Wonderful and warm for cold nights! I usually start this the night before by completing step one, and placing the chicken and broth in the refrigerator in separate containers. The next evening the finishing touches are quick and the result is delicious! (After the first time I prepared this, I left the pearl onions out. They add flavor, but I can do without the pickled taste. I also usually use skim milk and it turn out fine).

1 large stewing chicken
6 cups water
2 (14 ounce) cans mixed vegetables, minus liquid from one can
4 tablespoons chicken bouillon
2 teaspoons poultry seasoning
1/2 teaspoon sage
1 (4 ounce) jar pickled pearl onions
salt, to taste
pepper, to taste
15 ounces prepared pie crusts (2 pillsbury pie crusts, per package directions)
1/4 cup flour
1 tablespoon cornstarch
1 cup milk
1 tablespoon browning sauce (kitchen bouquet)

Steps:

  • Cook chicken, in water, for about 4-5 hours. Turn often and keep covered. Skim fat as needed but don't remove all fat.
  • Transfer chicken to a plate to cool, Keep broth simmering on low.
  • Add two small cans of mixed vegetables, minus the liquid from one can. When chicken is cool, tear into small bites and add to broth.
  • Add chicken bouillon, poultry seasoning, sage, pearl onions, pepper and salt.
  • Bake two Pillsbury pie crusts according to package directions and let cool. Set aside.
  • In a shaker jar, mix flour, corn starch and milk. Shake until smooth. Add slowly to the broth, stirring constantly.
  • Add Kitchen Bouquet and stir until smooth, adding more milk if necessary.
  • Pour into bowls over the top of crumbled pie crust. Add a bit more crust on top.
  • This makes about 4 quarts of soup, which can be frozen. Defrost and bake pie crust at the time of serving.

1 disk refrigerated pie dough
Freshly ground pepper
1/2 teaspoon plus a pinch of poultry seasoning
2 tablespoons unsalted butter
1 pound skinless, boneless chicken breasts, cut into 1/2-inch pieces
Kosher salt
2 stalks celery, chopped
1 medium onion, chopped
1/4 cup all-purpose flour
3 cups low-sodium chicken broth
1 cup half-and-half
3 medium Yukon gold potatoes, chopped
1 10-ounce package frozen mixed peas and carrots

Steps:

  • Preheat the oven to 425 degrees F. Unroll the pie dough onto a baking sheet and sprinkle with pepper and a pinch of poultry seasoning; cut into quarters. Bake until puffed and golden, about 10 minutes. Meanwhile, melt the butter in a large pot over medium-high heat. Add the chicken and 1/2 teaspoon salt and cook, undisturbed, 2 minutes, then cook, stirring, 1 more minute. Transfer to a bowl. Add the celery, onion, flour, 1/2 teaspoon salt and the remaining 1/2 teaspoon poultry seasoning to the pot and cook, stirring, 1 minute. Stir in 2 cups water, the broth, half-and-half and potatoes; cover and bring to a simmer. Reduce the heat to medium and simmer, partially covered, 10 minutes. Add the peas and carrots and simmer until the vegetables are tender, about 6 minutes. Return the chicken to the pot and simmer until cooked through, about 1 minute. Divide among bowls and top with the crust.

Not sure where I first got this recipe, but I've tweaked it enough to call it my own. Most things I make are easy to put together or I just don't have time to make them. Also, I try to go as low-fat and low-cost as possible, so all the ingredients are primarily store brand.

2 lbs frozen chicken tenders
2 (12 ounce) bags frozen mixed vegetables (thawed and drained)
1 (12 ounce) bag frozen chopped onions
2 cups frozen southern style hash brown potatoes
2 (10 3/4 ounce) cans fat-free cream of chicken soup
2 cups skim milk
1 cup chicken broth
1 (8 ounce) box fat free cream cheese (softened)
2 tablespoons chicken bouillon
1/2 teaspoon sage
1/2 teaspoon rosemary
1 teaspoon black pepper
salt, to taste if desired
1 (15 ounce) box refrigerated pie crusts

Steps:

  • .Preheat oven according to directions on pie crust box.
  • Spray a large cookie sheet with non-stick cooking spray.
  • Tear pie crusts into small pieces arranged on cookie sheet (or cut neatly if you must) and bake until golden.
  • Allow to cool then seal in an air-tight bowl.
  • Fill a large pot with water and frozen chicken tenders.
  • Boil until done.
  • Drain, allow to cool, and cube.
  • While preparing chicken, combine soup, cream cheese, milk, and broth in your crock-pot on the high setting, blending well. (Add liquids slowly and gradually to control the thickness of the broth.).
  • Fold in all spices, veggies and cooked, cubed chicken to mixture in crock-pot. (At this point I check my seasonings and make necessary adjustments.).
  • Allow to simmer on high for an hour, or switch your crock-pot to its lowest setting and have it when you get home from work.
  • When serving, sprinkle pie crust pieces on top.
  • Also think of other flavor combinations -- you can do this with beef, turkey, pork or shrimp and it's still awesome. Add cheeses, other spices, other veggies, mushrooms, or even walnuts to vary.

