cup thin sweet onion slices
1/4 cup KRAFT Tuscan House Italian Dressing
1 green pepper, cut into thin strips
1/4 cup dry white wine
3/4 cup chicken broth
1-1/2 cups KRAFT Shredded Italian* Low-Moisture Mozzarella-Parmesan Cheese Blend, divided
1/4 lb. frozen cooked cleaned medium shrimp, thawed

Steps:

  • Cook orzo as directed on package, omitting salt.

I've seen chicken scampi recipes that use a cream-based sauce, and/or combine the chicken with veggies (like carrots, etc), and although I'm sure that it's quite tasty... it's not scampi. Scampi is an oil, wine, lemon-based...

PLAN/PURCHASE
1/2 lb chicken breast, boneless, skinless, cut into bite-sized pieces
THE MARINADE
3 Tbsp olive oil, extra virgin
3 Tbsp wine, dry white (pinot grigio, sauvignon blanc, chardonnay)
1 Tbsp lemon juice, freshly squeezed
1 pinch salt, kosher variety
1 pinch black pepper, freshly ground
THE SAUCE
2 Tbsp yellow onion, finely diced
1 clove garlic, minced
5 Tbsp sweet butter, unsalted
2 Tbsp olive oil, extra virgin
1 pinch crushed red pepper flakes
2 Tbsp wine, dry white
2 Tbsp lemon juice, freshly squeezed
1/8 tsp salt, kosher variety
1/8 tsp black pepper, freshly ground
1/4 c panko breadcrumbs

Steps:

  • 1. PREP/PREPARE
  • 2. THE MARINADE
  • 3. Gather and prep all your ingredients.
  • 4. Add all of the marinade ingredients to a bowl or Ziploc bag, and mix thoroughly.
  • 5. Add the chicken and then mix to coat.
  • 6. Place the chicken into the refrigerator, and allow it to marinate for two hours, but no longer than six.
  • 7. THE SAUCE
  • 8. Gather and prep all your ingredients.
  • 9. Add all of the sauce ingredients, except the panko breadcrumbs to a small saucepan, over medium heat.
  • 10. Allow to simmer for 5 minutes.
  • 11. Take off the heat and stir in the panko breadcrumbs.
  • 12. Place a rack in the middle position, and preheat the oven to 400f (205c).
  • 13. Remove the chicken from the marinade, and divide between two ovenproof dishes.
  • 14. Divide the sauce between the two dishes
  • 15. Place in the preheated oven, and bake for 30 minutes, or until the sauce is bubbling and the chicken begins to brown.
  • 16. PLATE/PRESENT
  • 17. Sprinkle a bit of Parmesan over the top, and serve with some fresh pasta. Enjoy.
  • 18. Keep the faith, and keep cooking.

1 cup sliced fresh mushrooms
3 tablespoons chopped fresh parsley
3 tablespoons cold butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Season chicken with salt and pepper. Coat with 1/4 cup flour.

1 lb raw shrimp, peeled and deveined or 1 lb chicken breast, cubed
2/3 cup dry white wine
1/4 cup light olive oil
1/2 cup butter
2 tablespoons margarine
3 tablespoons minced garlic
1/4 teaspoon paprika
1/2 tablespoon parsley flakes
1/8 teaspoon white pepper
1/8 teaspoon ground cayenne pepper or 1/8 teaspoon red pepper
1/2 teaspoon lemon juice
1/16 teaspoon ground celery seed
1/2 cup grated parmesan cheese, to top

Steps:

  • Heat wine, olive oil, butter, margarine, and garlic in a large skillet on medium heat until it just starts to boil. Then add all the other spices, lemon juice, and parsley flakes; stir in and immediately add shrimp. Cook for about 4 or 5 minutes or until shrimp turns pink. Don't overcook! If using this recipe with chicken, cook approximatey 8-12 minutes, until the chicken bits are cooked throughout.
  • Spoon shrimp/chicken into toasting/baking dish with some of the cooking sauce and top liberally with parmesan cheese.
  • Preheat at "toast" or broil temperature for 5 minutes and Broil/toast for 2 minutes ONLY!.

