Much like Chicken Saltimbocca, this is chicken smothered in parmesan cheese and rolled with mozzarella and prosciutto and baked in white wine.

6 skinless, boneless chicken breast halves
½ cup shredded Parmesan cheese
1 clove garlic, finely chopped
4 teaspoons butter
4 ounces thinly sliced prosciutto
10 ounces sliced whole milk mozzarella cheese
⅓ cup white wine
¼ cup olive oil
1 pinch black pepper

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Pound chicken breasts flat, and lay them on work surface. Sprinkle liberally with Parmesan cheese on both sides. Place a pinch of minced garlic and 1 teaspoon butter in the center of each breast. Cover each breast with a layer of prosciutto and mozzarella cheese. Reserve some of the prosciutto to place on top of the chicken. Roll up each chicken breast, and secure with toothpicks.
  • In a 9x13 inch baking dish, combine white wine and olive oil. Arrange chicken rolls in dish. Place a small piece of prosciutto on top of each roll, and sprinkle with pepper.
  • Bake in preheated oven for 30 minutes, or until chicken is no longer pink, an juices run clear.

1 slice country white bread
5 tablespoons extra-virgin olive oil
1 teaspoon chopped fresh sage
Kosher salt and freshly ground pepper
2 ounces provolone cheese, cut into 8 sticks (1/2 inch by 1 inch)
8 chicken cutlets (about 1 1/2 pounds)
8 slices pancetta (about 2 ounces)
1 cup low-sodium chicken broth
2 cloves garlic, chopped
1 15-ounce can cannellini beans, drained and rinsed
1 head escarole or chicory, trimmed and roughly chopped
1 tablespoon unsalted butter

Steps:

  • Preheat the oven to 400 degrees F. Cut the bread in half, then cut each half crosswise into 4 strips; toss with 1 tablespoon olive oil and the sage and season with salt and pepper. Put 1 strip of bread and 1 provolone stick across the center of each chicken cutlet. Tightly roll up the chicken around the bread and cheese, then wrap each roll with a piece of pancetta and secure with a toothpick.
  • Heat a large ovenproof nonstick skillet over medium-high heat; add 2 tablespoons olive oil. Add the chicken; cook, turning, until browned, 4 minutes. Add 3/4 cup chicken broth. Transfer the skillet to the oven; cook until the chicken is golden and cooked through, 7 to 8 minutes.
  • Meanwhile, heat the remaining 2 tablespoons olive oil in a large skillet over medium-high heat. Add the garlic and cook until slightly golden, about 30 seconds. Add the beans and cook, stirring, until warmed through, about 2 minutes. Add the escarole, the remaining 1/4 cup chicken broth, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the escarole is tender, 7 minutes.
  • Remove the chicken from the skillet using a slotted spoon. Cook the pan juices in the skillet over medium-high heat until reduced by half, about 5 minutes. Remove from the heat and swirl in the butter. Serve the chicken with the pan sauce and escarole mixture.

FOR THE ZESTY SAUCE
1/4 c olive oil, extra virgin
1/2 large onion, chopped
3 medium garlic cloves, minced
1 - 28 oz can, crushed tomatoes
1 tsp oregano, dried
1/2 - 1 tsp kosher salt
1 tsp red pepper flakes - less if prefer
CHICKEN
8 3 - 4 ounce - boneless, skinless chicken breasts - i cut two large breasts into 3 ounce portions
salt and pepper
3/4 c itlalian bread crumbs
2 eggs, lightly beaten
1/4 c parmesan cheese, grated
SPINACH FILLING - IF YOU DON'T LIKE SPINACH...JUST USE THE CHEESE MIXTURE..USING 1/2 MORE OF CHEESES IN REPLACE OF THE SPINACH
1/4 c grated, parmesan cheese - additional for pasta
5 - 6 oz oz frozen spinach, thawed - squeezed dry of any liquid
1/4 c shredded mozzarella cheese
1/2 - 3/4 c ricotta cheese
8 slice provalone cheese. sliced in half
1/2 tsp salt
1/4 tsp pepper
1 egg
parsley flakes - optional
prepared warm pasta