1 onion, chopped

2 stalks celery, diced
1 red pepper, diced

4 cups chicken stock
1 cup frozen peas
1 (370 ml) can Carnation Evaporated Milk (fat-free)

Steps:

  • Heat oil in large saucepan over high heat. Add vegetables, thyme, salt and pepper. Cook and stir until vegetables begin to soften, about 5 minutes.
  • Add cooked chicken. Add flour and stir to coat. Cook 1 minute, stirring constantly. Add chicken stock and stir, picking up any cooked bits from bottom of pan.

2 cups all-purpose flour
1-1/4 teaspoons salt
2/3 cup shortening
5 to 6 tablespoons 2% milk
SOUP:
2 tablespoons butter
1 cup cubed peeled potatoes
1 cup chopped sweet onion
2 celery ribs, chopped
2 medium carrots, chopped
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
3 cans (14-1/2 ounces each) chicken broth
2 cups shredded cooked chicken
1 cup frozen petite peas
1 cup frozen corn

Steps:

  • In a large bowl, mix flour and salt; cut in shortening until crumbly. Gradually add milk, tossing with a fork until dough holds together when pressed. Shape into a disk; wrap in plastic. Refrigerate for 30 minutes or overnight., On a lightly floured surface, roll dough to 1/8-in. thickness. Using a floured 2-1/2-in. heart-shaped or round cutter, cut 18 shapes. Place 1 in. apart on ungreased baking sheets. Bake at 425° for 8-11 minutes or until golden brown. Cool on a wire rack., For soup, heat butter in a Dutch oven over medium-high heat. Add the potatoes, onion, celery and carrots; cook and stir for 5-7 minutes or until onion is tender., Stir in the flour, salt and pepper until blended; gradually whisk in broth. Bring to a boil over medium-high heat, stirring occasionally. Reduce heat; simmer, uncovered, for 8-10 minutes or until potatoes are tender. Stir in remaining ingredients; heat through. 2 cups cubed cooked chicken, cooked with
1/4 cup chopped onion
1 cup sliced cooked carrot
2 cups cubed cooked potatoes
1 cup cooked green peas
6 tablespoons margarine or 6 tablespoons butter
1/3 cup flour (I use more because I like it thicker)
2 tablespoons chicken bouillon granules
4 cups whole milk or 4 cups 2% low-fat milk
1/4 teaspoon pepper
1/8 teaspoon garlic powder (I use dehydrated garlic and I use about 1-1/2 t)

Steps:

  • To begin, all ingredients should start out cooked (this helps prevent cream base from scorching).
  • In sauce pan melt margarine or butter.
  • Blend in flour, chicken bouillon, garlic and pepper.
  • Cook until mixture is smooth and bubbly; gradually add milk.
  • Cook and stir over medium heat till mixture boils, simmer one minute, stirring constantly.
  • Add chicken and then each vegetable one at a time carefully so as not to break up other ingredients.
  • Serve in bread bowls or over cornbread.
  • NOTE: Cook time does not include time for individual ingredients, soup only.

This is a good hearty warm soup. Easy to put together. I have used Recipe #256812 with success for the pastry on top. I like that there are no cans of cream of whatever soup in it.

1/2 cup butter
1/2 cup flour
1/2 cup onion, finely chopped
1/2 cup celery, finely chopped
salt and pepper
4 cups milk
2 tablespoons chicken soup base
1/2 cup cooked potato, cubed
2 cups frozen mixed vegetables
2 cups chicken, shredded
1/2 cup heavy cream
puff pastry sheets or uncooked pie crust
1 egg, Beaten
chopped parsley

Steps:

  • Melt butter and cook onion and celery in butter on low until soft. Season with salt and pepper. Add flour and cook on low for a minute stirring constantly so it doesn't burn.
  • Add the milk, chicken broth, and chicken base and stir with a whisk until it comes to a boil and has thickened. If too thick add more broth or milk. Turn down heat and add the chicken, potatoes, and vegetables. Season with salt, pepper. Let simmer for a minute on low. Add the cream.
  • Ladle into oven safe bowls and top with pieces of puff pastry or pie crust. Brush with egg. And bake on a cookie sheet in a preheated 375 degree oven until pastry or crust is cooked (times depend on what type you use). Sprinkle with chopped parsley.
