This is a family favorite that is so simple to make, and a great way to use up left over chicken or turkey. I use up my left over gravy when I have it. I have also used instant mashed potatoes when in a hurry, but I prefer the taste of real potato. I found this in a recipe book years ago and modified it to make it quick and easy.

3 -4 cups mashed potatoes
2 -3 cups chicken, cut into bite size pieces
2 (8 ounce) cans chicken gravy
1 (4 ounce) can sliced mushrooms
1/2 cup parmesan cheese

Steps:

  • Line the inside edges of a 9 inch deep dish pie plate with mashed potatoes, leaving the middle of the pie plate, about a 4-5 inch in diameter, empty.
  • Mix together chicken or turkey, gravy, and mushrooms. Pour in the middle of the pie plate, (in the hole). Sprinkle parmesan cheese over entire dish.
  • Bake at 350 uncovered, about 30 minutes or until bubbly and hot.

This is a simple way to get your toast and eggs together in one pan. My son has been crazy for this for years and will beg me to make them for him.

2 slice bread, your favorite kind
2 large eggs
butter
salt and pepper to taste

Steps:

  • 1. You will either need a drinking glass or cookie/biscuit cutter. Cut a whole in the center of the bread
  • 2. In frying pan set to medium heat, melt a slab of butter Butter both sides of the bread and place in the pan to brown the first side.
  • 3. When bread is lightly toasted brown on the bottom, crack your egg into the hole. Note: if the pan seems dry of butter you may want to add a little inside the round opening before adding the egg.
  • 4. Allow egg to cook whites solid on the one side before you flip the hen and nest brown opposite side of bread. Serve immediately!

2 cups cooked mashed potatoes
2 tbls butter
2 tbls flour
1/2 tsp pepper
1 cup chicken broth
1/4 cup cream
2 cups COOKED chicken, diced
2 tbls grated parmesan cheese

Steps:

  • Line a buttered 9 inch pie plate with the potatoes. Melt the butter in a pan. Stir in the flour and seasonings. Add the broth gradually, stirring until boiling. Add cream and cook a few minutes. Put the chicken in the pie plate. Cover with the sause and sprinkle with cheese. Bake at 400 degrees for 25-30 minutes.

4 pieces skinless chicken breast, boned (about 8 ounces each)
Salt and freshly ground black pepper
2 to 3 sprigs fresh finely chopped rosemary
1 tablespoon extra-virgin olive oil
1 sheet puff pastry (11 by 17-inch), (recommended: Dufour)
8 slices Italian fontina cheese, slices should be 2 to 3-inches square and 1/4 to 1/2-inch thick, cut in 1/2
1/2 cup fig preserves
1 egg mixed with 1 tablespoon water, for egg wash

Steps:

  • Preheat oven to 400 degrees F.
  • Season the chicken with salt, pepper and rosemary. Cut each piece of chicken in half across the breast giving you 8 equal portions. Heat the oil in a nonstick skillet over medium-high heat. Lightly brown the chicken on both sides, 5 minutes total. Remove from heat.
  • Line a baking sheet with parchment paper. Cut pastry into 8 pieces. Place a piece of cheese on each pastry square and top with spoonfuls of fig preserves and the chicken pieces. Pinch and seal the dough up and over the meat and cheese, seal with egg wash, flip the pastry packets over and brush the tops with remaining egg wash. Bake 12 to15 minutes, until golden.
  • For entree portions, simply leave chicken breast whole and cut the pastry into quarters. Trim off excess dough and use it to decorate the pastry with small cut outs such as heart shapes.