Steps:

  • 1. Preheat oven to 450 degree F. Spray a 9 x 13 baking dish with nonstick cooking spray, set aside.
  • 2. Make the sauce - or use your favorite. 3 1/2 cups is what my recipe makes. May want to double if having more than 4 for spaghetti. I used this sauce for the chicken and 4 servings of pasta. Heat the olive oil in skillet or saucepan, over medium heat. Add the onion and saute until softened, about 3 minutes. Add the garlic and cook until fragrant, about a minute more. Add the tomatoes, oregano, salt and red pepper flakes, and bring to simmer. Simmer while preparing Chicken, about 10 minutes. Let cool for about 15 minutes.
  • 3. Now, pour the sauce into a food processor or blender and puree until desired smoothness. (totally optional, but for this dish, I like a smoother sauce. Keep warm till ready to use.
  • 4. In a bowl, add ricotta cheese, 1 egg, 1/4 cup Parmesan cheese, shredded mozzarella, spinach, salt and pepper to taste. Blend thoroughly.
  • 5. Place 2 or 3 chicken cutlets inside a large freezer bag Pound out each piece to about 1/4 in thick with meat mallot. Repeat with remaining chicken.
  • 6. Now, salt and pepper each piece.
  • 7. On two separate plates; add bread crumbs and 1/4 cup Parmesan cheese to one, and lightly beat 2 eggs on another. Onto each breast, spread about 2 tablespoon of cheese mixture. If I have extra at the end, I add more to each.
  • 8. Loosely roll each one and keep seam side down. Dip chicken in egg mixture, then in breadcrumbs and place seam side down into prepared baking dish. Repeat steps with remaining chicken.
  • 9. Bake for 25 - 30 minutes. Remove from oven, top each cutlet with about 2 tbsp sauce.
  • 10. Criss - cross cheese atop the sauce. Sprinkle with parsley.
  • 11. Bake until cheese is melted and bubbling, about 3 more minutes.
  • 12. Serve with the additional sauce, pasta and Parmesan cheese. Delicious!!!

Steps:

4 boneless skinless chicken breast halves, pounded to 1/4-inch thickness
4 slices deli ham
1 cup baby spinach leaves, chopped
4 ounces goat cheese, at room temperature (or other soft spreadable cheese)
2 -3 tablespoons Dijon mustard, as needed
1 -2 cup seasoned bread crumbs, as needed
extra virgin olive oil, as needed

Steps:

  • Preheat oven to 400 degrees F and coat a large baking pan with cooking spray.
  • Arrange chicken breasts on a flat surface. Top each piece of chicken with ham.
  • Mix together spinach and goat cheese and spread over ham.
  • Starting from the shorter end, roll up chicken and secure with wooden picks.

6 slices Cheddar-Monterey Jack cheese
12 fresh asparagus spears, trimmed

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil and grease with avocado oil.

4 chicken breasts
1 (12 ounce) package bacon
8 cheese slices (Provolone, swiss, american, whatever you fancy...)
1 egg
1/4 cup milk
1 cup saltine crackers, crushed or 1 cup breadcrumbs
1 teaspoon rosemary
3 tablespoons oil
1 lb pasta (I used Rotelle style)
1 cup frozen peas, thawed
1 (8 ounce) jar alfredo sauce

Steps:

  • Slice chicken breasts crosswise into 1/4" slabs (lay breast flat on cutting board, with knife parallel to board, slice across but stop short by 1/4". Repeat starting at opposite side to make one long slab of 1/4" thick chicken.).
  • Flatten out chicken, lay out bacon slices to cover chicken, then cover with cheese slices.
  • Roll Chicken/bacon/cheese up and slice into 1/2" rounds and secure with toothpicks.
  • In separate bowls, combine egg & milk; crackers & seasoning.
  • In skillet/saucepan, heat the oil.
  • Dip the chicken pieces into the egg/milk, then coat in crackers/seasoning.

