SPINACH-AND-CHICKEN RAGOUT OVER POLENTA

2 teaspoons olive oil
4 chicken legs
4 chicken thighs
3 large cloves garlic, peeled and minced
1 large onion, peeled, halved and thinly sliced
12 cups spinach leaves, washed and stemmed
1 28-ounce can plum tomatoes, drained and coarsely chopped
2 green bell peppers, roasted, stemmed, cored and cut into -inch squares
1/2 cup chicken broth, homemade or low-sodium canned
4 cups water
4 teaspoons salt
1 cup cornmeal
1 tablespoon red-wine vinegar
Freshly ground pepper to taste

Steps:

  • Heat 1 teaspoon of oil in a nonstick skillet over medium heat. Add the chicken and brown, about 10 minutes. Remove from the pan. Add 1 teaspoon of oil and the garlic, lower the heat to medium-low and cook, stirring constantly, for 30 seconds. Add the onion and cook, stirring frequently, until browned, about 10 minutes. Add the spinach, turning it over with tongs, adding more as it wilts.
  • When all of the spinach is wilted, stir in the tomatoes and peppers. Stir in the broth. Nestle the chicken down into the mixture and simmer until the chicken is tender, about 45 minutes.
  • Meanwhile, after about 20 minutes, place the water and 2 teaspoons of salt in a large saucepan and bring to a boil over medium heat. Add the cornmeal in a slow, stream, whisking constantly. Reduce heat, switch to a wooden spoon and stir constantly, until mixture is thick, about 20 minutes.
  • Stir the vinegar into the ragout and season with 2 teaspoons of salt and pepper to taste. Divide the polenta among 4 shallow bowls and spoon the ragout over it, including a thigh and a drumstick in each portion. Serve immediately.

4 boneless, skinless chicken breast halves
salt and pepper to taste
1 cup all-purpose flour
3 tablespoons olive oil
2 cups diced onion
1 cup diced celery
1 cup diced carrots
2 tablespoons finely chopped garlic
3 bay leaves
1 teaspoon dried thyme
1 cup dry white wine
2 (32 fluid ounce) containers chicken broth

Steps:

  • Season chicken breasts with salt and pepper, then dredge in flour until completely coated. Heat 2 tablespoons oil in a Dutch oven and fry breasts until lightly browned, about 5 minutes on each side. Remove chicken from pan and set aside.
  • Add remaining tablespoon of oil to the pan and saute the onions for 2 minutes. Stir in the celery and carrots and cook for about one more minute. Season with garlic, bay leaves, thyme and salt and pepper to taste. Cook for another minute.
  • Deglaze the pot with white wine, stirring until nothing is stuck to the pan, then pour in the chicken broth. Simmer for 90 minutes.
  • Return the chicken breasts to the pan and simmer for an additional 30 minutes. The mixture should reduce considerably by this time so check frequently to see that the chicken is covered. Spoon baste if necessary. The ragout should have a stew like consistency when finished.

1 large fennel bulb
1 tbsp olive oil
2 boneless skinless chicken, cut into chunks
1 garlic clove, chopped
200g new potato, cut into chunks
400g can of chopped tomato
150ml chicken or vegetable stock
3 roasted red peppers in brine, from a jar or deli counter, chopped

Steps:

  • Trim the green tops off the fennel and reserve. Halve, then quarter the fennel, cut out the core, then cut lengthways into slices. Heat the oil in a pan, add the chicken, then fry quickly until lightly coloured. Add the fennel and garlic, then stir briefly until the fennel is glistening.
  • Tip in the potatoes, tomatoes, stock and a little seasoning, and bring to the boil. Cover and simmer for 20 mins until the potatoes are tender. Stir in the peppers and heat through. Roughly chop the reserved fennel fronds, then sprinkle over the ragout. Serve with crusty bread for mopping up the juices.

3 cups water

1 large onion, chopped

1 pound pearl onions, peeled
1/2 cup dry red wine

Steps:

  • Combine first 7 ingredients in heavy medium saucepan. Simmer until lentils are just tender, about 25 minutes (mixture will be soupy). Remove from heat.
  • Heat oil in large deep nonstick skillet over medium-high heat. Add chicken to skillet; cook until brown on both sides, about 5 minutes. Transfer to plate. Add pearl onions to skillet; sauté until golden, about 5 minutes. Transfer to plate with chicken. Add wine to skillet; boil until reduced by half, about 3 minutes. Add lentil mixture, chicken, onions and vinegar. Cover and simmer until chicken is cooked through, about 15 minutes. Season with salt and pepper. Garnish with parsley and serve.

