4 boneless skinless chicken breast halves (1-1/2 pounds), cut into 1-inch cubes
1/2 teaspoon salt, divided
1/4 teaspoon pepper
1 tablespoon vegetable oil
1 cup finely chopped onion
1/2 cup finely sliced celery
1/2 cup diced green pepper
2 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 cup water
1-1/2 teaspoons paprika
Dash cayenne pepper
1 bay leaf
2 teaspoons cornstarch
1 tablespoon cold water
Hot cooked rice, optional

Steps:

  • Sprinkle chicken with 1/4 teaspoon salt and pepper. In a large skillet over medium heat, brown chicken in oil; remove and set aside. In the same skillet, saute onion, celery, green pepper and garlic until tender. Stir in tomatoes, water, paprika, remaining 1/4 teaspoon salt, cayenne pepper and bay leaf; bring to a boil. Reduce heat; cover and simmer for 10 minutes. , Add chicken. Whisk cornstarch and cold water until smooth; stir into chicken mixture and bring to a boil. Simmer, uncovered, until chicken is tender, 10-15 minutes. Remove bay leaf before serving. If desired, serve with rice.

4 medium chicken breast halves, skinned, boned, and cut into 1-inch strips*
1 (14 ounce) can tomatoes, cut up**
1 cup low-sodium chili sauce
1 1/2 cups green peppers, chopped (1 large)
1 1/2 cups celery, chopped
1/4 cup onion, chopped
2 cloves garlic, minced
1 tablespoon fresh basil or 1 teaspoon dried basil
1 tablespoon fresh parsley or 1 teaspoon dried parsley
1/4 teaspoon red pepper, crushed
1/4 teaspoon salt

Steps:

  • Spray a deep skillet with nonstick spray coating. Preheat pan over high heat. Cook chicken in hot skillet, stirring, for 3-5 minutes, or until no longer pink.
  • Reduce heat. Add tomatoes and their juice, low-sodium chili sauce, green pepper, celery, onion, garlic, basil, parsley, crushed red pepper, and salt. Bring to boiling; reduce heat and simmer, covered, for 10 minutes.
  • Serve over hot cooked rice or whole wheat pasta.

1 1/2 lbs boneless skinless chicken breasts, cut into 1/2-inch cubes
2 tablespoons cajun seasoning
3 teaspoons extra virgin olive oil
2 cups seeded diced green bell peppers
1 cut diced celery
1 cup diced onion
1/2 cup thinly sliced green onion, white and green parts
1 teaspoon seeded minced jalapeno
2 teaspoons roasted garlic, puree (*)
1 bay leaf
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon fresh ground black pepper
1/4 teaspoon crushed red pepper flakes
1 tablespoon cane syrup or 1 tablespoon light molasses
1 tablespoon granulated sugar
2 tablespoons dark brown sugar
tomato sauce
crushed tomatoes
1 1/2 cups water
1 teaspoon finely chopped fresh flat-leaf parsley
1 teaspoon finely chopped fresh basil
1/2 cup grated parmesan cheese, for garnish

Steps:

  • Place the chicken in a bowl and toss with 1 tablespoon of the Cajun seasoning.
  • Heat oil in a 4-quart Dutch oven over high heat. Add chicken and sauté for 3 minutes.
  • Add the bell pepper, celery, onions, jalapeno, garlic puree, bay leaf, oregano, dried basil, ground black and white peppers, red pepper flakes, cane syrup, granulated and brown sugars, and the remaining tablespoon of Cajun seasoning; cook for 10 minutes, or until vegetables are soft.
  • Pour in the tomato sauce and crushed tomatoes and simmer an additional 5 minutes.
  • Add the water, bring to a boil, reduce the heat to low, and simmer uncovered for 1 hour.
  • Stir in the fresh parsley and basil; heat for 1 minute. Serve with grated cheese.

12 ounces boneless, skinless chicken breasts, all visible fat discarded, cut into bite-size pieces
1 14.5-ounce can no-salt-added stewed tomatoes, undrained
1 cup fat-free, low-sodium chicken broth
1 cup diced green bell pepper
1 cup frozen cut okra, thawed
2 medium dried bay leaves
1 teaspoon sugar
1 teaspoon Worcestershire sauce (lowest sodium available)
1/2 teaspoon dried thyme, crumbled
1/4 teaspoon Louisiana hot-pepper sauce or red hot-pepper sauce
1/4 cup snipped fresh parsley
1/2 teaspoon salt

Steps:

  • In a large nonstick skillet, heat 1 teaspoon oil over medium-high heat, swirling to coat the bottom. Cook the chicken for 2 to 3 minutes, or until barely pink in the center, stirring frequently. Transfer to a plate.
  • In the same skillet, stir together the tomatoes with liquid, broth, bell pepper, okra, bay leaves, sugar, Worcestershire sauce, thyme, and hot-pepper sauce. Bring to a boil over medium-high heat, about 2 minutes. Reduce the heat and simmer, covered, for 20 minutes, or until the okra is tender and the mixture has thickened slightly, breaking up any large pieces of tomato near the end of cooking. Remove from the heat. Discard the bay leaves.
  • Stir in the parsley, salt, remaining 2 teaspoons oil, and chicken with any accumulated juices. If time allows, cover and let stand for 15 minutes so the flavors blend thoroughly.
