3 cups cubed (1 inch) cooked chicken breast
1 teaspoon poultry seasoning
1/4 teaspoon garlic powder
1 1/2 cups sour cream
1 cup milk
Salt and pepper to taste
2 cups shredded Cheddar cheese (8 oz)
3 green onions, chopped
1 pouch (6.5 oz) Betty Crocker™ cornbread & muffin mix
1 can (14.75 oz) cream style sweet corn
1 egg
2 tablespoons butter, melted

Steps:

  • Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In large bowl, mix chicken, poultry seasoning, garlic powder, sour cream and milk. Season well with salt and pepper. Fold in cheese and green onions. Spoon mixture evenly into dish.
  • Make cornbread mix as directed on pouch, substituting cream style corn for the milk and adding the egg and melted butter. Spread evenly over chicken mixture.
  • Bake about 30 minutes or until toothpick inserted in center of topping comes out clean.

1 (8.5 ounce) package cornbread mix
2 stalks green onions, sliced, white parts and tops separated
½ cup water, or as needed
1 ounce shredded Cheddar-Monterey Jack cheese blend
1 teaspoon olive oil
1 pound skinless, boneless chicken thighs, diced
1 (8 ounce) package carrots, sliced
½ (8 ounce) package fresh mushrooms, sliced
1 medium red bell pepper, diced
1 medium yellow onion, chopped
1 medium jalapeno pepper, seeded and minced, or to taste
2 teaspoons Cajun seasoning
salt and ground black pepper to taste
¼ cup water

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Prepare a 1 1/2- to 2-quart casserole dish with cooking spray.
  • Set aside 2 tablespoons of the cornbread mix and the white portions of the green onions for the filling.
  • Prepare the cornbread topping: combine remaining cornbread mix with 1/2 cup water, Cheddar-Jack cheese, and green portions of green onions in a mixing bowl; stir to combine. Add additional water, 1 tablespoon at a time, until fully combined and a thick, spreadable batter forms. Set aside.
  • Prepare the filling: heat a large nonstick pan over medium-high heat and add olive oil. Add chicken, carrots, mushrooms, bell pepper, onion, jalapeno, reserved white portions of green onions, Cajun seasoning, salt, and pepper. Cook and stir until chicken is no longer pink, 7 to 8 minutes. Stir in reserved cornbread mix. Add 1/4 cup water and bring to a simmer. Stir occasionally until slightly thickened, 1 to 2 minutes.
  • Transfer chicken and vegetable filling to the prepared casserole dish. Top with cornbread batter and smooth with a spatula. Don't worry if layer is thin.
  • Bake in the preheated oven until browned and bubbly, 20 to 25 minutes. Let rest for 5 minutes before serving.

1 cup sliced zucchini
1 cup sliced yellow squash
3 scallions, sliced

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 7x11-inch baking dish.
  • Heat olive oil in a large skillet over medium heat. Add zucchini and yellow squash; cook, stirring frequently, until fork-tender, about 4 minutes. Stir in white and light green parts of scallions, chili powder, cumin, and garlic powder. Set aside scallion tops for garnish.
  • Add drained corn, drained tomatoes, and chicken. Cook, stirring occasionally, until most of the liquid in the skillet has evaporated, about 5 minutes. Season with salt and pepper. Pour the contents of the skillet into a large mixing bowl.

So through many trials and failures I came up with my own combination of ingredients. I think it is quite good! So decided to share this recipe with you to see what you think.

