1 package (12 ounces) whole wheat penne pasta
1-1/2 pounds boneless skinless chicken breasts, cut into 1/4-in.-thick strips
3 tablespoons olive oil, divided
3/4 teaspoon salt, divided
1/4 teaspoon pepper
3 garlic cloves, minced
1/2 cup reduced-sodium chicken broth
1/2 cup dry white wine or additional broth
6 plum tomatoes, chopped
2 cups fresh baby spinach
3/4 cup crumbled feta cheese

Steps:

  • In a 6-qt. stockpot, cook pasta according to package directions. Drain; return to pot., Meanwhile, toss chicken with 2 tablespoons oil, 1/2 teaspoon salt and pepper. In a large skillet, cook and stir chicken, half at a time, over medium-high heat 3-5 minutes or until no longer pink; remove from pan., In same skillet, heat remaining oil over medium heat. Add garlic; cook and stir 1-2 minutes or until tender. Add broth and wine. Bring to a boil, stirring to loosen browned bits from pan; cook 2 minutes. Stir in tomatoes and remaining salt; cook until tomatoes are softened. Stir in spinach until wilted., Add chicken and tomato mixture to pasta; heat through, tossing to combine. Serve with cheese.

An easy Mediterranean Sausage Pasta Recipe featuring chicken sausage, feta, olives, spinach and tomato in a lemon herb oil.

1/2 pound fettuccine pasta
1 package Al Fresco Spinach & Feta Chicken Sausages
1 tbsp olive oil (, classic not extra virgin)
1-2 cloves garlic (, minced)
1/2 tsp dried oregano
1/2 can large black olives (, drained)
12 grape tomatoes
4 cups baby spinach (, loosely packed)
1/4 cup feta cheese (, crumbled)
fresh lemon wedges
fresh ground black pepper

Steps:

  • Place large pot of water on to boil. You will cook the pasta while preparing the rest.
  • Slice the chicken sausages into roughly 1/2 inch pieces.
  • Place large deep skillet or dutch oven over medium-high heat. Add the oil, sausages, garlic and oregano. Toss and saute for a minute.
  • Add the zest of 1/2 a lemon. Stir it in.
  • Now toss in the olives and tomatoes. Stir occasionally while cooking, until the tomatoes are starting to blister and a couple have split. The sausage should be browned by this point as well.
  • Dump in the spinach. Mix in. Turn off the stove burner.
  • Add the drained pasta and toss well to coat.
  • Transfer from pan to serving platter and sprinkle with feta. Serve with fresh ground pepper and wedges of lemon.

4 chicken feta spinach sausage links
1/2 medium yellow onion, minced
4 medium garlic cloves, minced
1 1/2 Tbsp vegetable oil
1 box small pasta shells
SPICY SAUCE:
1 can(s) petite diced tomatoes w/green chilies 14.5 oz.
1 can(s) tomato paste 6 oz.
2 tsp basil
1 Tbsp tone's spicy spaghetti seasoning (includes salt, dehydrated onion, spices, dehydrated red and green bell pepper, sugar, parsley, dehydrated garlic, red pepper.) ----bought this at sam's club
1 Tbsp sugar
NON-SPICY SAUCE:
1 tsp basil
1 c fresh mild salsa
1/2 can(s) (hunt's) whole plum tomatoes w/basil
TOPPINGS FOR PASTA
parmesan cheese
3 Tbsp fresh parsley, chopped
CREAMY VERSION
1/2 - 3/4 c sour cream

Steps:

  • 1. Saute onion for 5 - 7 minutes and add garlic. Then saute for 2 to 3 more minutes. Remove the casing from the sausage and place the sausage in with onions and garlic. Cook on a medium heat.
  • 2. Cook your pasta while preparing sauce. Prepare spicy hot sauce: 1 can petite diced tomatoes with green chilies 14.5 oz., 1 can tomato paste 6 oz. 2 tsp. basil, 1 tbsp. Tone's spicy spaghetti seasoning, 1 tbsp sugar. Non-Spicy Sauce: 1/2 can of whole plum tomatoes w/basil cut up, 1 cup of fresh salsa and a tsp of basil.
  • 3. Add sausage mixture to pasta.
  • 4. Finish with sauces, parmesan cheese and fresh parsley on top.
  • 5. Ready to eat.
  • 6. June 5th, 2014 --- Decided to make this dish a little different and added 1/2 - 3/4 cup sour cream. Gave it a creaminess and lightened up the tomato flavor...very tasty this way as well.

