This was one of the first dishes I learned to prepare MANY years ago when I was just getting interested in cooking. I know that there a many variations of chicken salad but this is the way my Mom did it so that's the way I do it.

1 large can chunk chicken or tuna
2 Tbsp dill pickle relish
1 small onion, finely diced
1/2 c celery, finely chopped
1/2 c bell pepper, finely diced (any color)
1/2 c black or green olives, chopped
3 hard boiled eggs
3 Tbsp salad dressing or mayo
2 small roma tomatoes, diced
2 c shredded lettuce

Steps:

  • 1. In medium bowl, combine chicken or tuna, pickle relish, onion, celery, bell pepper, olives,and tomatoes. . Stir gently to combine.
  • 2. Peel and roughly chop the hard boiled eggs into the mixture.
  • 3. Add the salad dressing and gently fold all ingredients together
  • 4. If serving immediately, fold in the lettuce; if not, fold it in just before serving.
  • 5. This is great served in a hollowed out tomato, on your favorite bread or wrapped in a lettuce leaf. Use your imagination.

Here's a recipe I whipped up to jazz up the usual tuna or chicken salad. Instead of the usual 'tuna' I actually use a can of chunk solid white albacore. The resulting salad can be used in a wrap, on bread, on lettice leaves, and various other ways! Very tasty!

1 (12 1/2 ounce) can chicken breasts
1 (6 ounce) can solid white tuna
1/3 cup mayonnaise
2 tablespoons honey mustard
1/4 cup apricot preserves
3 tablespoons sweet pickle relish
1/2 red apple, cored, chopped
1 cup dark raisin
1/8 teaspoon pepper

Steps:

  • Drain the chicken & albacore & shred them in a bowl.
  • Add the mayonnaise, mustard, preserves & pickle relish.
  • Quarter the unpeeled apple & get rid of the core.
  • Stand each quarter apple on its edge and slice each in half lengthwise, keeping the red halves.
  • Dice these red halves & add to chicken/albacore mix, along with the raisins.
  • Mix well & season with pepper to taste.
  • Refrigerate.

1 can cream of chicken soup
1 cup diced celery
1/4 cup finely chopped onion
1/2 cup salad dressing or 1/2 cup mayonnaise
1 dash pepper
3 hardboiled egg, chopped
1 can tuna or 2 cups cooked cubed chicken
2 cups broken potato chips

Steps:

  • Combine soup, celery, onion, mayonnaise and pepper in 1 1/2 quart casserole.
  • Fold in eggs, and tuna or chicken.
  • Top with potato chips.
  • Bake at 400° for 30 mins.
  • This can be made ahead of time and refrigerated.
  • Top with chips right before baking.

4 cups cubed cooked chicken breast
2 celery ribs, thinly sliced
1 small green or sweet red pepper, chopped
1/2 cup sliced water chestnuts, halved
1/2 cup sliced fresh mushrooms
1/4 cup finely chopped onion
1 cup Miracle Whip Light
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1 cup soft bread crumbs
1 tablespoon butter, melted
1/4 cup shredded cheddar cheese

Steps:

  • In a large bowl, combine the first six ingredients. Combine Miracle Whip Light, garlic powder and pepper; stir into chicken mixture. , Transfer to a 2-qt. baking dish coated with cooking spray. Bake, uncovered, at 350° for 20 minutes. , Toss bread crumbs with butter; sprinkle over chicken mixture. Top with cheese. Bake 7-10 minutes longer or until heated through and top is lightly browned.

A little better than your run of the mill casserole. If no mushroom or celery soup then I use whatever creamed soups I have in the pantry. We serve this with fresh sliced tomatoes out of the garden. If I have baked chicken or turkey left overs, this is one way to finish them off as well!

1 (8 ounce) bag egg noodles (cooked)
1 small onion, diced
1 garlic clove, diced
1 (6 ounce) can mushrooms (can use fresh)
3 tablespoons butter
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can cream of celery soup
salt and pepper
3 tablespoons parmesan cheese
3/4 cup sour cream
1/4 teaspoon celery salt or 1/4 teaspoon celery seed
1 1/2 cups canned milk
1 (12 1/2 ounce) can chicken or 1 (12 1/2 ounce) can tuna
1 (14 1/2 ounce) can green peas
2 tablespoons butter
1 1/2 cups Ritz crackers (crushed)

Steps:

  • Saute onion, garlic and mushrooms with 3 tbsp butter in large saucepan.
  • Add canned soups, parmesan cheese, salt, pepper, sour cream and milk.
  • Bring to heavy simmer and cook about 15 minutes, stirring often.
  • While sauce is cooking, drain and rinse chicken or tuna, squeeze all moisture out.
  • Drain peas.
  • Add chicken and peas and noodles to sauce and gently combine well. Pour into greased large casserole.
  • Top with crushed crackers and dot with 2 tbsp butter.
  • Bake at 350 for 30 - 40 minutes. Will be a bit bubbly and top will be browned.

This is a delicious casserole that can be made using either tuna or 1-1/2 cups or more of cooked cubed chicken or even cooked turkey --- for a thinner sauce use 1 cup of milk or half and half instead of 3/4 cup, prep time includes boiling the egg noodles, if you are not a garlic-lover then you may omit the garlic powder and to zing the flavor up even more add in 1-1/2 tablespoons of lemon juice

12 -15 butter flavored crackers, broken in pieces (such as Ritz Crackers)

Steps:

  • Preheat oven to 375 degrees F.
  • Grease a 2-quart casserole dish.
  • Cook the egg noodles in boiling salted water; drain then toss with 2 tablespoons butter.
  • In a large saucepan, mix the undiluted mushroom soup, garlic powder, Parmesan cheese (if using) milk or half and half, sour cream, salt, pepper, chopped onion, pimiento, bell pepper and celery; cook over low heat, stirring frequently for 15 minutes.
  • Add in the tuna or chicken; mix to combine.
  • Combine the mixture with the cooked egg noodles.
  • Transfer to prepared greased baking dish.
  • Sprinkle top with the broken Ritz crackers.

1 (8 count) package crescent rolls
1 (12 1/2 ounce) can tuna, drained and flaked
1/2 cup chopped celery
1/4 cup green goddess salad dressing
2 cups chopped lettuce
2 medium tomatoes, chopped
4 slices American cheese, halved diagonally (4oz)

Steps:

  • Unroll crescent roll dough; separate into 8 triangles.
  • Place in greased 9-inch pie plate, pressing edges together to form pie shell.
  • Trim edges of rolls 1/2 inch beyond edge of pie plate; fold under.
  • Bake, uncovered, in 350 degree oven about 10 minutes.
