CANE SAUCE (FOR DIPPIN' CHICKEN)

The sauce from Raisin' Canes restaurant, also similar to a few other chicken finger restaurants (like Guthrie's.) I looked at tons of websites, and combined recipes until it tasted the same to me. This makes enough for 2-3 people to dip chicken, texas toast, and fries in.

1/2 cup mayonnaise
1/4 cup ketchup
1/2 teaspoon garlic salt
1/4 teaspoon Worcestershire sauce
1/2 teaspoon black pepper, to taste

Steps:

  • Combine all ingredients, mix well. Add additional pepper if desired.
  • You can serve immediately, but it will taste better if the flavors are given the chance to "meld" in the fridge for a few hours (or days) before serving.

I think I got this from Family Fun. A great kid friendly meal. I made this with a cooking class of kids grades 4 and up and they ALL loved it. The sauce is great with other stuff too. Finger friendly too! The fat grams will be less than stated, because you won't use all of the dip.

1 cup light mayonnaise
1/4 cup honey
2 tablespoons Dijon mustard
2 tablespoons natural creamy peanut butter
4 boneless skinless chicken breast halves, cut into strips (about 1 1/4 lbs)
1 1/2 cups finely crushed potato chips

Steps:

  • Mix dressing, honey, mustard and peanut butter.
  • Brush chicken with 1/2 cup of the dressing mix; coat with crushed chips. Place on greased cookie sheet.
  • Bake at 425° for 7 to 9 minutes. Turn; continue baking 4 to 5 minutes, or until lightly browned. Serve with remaining dressing mix as dipping sauce.
  • Serve cut-up carrots, celery or apples with remaining sauce.

CHINESE CHICKEN DUMPLINGS WITH DIPPIN' SAUCE



Chinese Chicken Dumplings with Dippin' Sauce image

These are time consuming but so yummy. The recipe makes a lot. You can freeze the dumplings and cook them at a later time. I could not find round wrappers so I used egg roll wrappers and cut them into rounds with cookie cutter.

4 oz shitake mushrooms rough cut
3 scallions green parts only
1 c grated jicama
3 clove garlic
1 lb ground chicken
1/2 c olive oil
1/4 c soy sauce
2 Tbsp sugar
2 pkg round dumpling wrappers
canola oil for frying
DIPPING SAUCE
1 c chinese black vinegar or rice vinegar
1 c soy sauce
4 clove garlic minced
1/2 c sugar
1 Tbsp sesame oil

Steps:

  • 1. Place first four ingredients in food processor and process until fine. Drizzle in the olive oil.
  • 2. Mix the ground chicken with the mushroom mixture and add soy sauce and sugar.
  • 3. Put some water in a small bowl. Lay our dumpling wrappers and wet the edges. Place a small amount of chicken mixture in center fold in half and pinch to close. Repeat until all dumpling wrappers are used.
  • 4. Boil a large pan of water. Carefully drop the dumplings in the water. When they float to the top carefully remove with slotted spoon.
  • 5. Place canola oil in large skillet. Brown each dumpling in oil and remove to a serving plate.
  • 6. For the sauce mix all ingredients together. Taste and adjust seasonings. Serve with dumplings .
  • 7. Tip. I couldn't find round dumpling wrappers so I used egg roll wrappers and cut out circles with cookie cutter.

2 teaspoons salt
2 teaspoons dry mustard
2 teaspoons ground turmeric
2 teaspoons paprika
2 teaspoons dried ancho chile powder
1 1/2 teaspoons ground cumin
1 1/2 teaspoons garlic powder
1 1/2 teaspoons ground ginger
1 teaspoon ground allspice
3/4 teaspoon onion powder
3/4 teaspoon white pepper
1/2 teaspoon cayenne
1/2 teaspoon black pepper
6 (5 ounce) boneless skinless chicken breast halves
2 tablespoons vegetable oil
2 1/2 cups chopped onions
1/2 cup cane syrup
1/4 cup finely diced fresh jalapeno pepper
2 cups heavy cream

Steps:

  • Combine the seasoning mix ingredients in a small bowl.
  • Sprinkle the chicken evenly with 2 Tablespoons of the seasoning mix. Rub it in well.
  • The turmeric in the seasoning mix turns the chicken a pretty golden color.
  • Heat the oil in a heavy 5-quart pot over high heat just until the oil begins to smoke, about 4 minutes.
  • Brown the chicken in batches, about 3 minutes on each side, then remove from the pot.
  • Add the onions to the pot and cook, stirring and scraping the pot frequently, for 8 minutes.
  • Stir in the syrup, jalapeno peppers, heavy cream, and remaining seasoning mix and scrape the pot bottom thoroughly to loosen all the brown bits.
  • Return the chicken and the accumulated juices to the pot and push it into the sauce.
  • Bring just to a boil, reduce the heat to low, then cover and cook, stirring occasionally, until the chicken is done, about 15 minutes.
  • Serve hot.
