GRILLED CHICKEN WITH GREEN BEANS AND BUTTERMILK DRESSING



Grilled Chicken with Green Beans and Buttermilk Dressing image

1/2 cup buttermilk
1/4 cup low-fat mayonnaise
2 tablespoons chopped chives
2 tablespoons chopped parsley
1 small clove garlic, finely chopped
Finely grated zest and juice of 1/2 lemon (about 1 teaspoon zest and 1 tablespoon juice)
Kosher salt and freshly ground black pepper
8 ounces green beans, trimmed
1 tablespoon extra-virgin olive oil, for plus more for brushing
Kosher salt and freshly ground black pepper
2 small red onions, cut into thick rings
4 boneless skinless chicken breast halves (about 2 pounds), butterflied and separated to make 8 thin cutlets
2 lemons, 1 halved and 1 quartered

Steps:

  • For the buttermilk dressing: Whisk together the buttermilk, mayonnaise, chives, parsley, garlic, lemon zest and juice and 1 tablespoon water in a medium bowl. Season with salt and pepper and set aside.
  • For the grilled chicken and beans: Preheat a grill or grill pan (over 2 burners) to medium-high heat. Make a double thickness of aluminum foil about 18 inches square. Toss the green beans with the olive oil and salt and pepper to taste and spread on one half of the foil. Fold the foil to seal the green beans in a rectangular package, leaving a little dome at the top. Put the green bean package on the grill and grill until tender, about 18 minutes. Remove from the grill and let the beans steam in the package until ready to serve.
  • Meanwhile, brush the onion rings with olive oil and season with salt and pepper. Grill on the other side of the grill until charred and tender, 8 to 10 minutes. Remove to a bowl when done.
  • Sprinkle the chicken with salt and pepper, brush with olive oil and squeeze the 2 lemon halves over. Grill the chicken, turning once, until cooked through, about 3 minutes per side. During the last 2 minutes, add the lemon quarters to the grill just to char.
  • To serve: Empty the green beans into the bowl with the onions and toss with 3 tablespoons of the dressing. Mound the vegetables on plates or a platter and top with the chicken. Drizzle with the remaining dressing and garnish with the grilled lemon wedges.

1/4 cup apple cider vinegar
1 teaspoon sugar
Kosher salt
2/3 cup dried cranberries
3 tablespoons unsalted butter
4 teaspoons finely chopped fresh sage
5 slices pumpernickel bread, cut into 1-inch pieces
Freshly ground pepper
1/3 cup buttermilk
1/3 cup sour cream
2 tablespoons mayonnaise
2 teaspoons dijon mustard
1 small clove garlic, finely grated
1/2 cup fresh dill
1/4 cup fresh parsley
4 scallions, thinly sliced
1 head Bibb lettuce, leaves halved if large
3 heads baby lettuce (such as Little Gem), leaves halved if large

Steps:

  • Combine 1/3 cup water, the vinegar, sugar and a big pinch of salt in a small microwave-safe bowl or liquid measuring cup. Add the dried cranberries. Microwave until the liquid starts to simmer, 1 1/2 to 2 minutes. Let the cranberries sit in the liquid for 30 minutes to pickle slightly, then drain.
  • Meanwhile, preheat the oven to 375 degrees F. Combine the butter and sage in a small microwave-safe bowl and microwave until melted, about 1 minute. Toss with the bread pieces on a baking sheet; season with salt and pepper and spread in a single layer. Bake, tossing halfway through, until crisp, 15 to 20 minutes.
  • Make the dressing: Combine the buttermilk, sour cream, mayonnaise, mustard, garlic, 1/4 cup dill, the parsley, 1 scallion, 3/4 teaspoon salt and a few grinds of pepper in a food processor. Pulse to make a smooth dressing.
  • Gently toss the lettuces and the remaining 1/4 cup dill and 3 sliced scallions with the dressing in a large bowl; season with salt and pepper. Sprinkle with the cranberries and croutons and gently toss.

1/4 cup freshly squeezed lime juice
1/3 cup chopped fresh cilantro leaves
1/2 teaspoon ground cumin
cayenne pepper
1/2 cup olive oil (or mixture of both) or 1/2 cup canola oil (or mixture of both)

1 1/2 lbs boneless skinless chicken breast halves
1 large head romaine lettuce, torn into bite-size pieces
1 small jicama, cut into thin sticks (about 12 oz.)
1 bunch radish, sliced into half-moons
1/4 small red onion, very thinly sliced
1 large avocado, diced
1 large mango, diced
1/4 cup hulled hulled roasted salted pepitas

Steps:

  • Preheat ridged grill pan.
  • For vinaigrette: In medium bowl, combine lime juice, cilantro, cumin and pinch of cayenne pepper. Slowly whisk in oil until emulsified. Add salt and adjust seasonings to taste.
  • In shallow dish, place chicken and cover evenly with 1/3 of vinaigrette.
  • In grill pan over medium-high heat, grill chicken until just done, about 6 minutes per side. Transfer to cutting board and let cool 5 minutes.
  • Meanwhile, in large serving bowl, toss lettuce with small amount of vinaigrette. In another bowl, combine jicama, radishes, onion, avocado and mango. Gently toss with more vinaigrette.
  • Place vegetable and fruit mixture on top of lettuce. Diagonally cut chicken into 1/2-inch-thick slices and arrange on top of salad. Top chicken with remaining vinaigrette and pepitas.

