BALSAMIC CHICKEN PIZZA

1 1/4 lbs strong flour
2 teaspoons salt
1/4 ounce instant yeast
1 1/4 cups warm water, approximately
3 tablespoons olive oil
1 onion, chopped
1 garlic clove, chopped
7 ounces cherry tomatoes
salt & freshly ground black pepper
1 chicken breast fillet, chopped into small pieces
2 tablespoons balsamic vinegar
1 tablespoon olive oil, plus extra for drizzling
1 red onion, finely sliced
1 fresh mozzarella ball, torn into pieces
chopped cilantro leaf, to garnish

Steps:

  • First make the pizza dough. In a bowl, mix together the flour, salt and yeast. Gradually add in the warm water, mixing as you add it in, until the mixture comes together into a dough.
  • Knead the dough on a lightly floured work surface until smooth and elastic. Set aside in a warm place for 30 minutes, until doubled in size.
  • Meanwhile, cook the tomato sauce. Heat the olive oil in a heavy-based saucepan. Add in the onion and garlic and fry very gently for 5 minutes.
  • Add in the cherry tomatoes and cook gently for 15 minutes, stirring now and then. Season with salt and freshly ground pepper. Crush the cooked cherry tomatoes with a masher.
  • Meanwhile, prepare the chicken topping. Place the chicken in a bowl, sprinkle over 1 tablespoon of balsamic vinegar and set aside for 10 minutes.
  • Heat the olive oil in a frying pan. Add in the chicken and fry, stirring, for 5 minutes, until cooked through. Add in the remaining balsamic vinegar, scraping the frying pan with a wooden spatula to deglaze it.
  • Break the risen dough down and divide into 3 even-sized portions.
  • Preheat the oven to 450°F
  • To make a pizza, roll out one of the pizza dough portions into a large disc and place it on a baking sheet.
  • Top the pizza with the fried balsamic chicken, then sprinkle over the red onion. Dot with the mozzarella and drizzle over with olive oil.
  • Bake for 8 minutes. Sprinkle with cilantro and serve at once.

1 skinless, boneless chicken breast half
2 tablespoons butter or margarine, softened
2 cloves garlic, minced
2 tablespoons chopped green onion
½ teaspoon dried basil
1 (10 ounce) can refrigerated pizza crust dough
2 roma (plum) tomatoes, diced
½ cup chopped fresh cilantro
½ cup ricotta cheese
¼ cup grated Parmesan cheese

Steps:

  • Place the chicken breast in a saucepan with enough water to cover. Bring to a boil, and cook until no longer pink, about 20 minutes. Drain and cool slightly, then cut into strips.
  • Meanwhile, in a small skillet over medium heat, melt the butter with garlic, onion and basil. Pour into a chilled dish to cool, and refrigerate until set.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Roll out the pizza dough, place onto a pizza pan or other baking sheet, and spread the herb butter over the surface using the back of a spoon. Arrange chicken on top, then dot with ricotta cheese. Top with tomato slices, cilantro and Parmesan cheese.
  • Bake for 15 to 20 minutes in the preheated oven, until crust is browned and center is cooked through.

8 ounces green beans, trimmed
8 ounces Yukon gold potatoes, cut into 1/2-inch chunks
1/2 cup Food Network Kitchen™ Inspirations Italian Herb & Garlic Dressing
Kosher salt and freshly ground black pepper
1 pound boneless, skinless chicken breasts
1/2 cup sliced roasted red peppers
1/2 small red onion, thinly sliced
One 5-ounce package baby arugula or baby spinach
1/2 cup crumbled goat cheese

Steps:

  • Preheat the oven to 425 degrees F. Coat a rimmed baking sheet with cooking spray and place in the oven while it preheats.
  • Toss the green beans and potatoes in a large bowl with 2 tablespoons of the Italian Herb & Garlic Dressing. Sprinkle with salt and pepper. Spread on one side of the preheated baking sheet, leaving room for the chicken. Toss the chicken in the same bowl with 2 tablespoons of the remaining dressing. Sprinkle with salt and pepper. 1/4 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper
8 boneless chicken breasts
2 tablespoons olive oil
1 cup dry white wine or 1 cup chicken broth
1/4 cup balsamic vinegar
1 (10 ounce) can diced tomatoes and green chilies, undrained
1 (1 1/4 ounce) envelope garlic, and herb sauce mix
1/2 cup sliced green onion (about 4)
hot cooked egg noodles

Steps:

  • Combine flour, salt and pepper. Dredge chicken in flour mixture.
  • Brown half of chicken in 1 tablespoon hot oil in a large skillet over medium-high heat 4 minutes on each side or until browned.
  • Remove chicken from skillet. Repeat procedure with remaining chicken and oil, reserving drippings in the skillet.
  • Add wine and vinegar to skillet, stirring to loosen particles from bottom of skillet; cook 2 minutes.
  • Stir in tomatoes and green chiles and garlic and herb sauce mix until combined.