10 ounces mezzi rigatoni
4 cups baby spinach (about 3 ounces)
2 tablespoons extra-virgin olive oil, plus more for drizzling
2 tablespoons pine nuts, chopped almonds or walnuts
Finely grated zest of 1 lemon, plus the juice of 1/2 lemon
1/4 teaspoon red pepper flakes
2 tablespoons grated parmesan cheese, plus more for topping
2 sweet Italian chicken sausage links (3 ounces each), casings removed
3 cloves garlic, thinly sliced
Freshly ground pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
  • Meanwhile, pulse 2 cups spinach, 2 tablespoons water, 1 tablespoon each olive oil and nuts, the lemon zest and juice, 1/2 teaspoon salt and the red pepper flakes in a food processor until smooth. Scrape down the sides; add the parmesan and pulse until smooth. Set the pesto aside.
  • Form the sausage into nickel-size patties, about 1/2 inch thick. Heat the remaining 1 tablespoon olive oil in a large nonstick skillet over medium heat. Add the patties and cook until browned, about 3 minutes. Flip, add the garlic to the skillet and cook until the patties are just cooked through, about 2 more minutes.
  • Add the pasta, pesto and 1/4 cup reserved cooking water to the skillet. Toss to coat, adding more cooking water as needed; season with salt and pepper. Stir in the remaining 2 cups spinach. Top with parmesan and the remaining 1 tablespoon nuts; drizzle with olive oil.

2 pounds skinless, boneless chicken thighs, cubed
1 pound pork fatback, cubed
1 tablespoon coriander seeds, toasted and ground
2 cloves garlic, minced
1/4 cup chopped fresh mint
Finely grated zest of 3 lemons
Kosher salt
1/2 cup crumbled feta cheese
1/4 cup extra-virgin olive oil, plus more for serving
1/4 cup white wine, chilled
1 8-foot hog casing, soaked in water 30 minutes and then flushed with water
Sliced tomatoes, for serving
Chopped fresh parsley, for serving
Freshly ground pepper

Steps:

  • Combine the chicken, pork fatback, coriander, garlic, mint, lemon zest and 2 tablespoons salt in a large bowl. Transfer to a large plastic zip-top bag and refrigerate overnight.
  • At least 30 minutes before grinding the meat, place all of your tools (including the meat grinder parts, stand mixer bowl, stand mixer paddle attachment and sausage stuffer parts) in the freezer to chill.
  • Using your meat grinder, grind the marinated meat mixture through the small die plate into the chilled bowl of the stand mixer. Refrigerate at least 30 minutes, then return the mixture to the mixer. Add the feta, olive oil and wine and beat on medium speed using the chilled paddle attachment until combined. Refrigerate until ready to use.
  • Stuff the sausages (see Cook's Note) and, for best results, refrigerate overnight.
  • Before cooking, pierce each sausage several times with a pin. Grill over medium heat until the center registers 160 degrees F, 10 to 12 minutes. (You can also pan-fry or broil the sausages.) Drizzle the tomatoes with olive oil, sprinkle with parsley and season with salt and pepper. Serve the sausages with the tomato salad.

I found this Chicken Sausage with feta and spinich in it at Sprouts grocery store, Wasn't sure if I was going to like it but once I made this dish I fell in love with it.

4 peices of chicken sausage with spinach and feta cheese
2 Tbsp butter
2 Tbsp flour
1 1/2 c milk
salt and pepper to taste
1 tsp chives, dried
1/4 tsp nutmeg
1 tsp garlic powder
1 lb cooked pasta

Steps:

  • 1. in a deep skillet place sausages in pan and add just enough water that the meat is half way covered. Cook on med-hi heat until sausages are cooked through.
  • 2. Remove sausage from the pan while reserving the water for later use. Cut sausages into slices. set aside
  • 3. in skillet melt butter, when melted add flour and let cook for about 2 minutes stirring constantly, Then add milk while whisking to avoid flour clumps, Then add water from the sausage until sauce reaches the consistency you would like( if sauce becomes to thin just add small amounts of flour until it thickens bake to the consistency you want)
  • 4. add salt pepper garlic powder nutmeg and chives. stir well to incorporate. Serve immediately over pasta and sausage. Garnish with Parmesan cheese.

Spinach & Feta Chicken Sausage Fettuccini Recipe image

1 pkg. (12 oz.) al fresco Spinach & Feta Chicken Sausage
1 jar (15 oz.) Classico Light Creamy Alfredo Pasta Sauce
8 oz. fettuccini pasta
2 Tbl. olive oil
1 clove garlic, peeled and minced
1/4 cup chopped white onion
1 Tbl. finely chopped rosemary
1/2 cup julienne sun-dried tomatoes
1/2 cup shredded Parmesan cheese
1/2 cup crumbled feta cheese
Cooking spray
9 oz. fresh baby spinach leaves, rinsed

Steps:

  • Cut chicken sausages on a diagonal 1/4 inch thick. Cook fettuccini using package directions. Drain, reserving 1/4 cup of pasta water. Coat large skillet with cooking spray. Heat over high heat; add olive oil, saute garlic and onion for 2 minutes. Add sausage, saute for 3-4 minutes. Fold in pasta, rosemary, tomatoes and cheeses. Add Alfredo sauce and pasta water. Simmer for 8-10 minutes. Toss in baby spinach, stir incorporating all ingredients. Remove from heat; serve immediately.