3/4 cup tequila
1/4 cup white wine vinegar
Juice of 3 limes
1/2 cup Lemon Oil, recipe follows
5 large shallots, peeled and chopped
1 cup chopped fresh cilantro plus 1 large bunch cilantro, leaves only
2 teaspoons minced garlic
1 1/2 pounds boneless chicken breasts, trimmed of all fat
Coarse salt and freshly ground pepper to taste
Coarse salt and freshly ground pepper to taste
1/2 cup canola oil
2 cups vegetable oil
Shells of 4 lemons that have already been juiced
Few sprigs fresh thyme

Steps:

  • If using wooden skewers, soak in water for at least an hour.
  • In a small nonreactive container, combine 1/2 cup of the tequila with the vinegar and lime juice. Whisk in the Lemon Oil. When well emulsified, stir in the shallots, chopped cilantro, and 1 teaspoon of the minced garlic. Pour into a nonreactive, shallow container large enough to hold the prepared skewers. Set aside.
  • Using a very sharp knife, slice the chicken into 30 strips about 1/4-inch thick and 2 inches long. Thread the strips onto the soaked skewers and place them into the marinade, leaving as much of the skewer exposed as possible as you do not want the wood to soak up the marinade. Cover and marinate for 8 hours.
  • Place the cilantro leaves in a saucepan of rapidly boiling salted water for 10 seconds to blanch and set the color. Immediately pat dry and refresh under cold water. Drain very well and pat dry.
  • Place the blanched cilantro in a blender with the remaining 1/4 cup of tequila and 1 teaspoon of garlic. Pulse to combine. With the motor running, slowly add the canola oil, processing until the mixture is thick and bright green. Taste and adjust the seasoning with salt and pepper.
  • When ready to serve, remove the skewers from the marinade. Place a stovetop griddle, heavy-duty grill pan, or nonstick saute pan over high heat. When very hot but not smoking, add the skewers, a few at a time, and sear for 1 1/2 to 2 minutes per side or until the chicken is nicely browned and cooked through. Serve immediately with the Cilantro Dressing on the side.
  • Combine oil with the lemon shells and fresh thyme in a heavy saucepan. Place the pan over medium-high heat and bring to a boil. Immediately lower the heat and barely simmer for 15 minutes. Remove from the heat and allow to cool. Strain into a clean container. Cover and store in a cool spot for up to 6 months. Use the oil for sauteing, frying, and for vinaigrettes.

That name is a mouthful, I know! But a tasty mouthful. If you've never tried jicama, here is your chance! This a bit time consuming but you can easily make the dressing ahead of time. You can also do the tortilla strips ahead and store in a airtight container, or omit them altogether and use store-bought tortilla chips.

1/4 cup orange juice
2 tablespoons lime juice
1 -2 tablespoon tequila

4 (6 inch) corn tortillas, cut into 1/2-inch wide strips

2 teaspoons minced garlic
3/4 teaspoon chili powder

1 (6 ounce) bag mixed salad greens

Steps:

  • For vinaigrette:.
  • Combine all ingredients and whisk until thoroughly combined. Chill until ready to use.
  • For Tortilla strips:.
  • Place strips in large bowl and spray with cooking spray, tossing to coat.
  • Combine seasonings and sprinkle over strips, tossing to coat.
  • Fry in oil until lightly browned or spread over cookie sheet and bake at 350 for 8 minutes. They will get crispy as they cool.
  • For Chicken:.
  • Combine marinade ingredients in large zip-loc bag.
  • Add chicken and marinate at least 2 hrs, turning bag occasionally.
  • Preheat grill.
  • Remove chicken from bag and discard marinade.
  • Sprinkle chicken with 1/2 tsp salt.
  • Grill 5 minutes on each side or until done.
  • Cut meat into 1/2" slices.
  • For Salad:.
  • Combine jicama, mango and greens in large bowl.
  • Pour vinaigrette over salad and toss to coat.
  • Divide into servings and top with chicken and tortilla strips.
  • Whew! Sit down and enjoy it all with a frozen margarita that someone else fixed!
