15 Minute Chicken, Broccoli and Rice Dinner image

A very easy and delicious dinner to make, great with salad on the side, I have used cream of broccoli and works just as well and have used converted rice but take's longer to cook. Enjoy.

Number Of Ingredients 6

4 boneless skinless chicken breasts
1 tablespoon vegetable oil
1 (10 ounce) can condensed cream of chicken soup
1 3/4 cups milk or 1 3/4 cups water
2 cups Minute Rice, uncooked
2 cups broccoli florets (fresh or frozen & thawed)

Steps:

  • BROWN chicken in oil in large frying pan on medium heat for 5 minutes on each side; remove from pan.
  • ADD soup and milk to pan; bring to boil.
  • STIR in rice and broccoli; top with chicken and cover.
  • COOK on low heat for 5 minutes.

1 Tbsp olive or canola oil (2 Tbsp. if using regular, not nonstick, skillet)
4 (4oz) boneless chicken breast halves
1 (10.75oz) can condensed, reduced-sodium cream of chicken soup
1 1/2 cups water
1/3 cup lemon juice
1/4 tsp freshly ground black pepper
1/2 tsp garlic or onion powder
1/4 tsp paprika
1/2 tsp dried thyme
2 cups uncooked minute rice
2 cups fresh broccoli florets (about 1 head of broccoli)

Steps:

  • 1. Heat oil in a large, deep nonstick sauce pan on medium-high heat. Add chicken; cook 15 minutes on each side or until cooked through. Remove from skillet and put on plate. 2. Whisk cream of chicken soup and water together in a small bowl. Add lemon juice, black pepper, garlic or onion powder, paprika and thyme. Add mixture to skillet and bring to boil over high heat. 3. Stir in rice and broccoli. top with chicken and juices from plate; cover. Cook on low heat for 5 minutes. Serve.
