"ONO-LISHIOUS": GRILLED SESAME CHICKEN SATAY PAPAYA SALAD WITH HOISIN BALSAMIC VINAIGRETTE

4 to 6 large chicken breast, cut into 1-inch cubes
1/4 cup olive oil
8 ounces hoisin sauce (found in international section in grocery store)
4 to 5 cloves minced garlic
1 teaspoon black pepper
1/2 teaspoon white pepper
1 teaspoon salt
2 tablespoons cooking sherry
12 to 16 skewers (if wooden, soak in water for 15 to 20 minutes)
1/2 cup roasted white and black sesame seeds
1 ripened papaya
1/2 lime, juiced
Mixed greens
1/2 cup fresh large diced tomatoes
3/4 cup balsamic vinegar
1/4 cup hoisin sauce
2 tablespoons soy sauce
1 small Maui sweet onion - sliced
2 cloves garlic
4 -6 sprigs fresh basil leaves
1 teaspoon crushed red pepper flakes
1 1/4 cups extra-virgin olive oil
1 teaspoon salt
1 tablespoon sugar
Freshly cracked pepper

Steps:

  • For the Chicken Satay: Combine the first 8 ingredients to coat chicken. Let marinate for 2 hours. Skewer 3 to 4 cubes of chicken per stick. Sprinkle chicken with sesame seeds. Set aside before grilling.
  • For the Papaya Salad: Cut papaya in half, seed and skin. Cut papaya into quarters, then cut into thin slices. Squeeze the lime juice over the papaya and arrange on plate over mixed greens.
  • For the "Hoisin" Balsamic Vinaigrette: Combine the first set of ingredients in blender. With blender on, emulsify by adding oil slowly until well blended. Add salt, sugar and pepper, to taste. Set aside.

Chicken long rice is usually found at a luau as a side dish. It's a savory and simple dish to make for dinner and any special occasion.

Number Of Ingredients 8

32 oz chicken broth
3 tbsp shoyu (soy sauce)
2 cloves minced garlic
2 tbsp grated ginger
1 tsp sugar
4 chicken thighs
10.5 oz bean thread noodles (cellophane noodles)
1/4 cup chopped green onions (optional)

Steps:

  • Take off the skin and mince one clove of garlic and two inches of ginger. Slice the green onions and set aside.
  • Over medium heat, add in the chicken broth, shoyu, sugar, garlic, ginger, and chicken thighs. Bring it to a boil. Then turn the heat down to bring it to a simmer.
  • Cover the pot and simmer it for 30 minutes.
  • Meanwhile soak the bean thread in a bowl with water. Make sure the water covers all of the noodles.
  • Remove the chicken after 30 minutes and begin to shred it. Discard the skin and bones.
  • Bring the shredded chicken back to the pot and add in the bean thread. Stir it all together and let it cook for another 5 minutes or until the noodles begin to look clear.
  • Garnish it with green onions. Serve it hot and enjoy!

I found this recipe over 30 years ago in a women's magazine. I believe the word "ono" is supposed to mean "tasty" in Hawaiian, but I've never confirmed that! I have also tried it with pepper jelly for a slightly spicier version. Goes well with fried rice.

1 chicken, cut up
salt and pepper
2 tablespoons Dijon mustard
1/4 cup margarine
1/4 cup apple jelly (or pepper jelly)

Steps:

  • Salt& pepper chicken pieces and put in flat baking pan, skin side down.
  • Melt margarine in saucepan.
  • Add jelly and mustard.
  • Stir over low heat until everything blends into a sauce.
  • Pour over chicken pieces.
  • Bake 1-1/2 hours at 375.
  • Turn chicken over midway.

ONO CHICKEN WINGS

I got this recipe from a friend in Hawaii. Ono means good in Hawaiian and these are very good. Make sure that they marinate over night to let the flavors develop.

1 c soy sauce
1 c pineapple juice
1 clove garlic, minced finely
2 Tbsp onion, minced
1 tsp ginger, grated
1/4 c brown sugar
7 oz beer
1/4 c vegetable oil
5 lb chicken wings
sesame seeds, toasted

Steps:

  • 1. Cut off and discard the small tip of each wing. Cut main wing at joint.
  • 2. Combine first 8 ingredients and stir until dissolved. Pour over chicken and marinate overnight. Be sure sauce overs all pieces.
  • 3. Drain and save marinade.
  • 4. In large skillet, heat a small amount of oil and brown chicken on all sides over medium. When brown, add 1/2 cup marinade; cover; reduce heat and simmer 15-20 minutes. Stir and add more marinade if necessary.

5 pounds chicken thighs, rinsed and dried
2 tablespoons vegetable oil
1 tablespoon ginger, crushed
1 tablespoon garlic, crushed
6 small packages long rice (cellophane noodles)
6 ounce dried shiitake mushrooms
1 (8 ounce) can bamboo shoots
1 can button mushrooms, sliced
6 eggs, hard boiled and diced
Green onions, finely chopped

Steps:

  • Heat oil in pot. Add ginger and garlic. Add chicken and stir until brown. Add 1 1/2 cups water and let simmer 1/2 hour. Soak long rice, mushrooms and bamboo shoots in bowl of hot water (enough to cover) and let stand for about 20 minutes. Slice mushrooms and bamboo shoots. Cut up long rice to about 5 inch lengths. Add all ingredients except eggs and green onions to chicken and continue to simmer until long rise is cooked about 20 minutes. Turn of heat. Lastly, add eggs and green onion.
