1/2 cup all-purpose flour
1 large egg, lightly beaten
3/4 cup seasoned bread crumbs
3 tablespoons grated Parmesan cheese
2 boneless skinless chicken breast halves (5 ounces each)
1/8 teaspoon salt
1/8 teaspoon pepper
2 tablespoons olive oil
2 Italian rolls, split
2 slices provolone cheese
1/3 cup marinara or other meatless pasta sauce, warmed

Steps:

  • Place flour and egg in separate shallow bowls. In another bowl, toss bread crumbs with Parmesan cheese., Pound chicken with a meat mallet to 1/2-in. thickness; sprinkle with salt and pepper. Dip chicken in flour to coat both sides; shake off excess. Dip in egg, then in crumb mixture., In a large skillet, heat oil over medium heat. Add chicken; cook until golden brown and chicken is no longer pink, 4-5 minutes per side. Serve in rolls with provolone cheese and sauce.

6 boneless skinless chicken breast halves
2 eggs, lightly beaten
1 ½ cups bread crumbs
3 tablespoons olive oil, divided
1 small onion, diced
2 cloves garlic, chopped
1 (10 ounce) can tomato sauce
½ teaspoon salt
¾ teaspoon black pepper
6 hoagie rolls, split lengthwise
1 (12 ounce) jar artichoke hearts, drained
6 slices mozzarella cheese
6 slices red tomato
½ cup grated Parmesan cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place each chicken breast between two sheets of plastic wrap, and pound to 1/2-inch thick. Dip each breast into lightly beaten eggs, then into bread crumbs, coating evenly.
  • Heat 2 tablespoons of oil in a large skillet over medium heat. Cook chicken breasts until golden brown, about 7 minutes on each side. Reduce heat if they brown too quickly; they need to be cooked through. Remove from heat and place on plate lined with paper towels. Wipe crumbs from skillet.
  • Heat remaining 1 tablespoon of oil in the skillet over medium heat. Add onions and stir until softened, about 5 minutes. Add the garlic, stir for 1 minute. Pour in the tomato sauce. Season with salt and pepper and simmer, uncovered, for 10 minutes, stirring occasionally.
  • Arrange bottom halves of 6 hoagies on one baking sheet, the tops on another, all with cut sides up. Spread about a tablespoon of tomato sauce onto each hoagie top and bottom, reserving the remainder. Place a cooked chicken breast onto each bottom half. Spoon the remaining tomato sauce over each breast and top with the artichoke hearts and one slice each of mozzarella and tomato. Sprinkle with the grated Parmesan cheese.
  • Bake on the bottom rack of the oven for 3 minutes or until the cheese begins to melt. Then place the sheet with the hoagie tops on an upper rack and bake until edges are golden, 3 to 4 minutes, being careful not to let them burn. Remove both sheets from the oven. Place a top on each bottom to form 6 sandwiches.

I made this one day when I was craving Chicken Parmesan but trying to stay on a diet as well. It is really delicious and can be made very fast too! If I want to sneak in more veggies, I sauté a little spinach and put it on right before the sauce.

1 boneless skinless chicken breast
3/4 cup marinara sauce
1/2 cup part-skim mozzarella cheese
2 slices whole wheat bread
1 teaspoon italian seasoning
salt and pepper

Steps:

  • Cut the chicken breast in half.
  • Sprinkle the outside of the chicken breast halves with salt, pepper, and italian seasoning.
  • Cook on medium-high heat until juices run clear.
  • While that is cooking, toast two pieces of whole wheat bread.
  • Place the toast on an oven-proof pan, then put the chicken on top of that, and then the mozarella cheese.
  • Put the sandwiches in the oven on the broil setting until the cheese is melted.
  • While that's browning, heat the sauce in the same pan that the chicken was heated inches Pour this on top of the sandwiches.

4 boneless, skinless chicken breast halves (about 1 1/4 lbs.)
1 egg, slightly beaten
3/4 c italian seasoned dry bread crumbs
1 jar(s) (26 to 28oz.) ragu old world style pasta sauce
1 c shredded mozzarella cheese (about 4oz.)
4 long italian rolls, halved lengthwise

Steps:

  • 1. Preheat oven to 400. Dip chicken in egg, then in bread crumbs, coating well.
  • 2. In a 13x9 glass baking dish, arrange chicken. Bake uncovered 20 minutes.
  • 3. Pour ragu pasta sauce over chicken, then top with cheese. Bake an additional 10 minutes or until chicken is no longer pink. To serve, arrange chicken and sauce on rolls.

1 pkg. (6 oz.) SHAKE 'N BAKE Seasoned Panko Seasoned Coating Mix
3/4 cup KRAFT Shredded Italian* Five Cheese Blend
1/4 cup KRAFT Grated Parmesan Cheese
2 tsp. dried Italian seasoning
1/4 tsp. garlic powder
3 large boneless skinless chicken breasts (1 lb.), cut horizontally in half
3 Tbsp. olive oil, divided
6 bolillos, split
1 clove garlic, cut diagonally in half
6 leaf lettuce pieces
1/2 cup CLASSICO Tomato and Basil Pasta Sauce, warmed

Steps:

  • Spray baking sheet with cooking spray. Combine first 5 ingredients in shallow dish. Moisten chicken with water. Add chicken pieces, 1 at a time, to coating mixture, turning to evenly coat both sides of each chicken piece. Place on prepared baking sheet. Lightly press coating mixture into chicken pieces to secure. Top with any remaining coating mixture.
  • Reserve 1 Tbsp. oil for brushing onto split bolillos. Heat 1 Tbsp. of the remaining oil in large skillet on medium heat. Add 3 chicken pieces; cook 4 to 5 min. on each side or until done.
