3 chicken breasts, sliced
2 tablespoons canola oil
1 small onion, finely diced
1 red chili, seeded and sliced
1 teaspoon minced garlic
230 g valcom laksa paste
1 liter chicken stock
400 ml coconut cream
2 teaspoons fish sauce
1 tablespoon brown sugar
3 kaffir lime leaves
200 g rice noodles
200 g bean sprouts, for garnish
1 red chili, seeded and sliced, for garnish
1/2 cup fresh coriander leaves, for garnish

Steps:

  • in a small frypan, saute the chicken in 1 tablespoon of the oil, stirring until cooked through but not brown. drain and put aside.
  • make the rice noodles according to directions on packet and put aside.
  • in a large pot, using the other tablespoon of oil, saute the onion, garlic and chilli until onion is translucent.
  • add the laksa paste and stir till fragrant. add the stock and coconut cream and stir until boiling.
  • add the chicken, sugar, fish sauce and lime leaves. simmer for 2 minutes. remove from heat.
  • TO SERVE:.
  • place desired amount of noodles into bowls, ladle laksa over the noodles, distributing chicken evenly. top with some bean shoots, chilli and coriander.

A good, spicy, filling soup. This is the only soup I can make that my family will accept as a meal - we love the Thai flavours of lime, coriander, fish sauce and coconut....mmm!

200 g thin dried noodles
2 red chilies
4 garlic cloves
5 cm peeled and roughly chopped green ginger
1 teaspoon ground coriander
1/2 cup coriander root, stems and leaves
50 ml sesame oil
3 skinless chicken breasts
1 liter light coconut milk
3 cups chicken stock
50 ml fish sauce
1 lime, juice of
1/2 cup mint leaf
3 finely sliced green onions
1 cup fresh bean sprout
lime wedge

Steps:

  • Soak the noodles in boiling water for 5 minutes.
  • Drain and set aside.
  • Put chillies, garlic, ginger, coriander seeds, fresh coriander and oil into food processor and process to a coarse paste.
  • Slice the chicken breasts diagonally.
  • In a large saucepan over medium heat add the paste and fry for 1 minute, stir well.
  • Add coconut milk and stock.
  • Bring to boil, simmer gently for 10 minutes.
  • Add fish sauce and chicken and cook for 5 minutes.
  • Add lime juice.
  • Divide noodles between bowls and ladle soup over them.
  • Sprinkle with mint leaves, green onions,bean shoots and lime wedges.

My friend, Ginny, calls this her "Thai-soupie thingo" - it's another soup when you are hungry and pushed for time. You can use chicken which is already cooked, otherwise fry raw chicken breasts in the usual manner. The preparation time is based on chicken already cooked.

2 cooked chicken breasts, cut into small pieces
1/4 cup red curry paste
2 (510 g) cans pumpkin soup
800 ml coconut milk
1 cup chicken stock (either homemade or using stock cubes)
4 spring onions, -finely sliced
fresh coriander, cut finely
oil

Steps:

  • Heat oil ( not too much) and gently heat the curry paste.
  • Add cooked chicken.
  • Add pumpkin soup, coconut milk and chicken stock.
  • Gently heat through until simmering.
  • Plate the soup and just before serving, sprinkle over some spring onions and coriander into each bowl.
