Time 40m

Yield 4

Number Of Ingredients 8

½ pound ground beef
1 cup all-purpose flour
salt and ground black pepper to taste
4 eggs
3 tablespoons vegetable oil, or as needed
1 tablespoon butter
1 tablespoon all-purpose flour, or more if needed
1 cup milk

Steps:

  • Divide the meat into 4 pieces, and flatten into thin beef patties. Heat a heavy skillet over medium heat until almost smoking, and cook the beef patties until browned on both sides, about 4 minutes per side; set the cooked burgers aside. Drain excess grease but leave any browned drippings in the skillet.
  • In a shallow bowl, mix together 1 cup of flour with salt and black pepper. In a separate shallow bowl, beat the eggs until smooth, mixing in a half teaspoon of water if needed.
  • Heat the vegetable oil in the skillet over medium heat. Dip both sides of cooked burgers into the eggs, then dredge in the seasoned flour; repeat 3 times to build up a thick coating on the burgers. Place the burgers into the hot oil, and pan-fry until golden brown on both sides, about 5 minutes per side. Set burgers aside.
  • Spoon away any excess vegetable oil. Melt butter in the skillet over medium heat, and stir to loosen any brown flavor bits left in the bottom of the skillet. Whisk in 1 tablespoon of flour until smooth. If you prefer a very thick gravy, use more flour. Gradually whisk in milk, cooking until the gravy is thick. Season to taste with salt and black pepper, and serve the gravy over the chicken-fried beef patties.

THE BEST CHICKEN FRIED STEAK

The Best Chicken Fried Steak image

I received this recipe from a co-worker about 5 years ago. This is by far the best chicken fried steak I've ever had. I've made this numerous times for my picky eater son and my southern-raised better half, as well as other family and friends. I get nothing but rave reviews each time.

Time 40m

Yield 4

Number Of Ingredients 14

4 (1/2 pound) beef cube steaks
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon black pepper
¾ teaspoon salt
1 ½ cups buttermilk
1 egg
1 tablespoon hot pepper sauce (e.g. Tabasco™)
2 cloves garlic, minced
3 cups vegetable shortening for deep frying
¼ cup all-purpose flour
4 cups milk
kosher salt and ground black pepper to taste

Steps:

  • Pound the steaks to about 1/4-inch thickness. Place 2 cups of flour in a shallow bowl. Stir together the baking powder, baking soda, pepper, and salt in a separate shallow bowl; stir in the buttermilk, egg, Tabasco Sauce, and garlic. Dredge each steak first in the flour, then in the batter, and again in the flour. Pat the flour onto the surface of each steak so they are completely coated with dry flour.
  • Heat the shortening in a deep cast-iron skillet to 325 degrees F (165 degrees C). Fry the steaks until evenly golden brown, 3 to 5 minutes per side. Place fried steaks on a plate with paper towels to drain. Drain the fat from the skillet, reserving 1/4 cup of the liquid and as much of the solid remnants as possible.
  • Return the skillet to medium-low heat with the reserved oil. Whisk the remaining flour into the oil. Scrape the bottom of the pan with a spatula to release solids into the gravy. Stir in the milk, raise the heat to medium, and bring the gravy to a simmer, cook until thick, 6 to 7 minutes. Season with kosher salt and pepper. Spoon the gravy over the steaks to serve.

MOCK CHICKEN FRIED STEAK WITH MILK GRAVY

Mock Chicken Fried Steak With Milk Gravy image

My mother made these for us four girls. Money was tight and she couldn't afford steak very often. These use ground beef. I use a 80/20 lean to fat. You can use ground round but it tends to be a little too dry. This is great with mashed potatoes. Everyone I have ever made it for loved it. The first time my DH had it he never knew it was ground beef. He just commented on the tenderness of the steak!

MOM'S CHICKEN FRIED HAMBURGER PATTIES

Mom's Chicken Fried Hamburger Patties image

Although updated for just four servings this was a favorite for Sunday dinner where mom would turn 2 pounds of ground beef into something that would feed her family of nine and make us feel like we had dined at the nicest restaurant in town. There is no way it could have tasted any better to her family.

1 c flour
1/2 c milk
1 egg
1 sleeve crackers crushed
salt and pepper to taste
oil for frying

Steps:

  • 1. Place the flour in a shallow dish
  • 2. whisk the egg and milk together in another shallow dish.
  • 3. Place the cracker crumbs in a shallow dish
  • 4. Make four patties out of the ground beef
  • 5. Place enough oil in either a nine or ten in skillet to be about an 1/8 to 1/4 inch deep and begin heating the oil on medium heat.
  • 6. Dredge the patties in first the flour be sure to coat both sides really well, then dip into the egg milk mixture coating both sides. ( this is the secret to getting your cracker or bread crumb coating to stick on any meats when you use the flour first then your egg mix it forms a type of glue that your cracker or bread crumb coatings stick to easier.) Last coat both sides well with the cracker crumbs. Salt and pepper to taste.
  • 7. When oil is hot place your patties in the pan and fry on each side 7 or 8 minutes until nicely golden brown and juices run clear.
  • 8. Mom always made homemade cream gravy, mashed potatoes and corn on the cob when in season along with her hot from the oven biscuts with butter and honey from our own hive. Oh my was this a wonderful meal.

CHICKEN FRIED HAMBURGER MEAT

Chicken Fried Hamburger Meat image

Forget the expensive chicken fried steak, use hamburger meat. This is a wonderful recipe! I use the same ingredients, that I use to make chicken fried steak.

Categories     Meat

Time 15m

Yield 3-4 patties, 2-3 serving(s)

Number Of Ingredients 6

1 -2 lb hamburger meat
1 -3 egg
1 pinch salt
1 pinch pepper
2 -4 cups flour
2 tablespoons oil

Steps:

  • Put the 2 tbsp of oil in frying pan, and heat it up on medium heat.
  • In a medium bowl mix the eggs salt and pepper, set aside.
  • On a large plate make an even layer of the flour, set aside.
  • I formed the hamburger meat into patties a little bigger then usual, about the size of a chicken fried steak, and made them as thin as possible.
  • Then I put the pattie in the egg mixture. Let it soak a little, if you don't the meat will fall apart easy.
  • Then I placed the pattie in the flour and coat both sides very well. Now this is my preference, I like to double dip my meat, now if you do that you need to be careful the hamburger meat doesn't fall apart.
  • After I coat the pattie I put it in the frying pan. I usually let mine fry about 5 mins on each side ( I like them very dark and crispy).
  • Then serve on a piece of bread and peppered gravy or with your favorite sides.

Country Fried Hamburger Steaks With Gravy image

If you can "Country Fry" chicken, pork , and beef cube steaks, why not ground beef patties ? Well, with this recipe you can.:) When handling the "steaks" please take care when turning over in the egg/milk mixture, because they might crumble. And the same goes for turning over in the seasoned flour. For easier handling of the "steaks" you may want to freeze them for about 1/2 an hour or until they are slightly firm.If desired please adjust seasonings according to your tastes. For a true comfort meal serve with your favorite mashed potato and green bean recipes.Submitted to "ZARR" on November 21st,2008

I'm not sure where my mom got this recipe, but she used to make it at least once a month. Although she never served it with gravy, I think peppered gravy would go great with this.