1 (3- to 3 1/2-pound) chicken, excess fat removed and legs tied
1 tablespoon olive oil
4 tablespoons unsalted butter (2 tablespoons cold, 2 tablespoons softened)
1 lemon, halved
1 ounce small dried morel mushrooms
1 cup warm water
1 pound medium green asparagus, peeled and trimmed
Kosher salt to taste
1/4 cup dry white wine

Steps:

  • Preheat oven to 425°F.
  • Blanch onions in boiling salted water 1 minute. Drain in a colander and rinse under cold running water to stop cooking. Trim root ends and peel.
  • Pat chicken dry. Coat a 17- by 12-inch flameproof roasting pan with oil and put chicken in pan. Rub 2 tablespoons softened butter into skin over entire chicken. Season chicken inside and out with salt and pepper. Put 1 lemon half in cavity and squeeze remaining half over chicken.
  • Roast chicken in middle of oven 20 minutes. Baste chicken, then continue to roast, basting about every 7 minutes, 20 minutes more. Scatter onions around chicken and continue to roast, turning onions and basting every 7 to 8 minutes, until chicken is golden and a thermometer inserted into fleshy part of a thigh registers 170°F (juices will run clear), 25 to 35 minutes more.
  • Once chicken begins roasting, soak morels in warm water 20 minutes. Lift mushrooms out of water, squeezing excess liquid back into bowl, and reserve liquid. Rinse morels thoroughly to remove grit and squeeze dry. Trim any tough stems.
  • Pour reserved soaking liquid through a sieve lined with several layers of cheesecloth or a paper towel into a small bowl.
  • Cut asparagus diagonally into 2-inch lengths. Arrange on a steamer rack and sprinkle with kosher salt. Steam asparagus, covered, over boiling water until crisp-tender, about 5 minutes, then transfer to a bowl of ice water to stop cooking.
  • Transfer roast chicken to a platter, then discard string and cover chicken loosely with foil. Transfer onions and pan juices to 2 separate small bowls (do not clean roasting pan). Skim and discard fat from juices.
  • Set roasting pan over a burner. Add wine and deglaze by boiling over high heat, stirring and scraping up brown bits, until reduced to about 2 tablespoons. Add pan juices from bowl, any juices that have accumulated on platter (from chicken), mushroom-soaking liquid, and morels, then boil until liquid is reduced to about 1/3 cup.
  • Cut remaining 2 tablespoons butter into pieces and add to morels with onions and asparagus. Cook over moderately high heat, shaking pan, until butter is just incorporated and vegetables are glazed. Season vegetables with salt and pepper and spoon around chicken.

SCRUMPTIOUS! This is my absolute hands-down favorite chicken recipe. I adapted it from Julia Child's book "The Way to Cook". It will really impress any guests and they will return for seconds and thirds. It can be made very inexpensively with chicken thighs. You may also adapt for the crockpot just brown the chicken before hand and you may have to double the thickening agents to adjust the sauce before serving. Prep time includes the browning of the chicken. Make sure you have lots of bread to dip in the delicious sauce! Enjoy!

2 -3 lbs chicken parts (I prefer thighs)
2 tablespoons butter
1 tablespoon extra virgin olive oil
3 cups sliced onions
2 cloves garlic, minced

1/3 cup canned tomato puree or 1/3 cup tomato sauce
3 cups chianti wine (can subsitute any dry red wine you have on hand)
1 1/2 cups chicken stock
kosher salt
black pepper
1 1/2 tablespoons flour
1 tablespoon melted butter or 1 tablespoon wine

Steps:

  • Brown chicken in large skillet on both sides in butter and oil.
  • Remove chicken from pan and set aside, leaving the liquid in the pan.
  • Add onions to the pan and saute till tender on moderate heat.
  • Drain liquid over sieve into small bowl.
  • Remove any unwanted fat.
  • Set liquid aside.
  • Season the chicken parts with salt/pepper and return to pan.
  • Add tomato sauce, garlic, bay leaves, and thyme.
  • Add enough wine and chicken stock to cover chicken parts.
  • Simmer for at least 20 minutes uncovered.
  • Remove chicken and place on platter.
  • Pour juices and onions into saucepan and adjust seasonings.
  • You may add more garlic, thyme, salt and pepper.
  • In small bowl whisk together flour and butter (or wine).
  • Add to the sauce and simmer until the sauce coats the back of a spoon.
  • You may need to double the thickening agents if you have lots of juice.
  • Pour sauce over chicken on platter and garnish with parsley.
  • Serve with rice and crusty bread.

