CHICKEN PACKETS (OAMC)
Another Once a month meal that's sure to please. My little girl likes these because they pick up easily in her hands! *I revised this recipe based on several folks pointing out that I had made a mistake on the amount of cream cheese. Thank you so much for the input!

Steps:
- Mix chicken, cream cheese, chives, milk, and salt in a medium bowl (mixing with hands works best) to make filling, and store in a 1 qt freezer bag.
- Put crouton crumbs in another 1 qt bag, attach it to bag of chicken filling, and freeze.
- Refrigerate crescent rolls.
- To prepare for serving, thaw chicken mixture.
- Preheat oven to 350°F.
- Unroll crescent rolls.
- Each tube will contain 4 rectangles of dough with a diagonal perforation.
- Press dough along each perforation so the rectangle halves will not separate.
- Place about 1/4 cup of the chicken mixture into the center of each rectangle.
- Fold dough over the filling, and pinch the edges to seal tightly.
- Dip each packet in melted margarine, and coat with crouton crumbs.
- Place packets on a baking sheet.
- Bake for 20 minutes or until golden brown.
- Packets are good either hot or cold.

- In a plastic bag, mix the flour, seasoned salt and some salt and pepper. In a bowl, mix the eggs with 2 tablespoons water. In a separate bowl, add the breadcrumbs.
- Shake the chicken pieces in the bag to coat. In batches, dip them in the egg wash, then in the breadcrumbs.
- Heat about 2 inches of vegetable oil in a large skillet over medium-high heat until a few breadcrumbs dropped in the oil start to sizzle immediately. Fry the chicken, in batches if needed, until golden brown and cooked through, a couple minutes per side. Drain on a paper towel and serve with ketchup.

- Preheat oven to 400 degrees F (200 degrees C). Cover a baking sheet with aluminum foil; place a wire cooling rack on top and spray with cooking spray.
- Put chicken into a gallon-size resealable plastic bag. Add ranch dressing; seal and shake bag to coat chicken evenly.
- Mix panko, Parmesan cheese, garlic powder, and parsley together in a bowl; pour into bag with chicken. Seal and shake bag to coat thoroughly. Remove from bag; place on rack in a single layer.
- Bake in the preheated oven until no longer pink in the center and the juices run clear, about 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Turn broiler on high; broil until crispy, about 1 minute.

Steps:
- Heat 1 inch oil to 350 degrees F (175 degrees C) in a large skillet or saucepan.
- Stir together the flour, garlic salt, and pepper in a bowl. Dip the chicken pieces individually into the beaten eggs before pressing into the flour mixture to coat; shake off the excess flour. Place the coated chicken pieces onto a plate until all the chicken has been coated.
- Cook the chicken in batches in the hot oil until golden brown and no longer pink in the center.

CHICKEN NUGGETS - OAMC
This is the way I make my chicken nuggets. My kids love these and I try to keep some on hand in the freezer for quick snacks and meals. The technique came from the 30 day gourmet cookbook. This is an estimate on the crumbs. I normally do a whole bunch of chicken at once and just kind of eyeball the amounts.

Steps:
- Preheat oven to 375 degrees.
- spray a baking sheet with cooking spray and set aside.
- Cut chicken into slices and then into "nugget" sized pieces.
- In a medium bowl, mix together the ranch dressing and the milk.
- put chicken pieces into bowl with milk mixture.
- Crush the ritz crackers into fine crumbs. I use my food processor.
- Place cracker crumbs and paprika in a large zipper type baggie. Seal and shake to mix together.
- Place a few of the chicken pieces into the bag of coating mix. Seal bag and shake to coat.
- Place nuggets on prepared baking sheet.
- Repeat until all chicken has been coated.
- Bake for 15-20 minutes or until chicken is done.
- Remove from oven and cool. I like to flash freeze before placing in a freezer bag and freezing.
- To serve:.
- Place frozen nuggets on a baking sheet and bake at 400 degrees for 5-10 minutes or until heated through. You can heat in the microwave, but they don't turn out as crispy.
- Note: Flash freezing just means to place the items on a baking sheet, not touching, and put in the freezer until firm. This keeps them from sticking together in one big clump.

Steps:
- Mix Ranch dressing and milk in a bowl.
- Place the chicken nuggets into the bowl of ranch mix.
- In blender crush the tortilla chips once finely crushed mix in taco seasoning.
- This step you might need to do a little chips at a time and stir with a rubber spatula to mix.
- (if mix becomes too sticky and wont stick to chicken return to blender and mix again).
- Once chips are crushed spoon out the chicken from the ranch and roll into the chip mixture.
- At this point you can freeze these for 2 hours single layered then placed into a zip lock baggie.
- To bake unfrozen place on a sprayed cookie sheet Bake@ 425 for 15-20 minutes or untill chicken is done and topping is crisp.
- To bake frozen bake for 25 minutes at 425.

- Preheat oven to 400 degrees F.
- Add panko breadcrumbs to a large baking sheet and spread out in an even layer. Spray breadcrumbs with nonstick olive oil cooking spray. Bake for 2 minutes, then stir breadcrumbs (or just give the pan a shake) and then bake for 2-3 minutes or until breadcrumbs are golden brown. Keep heat in the oven.
- Transfer breadcrumbs to a medium bowl. Whisk in spices: salt, black pepper, onion powder, paprika, garlic powder and cayenne pepper. Set aside.
- In a separate medium bowl, whisk together the eggs and almond milk. Set aside.
- Line the large baking sheet with an oven safe wire metal rack. Spray with nonstick cooking spray.
- Dip each chicken cube into the egg mixture, then use a tong to grab each chicken nugget and toss into the breadcrumb mixture to completely coat with breadcrumbs. Use tongs to transfer to the wire rack, placing about 1 inch apart.
- Generously spray the tops of the chicken nuggets with nonstick spray. Bake in the oven for 15-20 minutes until cooked through and temp reaches 165 degrees F with a meat thermometer. Serves 4. Serve with BBQ sauce, honey mustard, ketchup or whatever sauce you'd like!

- Flatten chicken to 1/2" thickness.
- Spread 3 tablespoons cream cheese over each chicken piece.
- Dot with butter and sprinkle with salt; roll up.
- Wrap each with a bacon strip.
- Place, seam side down, in a greased pan.
- Bake, uncovered, at 400F for 35-40 minutes or until juices run clear.
- Broil 6 inches from the heat for 5 minutes or until bacon is crisp.
- If you are making these ahead for future use, freeze these uncooked on a cookie sheet in your freezer. When solid, wrap and put in a ziplock bag or vacuum seal desired quantities.
- To cook from frozen state, thaw before cooking and follow directions above.

- Rinse chicken with cold water and pat dry with paper towels. Cut into 1x1x1/2 inch pieces.
- Fill a deep fryer with corn oil, no more than 1/3 full. Heat to medium heat.
- Place egg and water in a small bowl and mix well. Add the flour, sesame seeds and salt, stirring until a smooth batter is formed.
- Dip chicken pieces in batter and drain off any excess. Add battered chicken, a few pieces at a time, to the hot oil. Fry about 4 minutes or until golden brown and done (remove chicken from oil to test). Drain on paper towels.