4 boneless skinless chicken breasts, cut into eight cubes
2 tablespoons olive oil
1 (1 ounce) envelope taco seasoning
1 cup frozen corn, cooked as directed
2 (15 ounce) cans s and w brand caribbean black beans
1 (7 ounce) can diced green chilies
1 (14 ounce) can diced tomatoes with jalapenos
1 (2 1/4 ounce) can sliced olives, drained
1/2 cup medium salsa
1 tablespoon chicken soup base, paste (Smart and Final brand if interested) (optional)
1 (8 1/2 ounce) package sweet cornbread mix (Jiffy brand)
1/2 cup grated colby cheese or 1/2 cup cheddar cheese
1/2 cup grated monterey jack cheese

Steps:

  • In a hot skillet add the olive oil and chicken cubes, cook just until no longer pink.
  • Stir in the taco seasoning.
  • Add all the remaining ingredients with the exception of the corn bread mixture and the cheese.
  • Blend together and pour into a greased 9x12 inch casserole dish.
  • Mix, but do not bake the corn bread as directed on the package.
  • Spread the uncooked cornbread mixture on top of the casserole.
  • Sprinkle the cheeses that have been blended together evenly on top of the cornbread mixture.
  • Bake in a hot oven at 350 degrees for 35-45 minutes.
  • You want the cheese and the corn bread to turn a nice light golden brown color.
  • If you are a cornbread lover like myself, use two packages of prepared cornbread instead of one.

CHICKEN OR TURKEY CORNBREAD DRESSING CASSEROLE

This recipe will make one large and one smaller casserole, so freeze one for later, or serve both to a crowd! I have made this casserole without using the cooked chicken and it is still very good, you can also add in cooked chopped bacon in place of the chicken if desired, then use the drippings for the cornbread! You can bake and then freeze the cornbread up to 1 month ahead if desired, then defrost to use in this recipe. If you don't have a 10-inch cast-iron skillet use a 9-inch round cake pan. Since my family likes spicy, I add in 1-2 jalapeno peppers, seeded and finely chopped into the cornbread mixture, if you like extra heat then add them in! This is a very good casserole! Servings is for both casseroles and is only estimated.

2 teaspoons baking powder
1 teaspoon baking soda

1/2 cup butter
3 bunches green onions (about 12) or 1 large yellow onion, finely chopped

1 (16 ounce) package herb seasoned stuffing mix
2 (10 ounce) cans corn niblets, well drained or 2 cups frozen corn, thawed
3 -4 cups finely chopped cooked chicken or 3 -4 cups cooked turkey
5 (14 ounce) cans chicken broth
salt and black pepper
grated parmesan cheese (use any amount desired)

Steps:

  • For the cornbread; in a large bowl stir together the cornmeal, flour, baking powder, baking soda, salt, sugar and cayenne (if using).
  • Add in 2 eggs and the buttermilk; whisk until just moistened.
  • Set oven to 425 degrees.
  • In the oven, heat 3 tablespoons butter (or bacon drippings) in a 10-inch cast-iron skillet or cake pan for 5 minutes.
  • Pour the HOT butter or bacon drippings into the cornmeal batter; stir to combine, then pour the batter into hot skillet or cake pan.
  • Bake at 425 degrees for 20-25 minutes or until golden.
  • At this point you can freeze the the cornbread for up to 1 month if desired.
  • In a large skillet melt 1/2 cup butter over medium heat; add in the green onions (or yellow onions) garlic and celery, saute for about 5 minutes or until tender.
  • In a bowl whisk together 4 large eggs.
  • Break the cooled cornbread into pieces and add to the eggs along with the green onion mixture, stuffing mix, chicken broth, corn niblets and cooked chopped chicken or turkey; stir with wooden spoon until just blended.
  • Season with salt and black pepper to taste.
  • Butter both a 13 x 9-inch and a 9-inch baking pan.
  • Spoon the mixture between the 2 pans, then sprinkle the tops with grated parmesan cheese.
  • Set oven to 350 degrees.
  • Bake the 13 x 9-inch for about 50-60 minutes and the 9-inch for about 10 minutes less.

Cooking time does not include cook time for the cornbread or chicken...if making it at the same time, increase the cook time by 25 - 30 minutes. If you'd like you can use 2/3 cornbread and 1/3 biscuits.