PANCIT PALABOK (RICE NOODLES WITH CHICKEN RAGOUT AND SHRIMP)

We eat pancit, or noodles, always - but especially at birthday celebrations, where the length of the noodles is seen as a promise for an equally long life. Among our many pancit dishes, palabok is the richest. The sauce almost takes on the texture of an Italian ragù, with the meat slowly disintegrating into a thick gravy that's stained reddish-gold by achuete (annatto). The toppings aren't decorative, but a crucial part of the dish: a whole regiment of hard-boiled eggs and poached shrimp, plus a tumble of fried garlic and crumbled chicharron (puffed-up crispy pork skins).

2 pounds bone-in, skin-on split chicken breasts (about 2 breasts)
2 pounds bone-in, skin-on chicken thighs
Kosher salt
1 pound small shrimp (26/30 count), peeled and deveined
6 eggs
3 tablespoons neutral oil, such as canola
3 tablespoons achuete annatto powder (3/4 ounce)
2 large yellow onions, finely minced (about 3 1/2 cups)
8 celery stalks, finely minced (about 3 cups)
15 garlic cloves, finely minced
Fish sauce, as needed
1/2 teaspoon coarsely ground black pepper, plus more for garnish
Banana leaves, for lining the serving dish (optional)
16 to 18 ounces rice vermicelli noodles (ideally about the thickness of spaghetti, or whatever you can find!), cooked
1 bunch scallions, thinly sliced
3 calamansi, halved, or lemons, cut into wedges, seeds removed
1 cup chicharron, crushed into small pieces
A few tablespoons of crushed fried garlic

Steps:

  • Add the chicken breasts and thighs to a large pot. Cover with about 8 cups water (the chicken should be fully submerged), add 3 tablespoons salt, and bring to a boil over high. Once the mixture comes to a boil, reduce heat to medium-low and simmer until meat is cooked through and can be ripped off the bone easily, about 40 minutes.
  • Transfer the chicken to a bowl to cool, and reserve the cooking liquid. Once the chicken is cool enough to handle, discard the skin. Tear the chicken into bite-size pieces and shred into thin strands. Discard the bones.
  • Meanwhile, prepare the shrimp: Bring 4 cups water and 1 tablespoon salt to a boil in a medium saucepan. Once it comes to a boil, add the shrimp and cook just until pink and tender, about 2 minutes. Pour into a colander, straining and discarding the liquid, then quickly transfer the shrimp to a large bowl of ice water just until chilled, about 2 minutes. Strain shrimp, transfer to a bowl and refrigerate until use.
  • Prepare the eggs: Bring a large saucepan of water to a boil over high with 1 teaspoon salt, and prepare an ice bath in a large bowl. Carefully drop in the eggs, one at a time, reduce the heat to a gentle simmer over low and cook, 9 minutes. Transfer eggs to the ice bath and let cool. Drain, then carefully peel.
  • Heat the oil over high until shimmering. Add the annatto powder and stir until toasted, slightly darkened and fragrant, about 1 minute. (The natural yellow food coloring dyes the oil a robust hue.) Add the onions, celery, garlic and 1 tablespoon salt, and cook, stirring occasionally, until softened, about 8 minutes. Deglaze with 4 cups reserved chicken stock.
  • Add the shredded chicken and simmer, constantly mashing the chicken with a whisk to promote shredding until the chicken has braised and disintegrates into fine threads, and the sauce has thickened, about 30 minutes. Add fish sauce and black pepper to season.
  • Line a large baking dish with banana leaves, if using. Add the cooked noodles to the dish, top with an even layer of warm chicken mixture, followed by most of the sliced scallions. Top with alternating rows of hard-boiled eggs (thinly sliced crosswise into rounds) and shrimp, squeezing about a half a lemon over the surface or calamansi juice if you have it. Then top with a crunchy mix of chicharron, fried garlic, a few more sliced scallions, a coarse crack of black pepper and remaining lemons or calamansi on the side, for serving.