1/2 cup Italian seasoned breadcrumbs
1 lemon, juice of
1 tbsp olive oil
salt and fresh pepper
olive oil non-stick spray

Steps:

  • Wash and dry cutlets, season with salt and pepper. Preheat oven to 450°. Lightly spray a baking dish with non-stick spray. In a large skillet, heat oil on medium-high heat. When hot saute the garlic 1 minute, or until golden. Add zucchini, 1/4 cup Romano cheese, salt and pepper and saute about 3-4 minutes, stirring occasionally. Set aside to cool. When cool, add mozzarella cheese and mix to combine. Lay chicken cutlets down on a working surface and spread 3 tbsp of zucchini-cheese mixture on each cutlet. Loosely roll each one and keep seam side down. Combine breadcrumbs and remaining 2 tbsp of Romano cheese in one bowl; in a second bowl combine olive oil, lemon juice, and pepper. Dip chicken in lemon-oil mixture, then in breadcrumbs and place seam side down in a baking dish (no toothpicks needed). Repeat with the remaining chicken. When finished, lightly spraywith oil spray. 3 boneless, skinless chicken breasts
24 slice genoa salami or pepperoni
6 slice provolone cheese
18 asparagus spears
1 jar(s) classico tomato & basil pasta sauce (24 oz.), divided
1/4 c parmesan or romano cheese
salt & pepper to taste

Steps:

  • 1. Preheat oven to 350 degrees. Place the three chicken breasts on cutting board.
  • 2. Cut chicken breasts in half.
  • 3. Place one halved chicken breast in a 1 gallon plastic zip lock bag or something comparable. Do not zip bag closed.
  • 4. Pound to 1/4 - inch thick. I used a mallet that worked very well.
  • 5. Set aside pounded half and pound the other chicken breast halves.

  • 9. Add 3 asparagus spears in center of breast.
  • 10. Roll up and secure with toothpick(s). Repeat with the rest of the chicken. Oops! I forgot to take a picture so I'm showing the kind of pasta sauce you need to buy!
  • 11. Spread 1/2 cup of Classico Sauce on bottom of an 11x7 or larger baking dish.
  • 12. Place chicken in dish smooth side facing up.
  • 13. Top with remaining sauce.
  • 14. Sprinkle with shredded cheese. I used Parmesan and Jack Cheeses. Bake uncovered for 30 to 40 minutes or until chicken is done.
  • 15. I made 5 servings. I sent two home with my sister and cooked three for my household. I had two asparagus spears left and just placed them in the baking dish with the chicken rolls. You can serve with a white rice, a wild rice, a pasta of your choice or quinoa. Enjoy!

6 boneless, skinless chicken breast halves (about 1-1/2 lbs.), pounded 1/4 inch thick
6 thin slices prosciutto or boiled ham
6 thin slices provolone cheese
1 Tbsp. olive oil
1/4 cup Italian seasoned dry bread crumbs
1 jar Bertolli® Creamy Alfredo Sauce

Steps:

  • Preheat oven to 400 degrees. Season chicken, if desired, with salt and ground black pepper. Evenly top each chicken breast with slice of prosciutto, then cheese; roll up and secure with wooden toothpicks. Brush chicken with Olive Oil, then coat with bread crumbs. Arrange chicken on baking sheet and bake 25 minutes or until chicken is thoroughly cooked.
  • Meanwhile, heat sauce in medium saucepan. To serve, spoon heated sauce onto serving platter. Slice chicken rollatini and arrange over sauce. Serve, if desired, with hot cooked pasta or rice.

