Number Of Ingredients 19

Chicken:
4 (4-6 ounces) chicken cutlets (about ½-inch thickness)
2 large eggs
2 tablespoons milk
1/8 teaspoon crushed red pepper flakes
1/8 teaspoon salt
¼ cup all-purpose flour
2/3 cup plain breadcrumbs
3 tablespoons olive oil
Broccoli Rabe:
1 bunch broccoli rabe, stems removed*
1 tablespoon olive oil
2 garlic cloves, thinly sliced
¼ teaspoon crushed red pepper flakes
½ teaspoon salt
4 torpedo rolls or ciabatta rolls
8 slices provolone cheese
Variation:
Substitute veal cutlets for chicken.

Steps:

  • 1. In a wide, shallow bowl, whisk eggs, milk, crushed red pepper, and salt. 2. Place flour in a separate wide, shallow bowl. Repeat with breadcrumbs. 3. In a large skillet over medium heat, add 3 tablespoons olive oil. 4. Dip one chicken cutlet at a time in the flour, then in the egg mixture, allowing excess to drip into the bowl. Dredge in the bread crumbs, ensuring that the entire cutlet is evenly coated. Add to the skillet, and cook 3-4 minutes on each side until golden brown and crisp. Place on a paper-towel lined dish. Repeat with remaining slices. 5. Bring a large saucepan of salted water to a boil. Boil broccoli rabe for 2 minutes; drain and plunge into a bowl of ice water. "Shocking" the rabe will maintain its vivid green color. 6. In a large skillet over medium heat, add 1 tablespoon olive oil and garlic. Sauté until garlic starts to turn golden. Add broccoli rabe, crushed red pepper, and salt. Sauté 1-2 minutes more until just tender. 7. Place one split roll on a clean work surface. Place chicken cutlet on the bottom half of the roll. Top with ¼ of the broccoli rabe and 2 slices of cheese. Place under a broiler for 1-2 minutes, or until the cheese melts. Serve immediately. *Shopping Note: Broccoli rabe, also known as rapini, rape, and broccoli raab, is a popular Italian vegetable. It looks like slender broccoli and has a sharp, slightly bitter flavor. It is available at Italian markets as well as most major supermarkets.

I found this sandwich recipe for Chicken Parmesan and photo on a cheese site called Finlandia and tweaked it to make with what I had on hand. Boy was this good!! Thought I would share it! I need a new camera or I would have had a picture. My daughter took the camera, even though its hers, the nerve! :)

4 boneless skinless chicken breast
2 beaten eggs
1 c panko breadcrumbs
1 tsp dried oregano
1 tsp dried basil
2 c barilla marinara sauce (i like the traditional)
12 slices provolone
4 ciabatta rolls, lightly toasted (or bread of your choice)
salt and pepper, to taste
oil for pan frying

Steps:

  • 1. I pounded down the chicken as I like a thinner chicken for sandwiches, but not real thin. That is optional though. Salt and pepper the chicken.
  • 2. Mix Panko crumbs, oregano and basil in one bowl and eggs in another bowl. (Make sure bowls are big enough for the chicken pieces. Heat approx 1/4 cup oil over medium high heat in a large pan.
  • 3. Dip each chicken breast in the egg, drip off excess. Then dredge the pieces in the panko and fry until golden brown on both sides. Do not over crowd. Apply 3 slices of provolone cheese on each chicken and cover pan a few minutes to melt the cheese. Drain on paper towels. Toast bread under broiler in oven. I brushed a little olive oil over the insides of the bread.
  • 4. Heat the marinara sauce in microwave until hot. Spread some marinara sauce on the bottom of the bread, set the chicken on top of marinara, top with other slice and enjoy!

SANDWICH- CRANBERRY PROVOLONE CHICKEN

Warm and satistfying sandwich that's a little special. cranberry is spicy for some kick. i'm sure this would work equally as well with turkey, chicken just happend to be on sale. enjoy!

1 (14 ounce) can whole berry cranberry sauce
1 teaspoon salt
1 1/2 teaspoons hot chili flakes
3 large chicken breasts
1 teaspoon salt
1 teaspoon ground pepper
1 tablespoon corn oil or 1 tablespoon other oil, to your preference
2 tablespoons fresh basil or 2 tablespoons dried basil, to taste
200 g swiss cheese, sliced
100 g provolone cheese, sliced
fresh basil leaves or lettuce, of choice
4 tablespoons mayonnaise
2 tablespoons butter or 2 tablespoons margarine
salt and pepper

Steps:

  • heat oven to 400 degrees.
  • in small sauce pan heat cranberry sauce, chilli flakes and salt.
  • bring to slight boil and turn to low.
  • let simmer for 15 minutes and turn down.
  • in frying pan heat oil and add chicken seasoned with salt, pepper and basil.
  • heat on medium for 5-7 minutes, careful not to burn meat.
  • turn chicken and heat on other side for 4-6 minutes.
  • take some of the spiced cranberry sauce heating in the saucepan and spread it on chicken. heat on high for about 5 minutes both sides and remove from heat and let cool to slice.
  • slice keiser rolls in half and spread one side with 1 tbs mayonnaise and the other with about 2 tbs cranberry mixture.
  • put a few leaves of basil on side with cranberry sauce.
  • slice chicken breasts, against grain, in 1/2 inch slices.
  • add 1/4 of chicken to side with basil.
  • sprinkle salt and pepper on chicken.
  • top chicken with one slice of provolone and one of swiss.
  • put side with cheese together with other side and put in oven for approximatly 8 minutes.
  • remove from oven and let sit 1 minute and slice in half.