1 14 1/2-ounce can Mexican-style stewed tomatoes
1 cup drained canned golden hominy
1 1/4 teaspoons chili powder
3 tablespoons chopped fresh cilantro

  • Heat vegetable oil in heavy large skillet over medium-low heat. Sprinkle chicken with salt and pepper. Add chicken to skillet and sauté until no longer pink, about 3 minutes. Add tomatoes, hominy and chili powder and bring to boil. Reduce heat and simmer uncovered until chicken is cooked through and sauce is slightly thickened, breaking up tomatoes with back of spoon, about 8 minutes. Mix in cilantro. Season ragout to taste with salt and pepper and serve.

ROTINI WITH CHICKEN MARSALA RAGOUT

6 boneless, skinless chicken thighs (about 1 1/2 pounds)
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
1 pound sliced white button mushrooms
1 medium sweet onion, chopped
3 tablespoons all-purpose flour
1 garlic clove, minced
1 cup dry Marsala
1 cup chicken broth
1 pound rotini pasta
1 tablespoon chopped fresh flat-leaf parsley
Grated Parmesan or pecorino, for serving

Steps:

  • Pat the chicken thighs dry and season with 1 teaspoon salt and a few grinds of pepper. Heat 1 tablespoon of the oil a large skillet over medium-high heat. Add the chicken and cook, turning once, until golden brown on both sides, about 8 minutes total; transfer to a plate (the chicken will not be cooked through).
  • Add the remaining tablespoon oil and then add the mushrooms and 1/2 teaspoon salt. Cook, stirring occasionally, until the mushrooms release their liquid and turn golden brown along the edges, about 8 minutes. Add the onions and continue to cook until the onions are softened, about 5 minutes.
  • Sprinkle the flour and garlic over the vegetables and cook, stirring, 1 minute. Add the Marsala and bring to a simmer. Simmer until the Marsala reduces slightly, about 3 minutes. Add the chicken broth and bring to a simmer. Return the chicken and any collected juices to the skillet, cover, reduce the heat to medium low and cook until the chicken is cooked through and tender, about 30 minutes.
  • Bring a large pot of salted water to a boil.
  • When the chicken is cooked, transfer the thighs to a cutting board and increase the heat under the sauce to medium high. Boil until slightly thickened, about 6 minutes. Meanwhile, coarsely shred the chicken using 2 forks. Return the shredded chicken to the skillet and keep warm.
  • Cook the rotini in the boiling water according to the package directions.
  • Serve the rotini topped with the chicken ragout. Sprinkle with parsley and serve with the grated Parmesan or pecorino.

1 garlic clove, chopped
1/4 cup yellow onion, chopped
9 ounces small red potatoes, cut into chunks
1 (14 1/2 ounce) can fire roasted diced tomatoes
2/3 cup fat free chicken broth or 2/3 cup vegetable broth
1 tablespoon tomato paste
3 halves roasted red peppers, cut into large (1/2 inch)

Steps:

  • Trim the green tops off the fennel and reserve. Halve, then quarter the fennel, cut out the core, then cut lengthways into slices.
  • Prepare the chicken for cooking by seasoning with salt, pepper, paprika and crushed fennel seed.
  • Heat the oil in a large non-stick skillet, add the chicken, then fry quickly until lightly opaque and browned for about 2 minutes. (Note the chicken will not be cooked through.) Add the fennel, onions and garlic, then stir briefly until the fennel has a bit of color - as much from cooking as from taking on the spices from the chicken bites.
  • Add in the potatoes, diced roasted tomatoes, broth and a tomato paste, and bring to the boil. Cover and simmer for 15 20 minutes until the potatoes are tender to the fork but not breaking apart.
  • Stir in the roasted peppers and heat through.

1 cup chopped zucchini

If you have homemade chicken stock I recommend pulling it out for this dish - but if not; find the best quality store bought you can find. This is not your ordinary chicken soup as you will discover ......