4 whole boneless skinless chicken breasts
1/2 stick butter
1/2 c water
3/4 c pepperidge farm cornbread stuffing mix 16 oz
1 can(s) cream of mushroom soup 10.75 oz
1 c sour cream
1 c chicken broth
salt and pepper to taste

Steps:

  • 1. Cut the meat into bite size pieces. In a hot skillet greased with a little butter sear the chicken on all sides. It doesn't have to be cooked through just nicely browned.
  • 2. Season lightly with salt and pepper and set aside. When its done remove from the heat and set aside.
  • 3. Melt butter and water together in a saucepan over medium heat and once melted remove from heat and mix with the cornbread stuffing mix well until moistened. Set aside.
  • 4. In another bowl combine the cream of chicken soup, sour cream and chicken broth until smooth a fork or a whisk is good for this.
  • 5. Put 3/4 of the stuffing mixture into a large greased casserole dish. Add the chicken on top of this. Pour the sour cream mixture over it all and top with the remaining 1/4 of stuffing. Bake at 325 for about 45 minutes.

1 tablespoon vegetable oil
3 cups packed crumbled cornbread

1 large egg, lightly beaten
1/4 teaspoon dry crushed red pepper

Steps:

  • Sauté celery and onion in hot oil in a medium skillet over medium-high heat 7 minutes or until vegetables are tender; set aside.

4 to 6 chicken breast, boiled (reserve broth)
1 can(s) cream of celery soup
1 can(s) cream of chicken soup
1 c chicken broth (reserved from cooking chicken)
1 stick margarine or butter, melted
1 pan of corn bread (8 or 9-inch pan) recipe doesn't call for it, however, i add sliced celery and chopped onion to the cornbread batter before baking
2 boiled eggs, chopped up, optional

Steps:

  • 1. Preheat ovent to 325 degrees.
  • 2. Cook (boil) chicken breasts until done; save 1 cup broth. (For added flavor, I added 1/2 cup of chopped celery, 1/2 cup chopped onion and 3 chicken bouilon cubes to this broth) Freeze remaining broth to use in other dishes.
  • 3. Remove chicken from broth and cool enough to handle. Pull chicken off bones; cut in bite size pieces; set aside.
  • 4. In the mean time, bake your favorite cornbread. After baking cornbread, let cool. Crumble up corn bread fine and pour melted margarine over corn bread. Mix well; set aside. NOTE 2: if cornbread is warm just add butter that is at room temperature to the warm crumbs and stir to combine. NOTE 2: I made a 10-inch skillet of cornbread and took out 2 slices to serve with our meal.
  • 5. To the cut up chicken add 1 cup chicken broth and both cans of soup. NOTE: If you don't have cream of celery, use 2 cans of cream of chicken.
  • 6. In a greased casserole dish place a little more than half (I used about 2/3's of this mixture) of the corn bread mixture; spoon meat mixture on top of cornbread mixture. Add boiled eggs if desired, and top with remaining corn bread mixture.
  • 7. Bake at 325 degrees until bubbly. Ovens vary so start watching around 30 to 35 minutes. It took my dish 45 minutes. The last 2 minutes I turned the broiler on to give the top of casserole a toasty finish.

1 can(s) whole carrots
1 can(s) cut green beans
1 medium onion
1 stalk(s) celery
2 Tbsp salad oil
1 can(s) cream of chicken soup, undiluted
3/4 c milk, divided
3 can(s) chunk white chicken, drained
1 pkg cornbread mix (11-13 oz)
2 1/2 Tbsp dried parsley
1 large egg

Steps:

