This recipe came from my friend Amanda, who loved to cook for us when we were roommates in college. This is another simple and delicious recipe- definitely a great comfort food!

Steps:
- Mix sour cream and soup in a bowl, place inside the refrigerator.
- Boil chicken breasts until tender; drain and let stand 10 minutes or until cool enough to handle.
- Spread cubed chicken evenly over the bottom of a sprayed 9X13 casserole dish.
- Salt and pepper chicken to taste.
- Remove sour cream and soup mixture from refrigerator and spread over the chicken in the casserole dish.
- Crush Ritz crackers inside of its plastic sleeve and then spread evenly over the casserole.
- Spoon melted butter over the top of all.
- Bake at 350°F until golden brown and bubbling, approximately 20-30 minutes.
- Enjoy.

- Heat oven to 350°F. Spray 13x9 (3-quart) baking dish with cooking spray. Cook rice as directed on package; set aside.
- Meanwhile, in 10-inch nonstick skillet, melt 2 tablespoons butter over medium-high heat. Add onion, mushrooms, thyme, salt and pepper; cook and stir 4 to 5 minutes or until tender. Stir in flour until well combined. Slowly add milk, and heat to simmering, stirring to prevent lumps. Add chicken broth, Worcestershire sauce, sour cream, cream cheese spread and poppy seed; simmer 3 to 5 minutes, stirring frequently, until slightly thickened.
- In large bowl, mix chicken, cooked rice and sauce mixture; transfer to baking dish. Bake 25 to 30 minutes or until 165°F in center. Meanwhile, in large resealable food-storage plastic bag, mix crackers and 2 tablespoons melted butter, shaking to combine. Sprinkle on top of casserole during last 5 minutes of baking.
- If making ahead to bake and serve at a later date: Line 13x9-inch (3-quart) baking dish with 2 layers of plastic wrap, leaving enough overhang to completely enclose assembled casserole. Spread rice mixture in large shallow pan; cool mixture completely, covered, 30 to 45 minutes in refrigerator. Spoon rice mixture into baking dish; cover with another layer of plastic wrap. Freeze unbaked casserole about 8 hours or until completely frozen. Transfer frozen casserole to labeled 2-gallon resealable freezer plastic bag. Remove air; seal and freeze up to three months. To bake: Spray 13x9-inch (3-quart) baking dish with cooking spray. Remove plastic wrap from casserole; place in baking dish. Cover tightly with foil; thaw completely in refrigerator, 24 to 48 hours. Heat oven to 350°F. Uncover; bake 50 minutes. Sprinkle cracker mixture on top of casserole; bake 5 to 10 minutes longer or until crackers are golden brown and casserole is heated through (165°F in center).

I cannot remember for sure where this recipe came from, however it may have been a Southern Living Magazine. It is fast easy and always pleases the family. A nice do ahead meal that I have used for buffets or just having friends over for a quick get together.

- In large pot, place chicken breast. Cover with water until covered by 2 inches. Bring to a boil, and simmer low for 20minutes. Drain and cool.
- When chicken is cool, shred or cut chicken into small pieces.
- In a bowl combine green onions, soup, sour cream, sherry, garlic powder, salt and pepper. Stir well.
- In another bowl combine crushed crackers, poppy seeds and butter. Mix well.
- In a greased casserole dish, lay chicken in bottom layer. Next pour soup mixture over top as next layer. Top casserole with cracker mixture.
- Bake in preheated 350°F oven for 30 minutes.
- (For do ahead, assemble with all but cracker mixture. Top with cracker mixture before baking. May be made 24 hours in advance and refrigerated. Bring to room temp before baking).

- Preheat the oven to 350°F and butter a 9x13-inch baking dish.
- Combine the Ritz crackers, Parmesan and pepper in the bowl of a food processor. Process until the mixture forms fines crumbs, about 20 seconds.
- Place the flour in a large bowl for dipping. Beat the eggs with the milk in separate large bowl until frothy. Place half of the Ritz cracker and Parmesan mixture in a third bowl for dipping.
- Working with one breast at a time, roll in the flour making sure it is thoroughly coated. Dip in the egg and turn until coated. Transfer to the Ritz cracker crumb bowl and turn until the chicken is completely coated. Transfer to a plate or platter. (Can be done several hours in advance at this point. Keep refrigerated until ready to proceed).
- Melt the butter with the oil in a large skillet over medium-high heat. Add the Ritz cracker-coated chicken and cook until lightly browned, 3 to 4 minutes per side.
- Spread enough of the marinara sauce to thickly coat the bottom of the baking dish. Arrange the chicken on top of the sauce. Spoon the rest of the sauce over each breast and top with the mozzarella cheese and the remaining Ritz cracker and Parmesan mixture. Bake until bubbly and browned, 15 to 20 minutes.

TANISE'S CHICKEN CASSEROLE WITH RITZ AND RICE
I have had several variations of chicken casserole but this one beats the band! I just experimented until it was what my family liked. You will see how it differs and how rich and creamy it is by adding just a few more ingredients. Rice makes it go farther. Makes enough to feed 10 people with leftovers! You can add water chestnuts or slivered almonds to add crunch. Cooking time does not include time to boil boneless chicken breasts. Looks delish!!! No calories skimped on here.

- If using boneless breasts, boil just until cooked through. Do not overcook as chicken will be tough. If using whole roasted chicken, just shred meat.
- Mix two kinds of soup and sour cream with chicken. Add in rice.

- Combine apple cider vinegar, soy sauce, water, brown sugar, Serrano peppers, ginger, and salt in a small saucepan. Bring mixture to a gentle boil over medium-high heat, stirring frequently. Continue cooking and stirring until reduced down by 1/3, about 20 minutes. The flavors will intensify as the sauce thickens and becomes syrupy. Divide the sauce, reserving 1 1/4 cups for serving.
- Preheat oven to 350 degrees F (175 degrees C).
- Rinse wings and pat dry. Place about a cup of crushed crackers in a bowl for breading. Dip a chicken wing in the beaten egg and allow excess to drip off. Then coat chicken wing with RITZ cracker crumbs. Place chicken wing on a foil lined baking sheet. Repeat until all chicken is coated, adding more crushed crackers to bowl as needed.

- Preheat the oven to 350 degrees. Spray a 9x13 baking dish with nonstick spray.
- In a 4-quart Dutch oven, add olive oil, bell pepper, onion, celery and cook over medium-high heat until onion is translucent and pepper/celery are becoming tender (about 5-6 minutes).
- Add minced garlic and cook for 30 seconds, stirring to prevent garlic from burning.
- Reduce heat to medium and add cream of chicken soup, half and half, then stir to combine.
- Once heated through, add cheese. Continue to stir to melt.
- Add cooked egg noodles and shredded chicken once the cheese is all melted.
- Season with parsley, salt, and pepper.
- Remove from heat and pour into the prepared 9x13 baking dish.
- Place the Ritz crackers in a ziplock bag and crush with a rolling pin. Add crackers to a medium bowl.
- Stir in melted butter and 1 cup shredded cheddar.
- Spread topping over casserole dish.Place the dish in a preheated oven uncovered and bake for 15 minutes or until cheese is melted.