FOR EGG NOODLES:
2 eggs, lightly beaten
1 tsp salt
2 c flour
4 Tbsp water
FOR SOUP:
2 Tbsp olive oil, extra virgin
6 medium chicken thighs
1/2 medium onion, sliced
1 stalk(s) celery, sliced
2 medium carrots, sliced
1 medium leek, white part - sliced
8 oz baby portabello mushrooms, sliced
1 bunch asparagus, sliced 1 inch pieces
1 lemon, zest and juice reserved
1 c white wine, i used yellow tail riesling
5 c chicken stock
2 sprig(s) thyme
1 sprig(s) rosemary
1 bay leaf, dried

Steps:

  • 1. In your mixer with a dough hook, combine flour and salt. Add the slightly beaten egg and mix- mixture should form a stiff dough. Add 4 tablespoons water and mix until well combined and then using dough hook mix on medium speed 5 more minutes.
  • 2. Using a rolling pin, roll dough out 1/8 thickness.
  • 3. Cut into strips egg noodle width.
  • 4. Now that your noodles are prepared, cover them with plastic wrap and begin your soup.
  • 5. In a dutch oven heat olive oil on medium heat. Salt and pepper your chicken thighs. Add chicken thighs skin side down and cook until skin is golden brown and crispy. This will add amazing flavor and richness to your chicken broth later on.
  • 6. Turn and brown the bottom of the chicken thighs as you did the tops. Remove from pot and add wine minced garlic, celery and onions - at this point to cook until translucent while deglazing the pot.
  • 7. Return chicken to pot. Add chicken stock. Tie the thyme, rosemary, and bay leaf together using one of the sprigs of thyme - you will pull these out at the end. Add to the chicken and stock along with the carrot and leek put the lid on.
  • 8. Simmer on medium-low for 10 minutes. Add mushrooms and asparagus and continue to cook for 10 minutes.
  • 9. Add lemon zest and juice, give it a taste test and add salt and pepper as desired.
  • 10. Remove chicken thighs. Skin them and remove the meat from the bone and add it back to the pot. Add egg noodles and give it a stir. Cook for 7 minutes or until pasta is done. Remove herbs and enjoy (:

3 tbsp olive oil
4 skinless chicken breasts
sea salt and black pepper
2 shallots, pealed and rough chopped
2 garlic cloves, unpealed and smashed
1 medium eggplants, trimmed and chopped
handful of thyme sprigs
handful of rosemary sprigs
2 zucchini, trimmed and chopped
1/2 glass of dry white wine
7 oz can of diced tomatoes

Steps:

  • Heat the oven to 375'. Heat a large heavy skillet and add 3 tbsp of olive oil. Season the chicken breasts with salt and pepper. Sear the chicken in batches; cook skin side down for 3-4 minutes until golden brown, then turn over and cook the other side for 2-3 minutes. Transfer to a plate. Add the remaining oil to the skillet and tip in the shallots, garlic, eggplants, and a few thyme and rosemary sprigs. Cook for 5-7 minutes, stirring occasionally until the onions are soft and translucent, and the eggplants are starting to soften. Season generously with salt and pepper. Add the zucchini, then pour in the wine and simmer until it has reduced by half. In the meantime, put an oiled large roasting pan in the oven to warm up. Stir the tomatoes through the vegetables and tip into the roasting pan. Place the seared chicken breasts on top and scatter in some more herb sprigs. Bake in the oven for 5-10 minutes, depending on the thickness of the chicken, until firm and cooked through. Rest for 5 minutes before serving on warm plates, with plenty of crusty bread.

320 g rigatoni pasta
200 g chicken breasts, cut into cubes
70 g mixed herbs
220 g heavy cream
1/2 onion, cut into slices
2 tablespoons parmesan cheese
1/2 cup white wine
1 tablespoon butter

Steps:

  • In a saucepan with the butter, fry the onion.
  • Add the chicken breasts , salt, pepper and brown.
  • Pour the white wine, let evaporate and pour the cream, then continue cooking for 5 minutes.
  • Add chopped herbs and mix.
  • Cook the rigatoroni in salted water acording to package directions.
  • When al dente drain and mix with the sauce and parmesan cheese.

