THAI SHRIMP, CHICKEN, GRAPEFRUIT, AND COCONUT SALAD



Thai Shrimp, Chicken, Grapefruit, and Coconut Salad image

This is my combination of 'Thai Yam Som-O' and a marinated-shrimp and coconut salad I had at Bellagio's. If pomelo is available in your area, use it in place of the grapefruit.

½ cup fresh lime juice
1 ½ tablespoons fish sauce
2 teaspoons white sugar
2 cloves garlic, crushed
1 red grapefruit, peeled and sectioned
2 cups shelled cooked tiny shrimp, thawed if frozen
2 cups shredded precooked chicken breast meat
1 ½ cups shredded coconut meat, unsweetened
6 shallots, thinly sliced
1 teaspoon chopped red chile pepper
½ cup fresh mint leaves
1 ½ tablespoons finely chopped fresh cilantro
1 head iceberg lettuce, shredded

Steps:

  • Make the dressing by whisking together the lime juice, fish sauce, sugar, and garlic in a bowl.
  • Toss together the sectioned grapefruit, shrimp, chicken breast, coconut, shallots, chile pepper, mint, and cilantro in a large bowl. Drizzle approximately 3/4 of the dressing into the grapefruit mixture and toss to combine. Combine the remaining dressing with the shredded lettuce in a separate bowl shortly before serving.
  • Arrange the lettuce on a large platter. Layer the grapefruit mixture on top of the lettuce.

CHICKEN THIGHS WITH GRAPEFRUIT-FENNEL SALAD



Chicken Thighs with Grapefruit-Fennel Salad image

Number Of Ingredients 10

2 teaspoons coriander seeds
2 teaspoons fennel seeds
8 small skinless, boneless chicken thighs (about 1 1/2 pounds)
Kosher salt and freshly ground pepper
8 slices baguette
2 tablespoons plus 2 teaspoons extra-virgin olive oil
2 ruby red grapefruits
1 small bulb fennel
1 cup fresh parsley
1/4 cup crumbled low-fat feta cheese

Steps:

  • Place a baking sheet on the bottom oven rack and preheat to 475 degrees F. Coarsely grind the coriander and fennel seeds in a spice grinder or crush with a heavy skillet. Put the chicken in a large bowl and sprinkle with the spices; season with salt and pepper and toss well.
  • Drizzle the baguette slices with 1 tablespoon olive oil and season with salt and pepper. Set aside.
  • Heat a large skillet over high heat; add 2 teaspoons olive oil. Add the chicken and cook until browned on the bottom, 3 minutes. Flip and cook until browned on the other side, 1 to 2 minutes.
  • Carefully arrange the baguette slices on the hot baking sheet. Put 1 chicken thigh on each baguette slice. Roast on the bottom rack until the chicken is cooked through and the baguette is browned and crisp on the bottom, 15 to 17 minutes.
  • Meanwhile, peel the grapefruits with a paring knife; cut out the segments and transfer to a bowl. Squeeze in the juices from the membranes and add the remaining 1 tablespoon olive oil. Trim and core the fennel; finely chop the fennel bulb and 1/4 cup fronds and add to the bowl along with the parsley. Season with 1/4 teaspoon salt and a few grinds of pepper and toss well.
  • Divide the bread and chicken among plates. Spoon the grapefruit-fennel salad over the chicken and top with the cheese.

If anyone knows how to make the Pampered Chef Citrus & Basil rub, please let me know! Otherwise, you could probably just sprinkle some lemon pepper and basil if you don't have the prepackaged seasoning.

1 lb boneless skinless chicken breast
1 teaspoon olive oil
1 large red grapefruit
1 tablespoon orange marmalade
3 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon fresh coarse ground black pepper
4 radishes, thinly sliced
1 avocado, diced
6 ounces baby spinach leaves
1/2 cup red onion, sliced (optional)

Steps:

  • CHICKEN: Combine chicken, citrus & basil rub, and 1 tsp olive oil in a small bowl. Toss to coat. Heat a grill pan over medium heat for 5 minutes or until hot. Cook chicken 4-6 minutes on each side. Remove chicken and let cool for 10 minutes.
  • DRESSING: Zest 1 tsp grapefruit. Juice 1/4 cup grapefruit juice. Whisk zest, juice, mamalade, oil, salt and black pepper in small bowl.
  • SALAD: Top the spinach with sliced chicken, grapefruit, radishes, avocado, and onion if desired. Pour dressing over salad; toss gently. Serve immediately.

2/3 cup plain fat-free yogurt
1/2 cup finely chopped peeled cucumber
3 tablespoons grapefruit juice
2 tablespoons light mayonnaise or salad dressing
1 teaspoon prepared horseradish
1/4 teaspoon pepper
3 cups cubed cooked chicken
2 cups red grapefruit sections (2 large grapefruit)
3/4 cup chopped peeled cucumber
1 medium avocado, peeled, pitted, coarsely chopped
5 cups watercress sprigs (2 large bunches) or arugula

Steps:

  • In large bowl, mix dressing ingredients with wire whisk or spoon. Add chicken, grapefruit, cucumber and avocado; gently toss until evenly coated.
  • Cover and refrigerate about 1 hour or until chilled. Serve on watercress.