NOTE: To make the strips easier to do, I cut the chicken breast square to start too! One inch strips, than between baking paper, lightly pounded away, HOPING this recipe WILL make your day! Used FRESH herbs as does make a difference too! :) Original recipe says to place under broiler for 8 minutes; when pounded thin, can fry in heated pan (no oil) for 30 seconds each side until light brown, saving HEAPS of time too! PREP time does NOT include marinading overnight :) NOTE: I used chicken breasts cut into 1 inch strips about 4 ounces each NOTE: I added some spinach at the end until it wilted for extra colour and serve of veggie too :) WHOO HOO!!

1/4 teaspoon pepper
2 minced garlic cloves
1/4 teaspoon salt
2 tablespoons oregano
1/4 cup parsley
3 tablespoons lemon juice
1/4 cup white wine, divided
5 skinless chicken breast halves
1 tablespoon olive oil
1/4 cup chicken stock
1 tablespoon butter
1/2 cup roma tomato, diced
salt and pepper
3 tablespoons fresh parmesan cheese

Steps:

  • Combine the pepper, half the garlic, the salt, oregano, parsley, lemon juice, and half of the wine in a resealable plastic bag.
  • Add the chicken. Mix gently to coat the chicken with the marinade. Marinate in the refrigerator for several hours (overnight is best).
  • HEAT frypan, cook chicken until lightly golden brown and cooked.
  • HINT: Cook in small batches and keep warm until sauce is made.
  • After chicken is cooked heat the olive oil in a saute pan. Saute the remaining garlic, until fragrant, but not browned.
  • Add the remaining white wine to the saute pan and scrape to remove any bits on the pan. Add the remaining marinade and chicken stock. Bring to a boil.
  • Reduce the sauce by half. Stir in the butter and tomatoes. Season with salt and pepper, as needed. Pour the sauce over the chicken. Top with the Parmesan cheese.

Even my picky 8y/o liked this, even though he picked out the bell peppers. :) It may look like a lot of ingredients but sooooo easy!

1 lb angel hair pasta, cooked according to package (start first, so will be finished before chicken)
2 tablespoons butter
1 tablespoon olive oil
1/2 green bell pepper, thinly sliced
1 medium red onion, thinly sliced
1 -2 lb boneless skinless chicken breast, thinly sliced
2 tablespoons garlic, minced or 2 tablespoons garlic powder
2 teaspoons italian seasoning
1/4 teaspoon crushed red pepper flakes
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can water
2 teaspoons lemon juice
1 roma tomato, quartered, seeds removed then diced small

  • 1. heat butter and oil in large skillet or pot over med. high heat until melted.
  • 2. add bell pepper, onion, chicken, garlic, italian seasoning and red peppers.
  • and cook until done and lightly browned
  • 3. add cooked pasta, soup, can of water and lemon juice then stir.
  • 4. add tomato and serve.

2 lbs boneless skinless chicken breasts
1 egg, beaten
3/4 cup Italian seasoned breadcrumbs
1/4 cup parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup vegetable oil
1 lb linguine
1/2 cup butter
4 garlic cloves, minced
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons butter
1/4 cup chopped fresh parsley
lemon wedge

Steps:

  • Cut the chicken into bite size pieces. Dip the chicken in the beaten egg, then into the bread crumbs, which have been mixed with the grated cheese, ½ tsp salt, and ¼ tsp pepper. Spread the coated chicken pieces on a rack or a platter. This can be done several hours ahead and refrigerated.
  • Heat ½ cup oil in large skillet. Add 1/3 chicken pieces; sauté until golden brown. Remove chicken with a slotted spoon, and repeat with remaining chicken. Discard oil from skillet, and wipe clean.
  • Cook the pasta; add garlic salt to water for extra flavor while boiling. While the pasta is cooking, melt the ½ cup butter in the skillet. Add the garlic and cook 1 minute. Add the cooked chicken, lemon juice, salt and pepper. Toss to coat the chicken pieces with the sauce. Do not allow chicken to cook further.
  • Drain the pasta, and toss the remaining 2 Tbsp butter; then spoon onto platter. Spoon chicken and sauce over pasta. Sprinkle with parsley and serve with lemon wedges. I like to use more lemon juice than the recipe calls for, but I love lemon!