4 chicken breasts, bone-in with skin
1 cup white navy beans, presoaked (overnight is best)
1 small yellow onion, peeled and cut in 1/4 in. dice
2 large carrots, peeled and cut into 1 inch dice
12 white pearl onions, peeled
4 garlic cloves, crushed
12 button mushrooms, washed
2 bay leaves
3 sprigs fresh thyme
3 sprigs fresh rosemary
8 cups low sodium chicken broth
1/2 cup canola oil
2 tablespoons butter
salt and pepper

Steps:

  • 1. Preheat oven to 400°F In skillet over medium heat, heat 1/4 cup of oil. Season the chicken well, on both sides, w/ salt n' pepper and place in pan skin down. Brown evenly and turn over and sear flesh side. Place skillet in oven and cook chicken until done (about 12 to 14 minutes). Set aside and keep warm.
  • For White Bean Ragout:
  • Strain water from presoaked beans. In a medium pot, add beans, crushed garlic, 1 sprig of rosemary, 1 sprig of thyme, bay leaf and chicken broth. Bring to a boil, reduce to a simmer and cook until beans are almost tender, about 20 minutes. Add the onion, carrots and mushrooms and cook until veggies are tender, about 15 to 20 minutes. When veggies and beans are tender, remove from heat. Strain off cooking liquid and reserve it.
  • To finish, take 4 cups of the liquid and place in small pot, whisk in 2 Tbsp of butter and season with salt n' pepper. Finely chop remaining 2 sprigs of rosemary and 2 sprigs of thyme, and add the chopped herbs to cooking liquid.
  • In 4 large bowls add 1/2 cup of cooking liquid in each bowl. Place a small amount of the bean and mushroom mixture in the center of the bowl. Finally, place the chicken breast atop the white bean mixture.

4 slices bacon, diced
2 lbs boneless skinless chicken thighs, cut into chunks
1 tablespoon butter
4 carrots, chopped in chunks
1/2 cup shallot, minced
4 garlic cloves, minced
1 teaspoon dried thyme
1/2 teaspoon fresh ground pepper
1/4 teaspoon salt
1/3 cup flour
2 cups dry white wine
1 cup chicken stock
1 large red pepper, diced
3/4 cup olive, mixed black and green olives, pits removed
1 tablespoon Dijon mustard
fresh parsley (to garnish) or thyme (to garnish)
4 lbs potatoes
salt
1 1/4 cups whipping cream, warmed
1 tablespoon Dijon mustard
salt and pepper

Steps:

  • In a large pan or deep skillet, cook bacon over medium-high heat until crisp.
  • Remove bacon and drain on paper towel, set aside. Drain most of fat from pan leaving 1 tablespoon, reserve excess fat.
  • Add chicken to pan and brown on all sides, do not crowd the pan, transfer browned pieces to a bowl.
  • Use more of reserved fat as necessary to brown all chicken. Set chicken aside.
  • Reduce heat to medium-low and add remaining fat and/or butter.
  • Add carrots, shallots, garlic, thyme(I prefer fresh thyme) pepper and salt.
  • Saute for approximately 10 minutes or less if you prefer carrots a little crunchy.
  • Sprinkle flour over vegetable mixture and cook stirring for 2 minutes.
  • Gradually add wine and chicken stock, stirring gently to scrape the browned bits off the bottom of the pan.
  • Bring to boil, stirring often for 5 minutes, until sauce thickens.
  • Return chicken with any juices in the bowl to the pan, reduce heat and simmer gently for about 10 minutes.
  • Add red pepper, olives and mustard.
  • Simmer another 10 minutes or until chicken is cooked thoroughly and sauce is thickened.
  • Taste and adjust seasoning as necessary.
  • Crumble reserved bacon into the mixture and serve over the Dijon Mashed potatoes.
  • Note: the flavours of this ragout benefit from being made a day ahead and refrigerating over night. I do not add the bacon until just before serving, so pieces will remain crunchy. This dish freezes well. Prepare the complete recipe, spoon potatoes around the edge of a large 12-16 cup casserole, spoon chicken mixture in the centre, cover with plastic wrap and wrap entire dish in foil. Freeze up to 2 months. Thaw in refrigerator for 48 hours and bake 350 degrees for about 1 1/2hours, until chicken and potatoes are hot and bubbly.
  • To prepare potatoes:.
  • Peel and cut into chunks, put into large pot, cover with water add salt and bring to a boil, simmer until tender, 20 minutes.
  • Drain and return to low heat, shaking pot to dry potatoes for 1 minute.
  • Remove from heat, mash and gradually mix in cream and mustard.
  • Season with salt and pepper to taste.

Steps:

  • 1. Trim the green tops off the fennel and reserve. Halve, then quarter the fennel, cut out the core, then cut lengthways into slices.