4 slices cheddar cheese
4 chicken breasts
1/2 cup baby spinach leaves
4 slices applewood bacon
1/4 cup olive oil
3 tablespoons apple cider vinegar
2 sprigs fresh thyme
1/2 teaspoon sea salt
1/4 teaspoon fresh ground black pepper
2 cloves crushed garlic

Steps:

  • Night before cooking: combine olive oil, apple cider vinegar, fresh thyme, sea salt, garlic & black pepper in a Ziploc bag. Butterfly the chicken breasts and drop in bag. Seal and marinate in fridge for at least 6 hours and up to 24 hours. Preparation: Take 1 butterflied breast of chicken and lay on cutting board. Lay 1 slice of cheddar cheese and 3 leaves of baby spinach inside. Starting at one end of chicken, roll tightly. Wrap 1 slice of bacon around outside and seal with a toothpick. Follow the same for the other 3 breasts. Preheat oven to 350 Degrees. Place 1 tablespoon butter in a baking dish and place in oven while preheating. Once preheated, remove baking dish (with melted butter) and place chicken rolls seam side down. Cook for 25-30 minutes until cooked through. To serve: Remove toothpick and slice chicken rollatini.

2 pounds ditalini pasta
2 tablespoons olive oil, divided
Salt and freshly ground black pepper
4 boneless, skinless chicken breast halves, pounded to 1/4-inch thickness
8 ounces thinly sliced ham
1 cup baby spinach leaves, chopped
4 ounces goat cheese
2 tablespoons Dijon mustard
1 cup seasoned bread crumbs

Steps:

  • Preheat oven to 400 degrees F. Coat a large baking sheet with cooking spray.
  • Cook ditalini according to package directions. Drain and toss with 1 tablespoon of the olive oil. Season with salt and black pepper.
  • Arrange chicken breasts on a flat surface. Top each piece of chicken with ham. Mix together spinach and goat cheese and spread over ham. Starting from the shorter end, roll up chicken and secure with wooden picks. Brush mustard all over chicken rolls and then roll in bread crumbs.
  • Heat remaining oil in a large oven-proof skillet over medium-high heat. Add chicken rolls and cook until golden brown on all sides.
  • Transfer chicken to oven and bake 20 minutes, until chicken is cooked through.
  • Serve chicken with half of the ditalini. Reserve extra ditalini for another dish.

8 thin chicken cutlets, 3 oz each
1/2 cup whole wheat Italian seasoned breadcrumbs
1/4 cup grated parmesan cheese, divided
6 tablespoons egg whites or egg beaters
5 oz frozen spinach, squeezed dry of any liquid
6 tbsp part skim ricotta cheese
6 oz part skim mozzarella
olive oil non-stick spray
1 cup pomodoro sauce or your favorite marinara sauce
salt and pepper to taste

Steps:

  • Wash and dry cutlets, season with salt and pepper. Preheat oven to 450°. Lightly spray a baking dish with non-stick spray. Combine breadcrumbs and 2 tbsp grated cheese in one bowl and 1/4 cup egg beaters or egg whites in another. Shred or finely chop 1.5 oz of mozzarella cheese and combine with remaining grated cheese, spinach (make sure you squeeze it dry), 2 tbsp egg beaters, and ricotta cheese. Lay chicken cutlets down on a working surface and spread 2 tbsp of spinach-cheese mixture on each cutlet. Loosely roll each one and keep seam side down. Dip chicken in egg mixture, then in breadcrumbs and place seam side down in a baking dish (no toothpicks needed). Repeat with the remaining chicken. When finished, lightly spray with olive oil. Bake 25 minutes. Remove from oven, top with sauce then cheese. Bake until cheese is melted and bubbling, about 3 more minutes. Serve with additional sauce on the side and grated cheese.

1/2 container of ricotta cheese
1 egg
salt, pepper, garlic powder
Chicken breasts
mozzarella

Steps:

  • For the cheese mixture mix together 1/2 of a container of ricotta cheese, 1 egg and a couple of dashes of salt, pepper and garlic powder. Pound the chicken breasts and spread between one and two tablespoons of the cheese mixture on one side of the chicken. Make "roll-ups" out of the chicken so that the cheese is on the inside. Put the rolls in a pan and bake them with some butter/margarine and put some mozzarella cheese on top. Very tasty and easy to make!