A popular restaurant-style dish that can be prepared at home with great results, I have made this many times, it is *very* good! --- the success of this dish will depend on the quality of Parmesan cheese that you use so use the best! The garlic amount may be adjusted to taste, and use whipping cream only for this!

1/2 cup butter
2 tablespoons olive oil
2 green onions, chopped
1/2 teaspoon dried red pepper flakes (to taste, or use pinch cayenne) (optional)
2 teaspoons dried Italian seasoning
2 tablespoons fresh minced garlic (can use less)
3 tablespoons lemon juice (or to taste)
4 boneless skinless chicken breasts
1 teaspoon seasoning salt (or to taste)
black pepper
1/2-3/4 cup whipping cream (use whipping cream only!)
1/4-1/3 cup grated parmesan cheese (or to taste, more for topping)
1 lb thin spaghetti, cooked (or to taste, or use penne pasta)

Steps:

  • Slice the chicken breasts into four long strips; set aside.
  • In a large skillet melt 1/2 cup butter with the olive oil over medium heat; add green onions, red pepper flakes, Italian seasoning and garlic; cook stirring for 2 minutes no more than 2 minutes or the garlic will start to burn) then stir in lemon juice.
  • Add in chicken strips then sprinkle with seasoned salt and black pepper; cook stirring with wooden spoon over medium heat for 3-4 minutes.
  • Reduce heat to low and cook for about 15-20 minutes or until the chicken is thoroughly cooked through.
  • Add in whipping cream and Parmesan cheese, stirring continuously until heated and mixed through, about 6-8 minutes (there might be traces of butter around the edges of the skillet, don't worry everything will mix in together once it is tossed with the pasta).
  • Add in cooked pasta; toss with the cream sauce to coat, then sprinkle with more Parmesan cheese.

2 lbs boneless skinless chicken breasts
1/2 lb margarine
4 garlic cloves, minced
2 scallions, minced
1 tablespoon parsley, chopped
1 teaspoon dried dill
1/2 teaspoon oregano
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Cut the chicken breasts into approximately 2"x1" pieces and place in 9"x13" baking dish.
  • Melt the margarine in a saucepan over low heat.
  • Add the garlic, scallions, parsley, dill, oregano, salt and pepper and cook for two minutes.
  • Pour the mixture over the chicken pieces.
  • Bake for 10 minutes, turn chicken pieces over, and bake for another 10 minutes.
  • Turn oven to broil and put chicken under broiler for 3 to 4 minutes or until lightly browned.

Ingredients:
1/2 cup olive oil
1 tablespoon minced garlic
1 1/2 to 2 pounds shrimp, peeled and deveined (or chicken)
1/2 cup minced parsley
1 Tablespoon fresh lemon juice
salt to taste
vegetables such as sweet onions, peppers, etc. (optional)

Steps:

  • Tip: To make a low fat version, use only 1/4 cup of oil (or just a few tablespoons). Please note that if you serve this over noodles, the noodles will be a little dry. This can be compensated by adding a sauce to the noodles. For example a thin Alfredo sauce, or a can of cream of chicken soup mixed with a can of milk, a half cup of Parmesan, a dash of Italian seasoning, and salt to taste. Cook garlic and oil in skillet over very low heat until garlic is golden brown. Add shrimp (or chicken) and cook on medium high heat. Half way through cook time, add parsley and vegetables and continue cooking until shrimp is done (it will be firm and pink). Sprinkle with lemon juice and salt to taste. Serve with bread or serve over hot pasta (such as angel hair). Sprinkle with Parmesan if desired.