  • 1. I have been making this recipe since my husband and I first got married 33 years ago. It is a great recipe to make when you need some shortcuts, but something that still tastes yummy! First, let me explain what to buy regarding the cornbread mix. This is an old recipe and back when I first starting making this, they sold cornbread mix in an 11 oz pouch. Where I live, they no longer sell that size and I now buy two 6.5 ounce pouches and so I use 13 ounces instead of 11 and it turns out fine. They also have 6 ounce boxes instead of pouches so you can use 2 of those as well. You just need a total of between 11-13 ounces of cornbread mix. This can be Jiffy, Martha White, Krusteaz, it doesn't matter.
  • 2. Preheat Oven to 400. Drain the carrots and green beans. Chop the celery and onion.
  • 3. In a 3 quart saucepan, heat oil and saute the celery and onion for 2 minutes. Stir in the undiluted cream of chicken soup, 1/2 cup of milk, carrots, green beans & chicken. Bring to a boil. Turn down to simmer.
  • 4. Now, make your dumplings: Stir cornbread mix, parsley, egg, 1/4 cup milk, just until moistened.
  • 5. Pour your chicken mixture into a 2 quart casserole that has been sprayed with non stick cooking spray. Drop cornbread dumplings on top by heaping tablespoons.
  • 6. Bake 18-22 minutes or until bubbly and cornbread is browned.

1/2 cup butter
1/4 cup chopped onion
1 garlic clove, minced
1 (15 ounce) can corn
1 (15 ounce) can creamed corn
1/4 teaspoon salt
1 egg
1 (8 1/2 ounce) box corn muffin mix
2 cups cooked chicken, shredded
2 tablespoons canned green chilies
1 1/2 cups sour cream
salt and pepper
1 cup shredded monterey jack cheese

Steps:

  • Preheat oven to 375.
  • Melt butter and saute onion and garlic. Set aside.
  • Combine corns, salt and egg. Beat in muffin mix. Fold in butter mixture. Pour into greased casserole dish.
  • Combine chicken, chiles, sour cream, salt and pepper. Spread over corn mix, leaving 1/2 inch border around edges. Sprinkle with cheese.
  • Bake for 35 minutes.

1 cup sliced zucchini
1 cup sliced yellow squash
3 scallions, sliced
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1 (15.25 ounce) can Southwest-style corn with poblano and red peppers, drained
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®), drained
1 cup chopped cooked chicken
salt and ground black pepper to taste
1 (13 ounce) can evaporated milk
2 1/2 cups shredded Cheddar cheese
1 tablespoon cornstarch
1/4 cup chopped cilantro
1 (6 ounce) package Mexican-style cornbread mix (such as Martha White®)
2/3 cup milk
1 egg
1/2 jalapeno, sliced crosswise, or to taste (optional)

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 7x11-inch baking dish. Heat olive oil in a large skillet over medium heat. Add zucchini and yellow squash; cook, stirring frequently, until fork-tender, about 4 minutes. Stir in white and light green parts of scallions, chili powder, cumin, and garlic powder. Set aside scallion tops for garnish. Add drained corn, drained tomatoes, and chicken. Cook, stirring occasionally, until most of the liquid in the skillet has evaporated, about 5 minutes. Season with salt and pepper. Pour the contents of the skillet into a large mixing bowl. Pour evaporated milk into the same skillet. 1 small green pepper, diced (about one cup)
1 medium yellow onion, diced (about one cup)
1 cup barbecue sauce (I use this simple homemade BBQ sauce)
1/4 lb sharp cheddar cheese, shredded (about one cup)
1 (8 1/2 ounce) box Jiffy corn muffin mix, the necessary ingredients listed on the box (one egg and 1/3 cup milk)

Steps:

  • Add chicken thighs, green pepper, onion, and BBQ sauce to slow cooker.
  • Cover, and cook on "low" for 3-6 hours, until chicken is cooked through and onions and peppers are soft. (The cooking time will depend on the size and strength of your slow cooker).
  • Preheat oven to 350 degrees F.
  • Shred chicken in your slow cooker and add the BBQ chicken mixture to an 8×8″ casserole dish. Cover with shredded cheese, and set aside.
  • In a bowl, prepare corn muffin mix according to directions on package. Pour corn muffin mix over 8×8 casserole.
