This is the best Chicken Cordon Bleu recipe! Chicken stuffed with ham and Swiss cheese. I hope you enjoy it as much as I have.

8 skinless, boneless chicken breasts
8 slices cooked ham
4 slices Swiss cheese, cut into 1 inch pieces
salt and pepper to taste
1 teaspoon dried thyme
¼ cup melted butter
½ cup cornflakes cereal crumbs
1 (10.75 ounce) can condensed cream of chicken soup
½ cup sour cream
1 teaspoon lemon juice

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place each chicken breast half between sheets of plastic wrap and pound with a meat mallet to about 1/8 inch thickness. Place a finger of cheese on each ham slice and sprinkle lightly with thyme and salt and pepper to taste. Roll up seasoned ham and cheese 'jellyroll-style', then roll each chicken breast with ham and cheese inside. Tuck in ends and fasten with toothpicks.
  • Place melted butter in a small bowl and place cereal crumbs in a shallow dish or bowl. Dip each chicken roll in butter or margarine, then roll in crumbs, turning to coat thoroughly. Place coated rolls in a lightly greased 9x13 inch baking dish.
  • Bake at 400 degrees F (200 degrees C) for about 40 minutes or until chicken is golden brown and juices run clear. Serve with cordon bleu sauce, if desired.
  • To Make Cordon Bleu Sauce: In a small saucepan mix together the soup, sour cream and lemon juice. Heat over low heat, stirring occasionally, and serve hot over chicken rolls. Makes about 2 cups; 8 servings of 1/4 cup each.

8 thin slices deli ham

2 eggs
1 cup 2% milk
2 cups crushed cornflakes
1/2 teaspoon garlic powder
1/2 teaspoon salt

Steps:

  • Flatten chicken to 1/4-in. thickness. Top each with a slice of ham and cheese. Roll up and tuck in ends; secure with toothpicks. , In a shallow bowl, whisk eggs and milk. In another shallow bowl, combine cornflakes and seasonings. Dip chicken in egg mixture, then roll in crumbs. , Place on a greased baking sheet. Chicken cordon bleu is one of my grandson's favorite dishes and he loved this recipe. The bechamel sauce adds a great creaminess. Make this for your next dinner party and your guests will be very impressed!

BECHAMEL SAUCE INGREDIENTS:
2 Tbsp unsalted butter
2 Tbsp all-purpose flour
2 1/2 c milk or half & half
1 1/2 Tbsp chicken bouillon granules (or 1-1/2 bouillon cubes, crushed)
1 Tbsp dijon mustard
1 1/2 tsp worcestershire sauce
1/2 c (firmly packed) freshly grated parmesan cheese
CHICKEN CORDON BLEU CANNELLONI ROLLS INGREDIENTS:
8 lasagna "oven ready" pasta sheets
8 thinly cut (and pounded out thinner) chicken breasts
2 tsp italian seasoning blend
8 slice black forest ham
8 slice swiss cheese
2 Tbsp butter, melted
1/3 c freshly made italian bread crumbs
1/2 c freshly grated parmesan cheese

Steps:

  • 1. Béchamel sauce Directions: Heat milk in a small saucepan. Bring to a boil and remove from heat. Melt 2 tablespoons butter in a medium saucepan. Add flour and cook for 2 minutes stirring constantly. Whisk hot milk into flour mixture. Bring to a simmer, whisking frequently. Season with salt, pepper, Dijon mustard, and the Worcestershire sauce to taste. Next add Parmesan cheese set aside to keep warm.
  • 2. Bring a large pot of water to a boil. Cook Lasagna sheets for 2 minutes. Drain and spread flat on a parchment paper.
  • 3. Pound chicken thinly and season with an Italian seasoning blend.
  • 4. Place a slice of ham and fold up a slice of Swiss to encase it, like an tube with the ends closed.
  • 5. Next take the unseasoned side of your thinly slicked chicken breast and place the rolled ham tube in the middle. Roll chicken up tightly to encase the ham and cheese tubes and use a toothpicks, if desired, to keep ends closed. Roll into the pasta sheet tightly around chicken. Continue on until you have all 8 rolls completed.
  • 6. Next add the Béchamel sauce into your oven proof baking dish. Add the pasta rolls and baste them with the melted butter. Sprinkle the fresh Italian bread crumbs over top of each roll. Finish off with the freshly grated Parmesan cheese.
  • 7. Bake in a preheated 375 degree Fahrenheit oven for 30 minutes, or until thermometer placed into the center of each roll registers 165 degrees. Take out of the oven and let set for 7-10 minutes before serving.
  • 8. Garnish with fresh basil or or parsley for a nice color contrast.

1 cup sour cream
1 teaspoon parsley flakes
1 teaspoon marinade for chicken (white Worcestershire sauce) or regular Worcestershire sauce

Steps:

  • Spray 3- to 4-quart slow cooker with cooking spray. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; beginning in center of breast, gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick.
  • Place 1/2 ham slice and 1/2 cheese slice on each breast. Roll up, folding in sides. Place rolls, seam sides down, in single layer in slow cooker. In medium bowl, mix remaining ingredients; spoon over chicken.
  • Cover; cook on Low heat setting 3 hours 30 minutes to 4 hours 30 minutes.
  • Remove rolls from cooker to cutting board. Beat sauce in cooker with wire whisk until smooth. Spoon about 1/3 cup sauce onto each of 6 plates. Cut each roll crosswise into thin slices; arrange on sauce.

What makes this more special than the traditional cordon bleu rolls is the delicious combination of proscuitto and swiss. They complement one another perfectly. Serve this dish with rild rice and asparagus or a nice risotto for a quick - yet elegant - weeknight meal. I adapted this recipe from a crockpot cookbook I once had.

6 chicken breasts, pounded to 1/4 inch thickness
6 pieces prosciutto
6 slices swiss cheese
salt and pepper
1 (10 1/2 ounce) can cream of mushroom soup
1/2 cup milk
1/2 cup dry white wine

Steps:

  • On each chicken breast, place one piece of prosciutto and cheese. Roll up each chicken breast and secure with a toothpick. Season each roll with salt and pepper. Place in the Crock-Pot slow cooker.
  • In a small bowl, whisk together the soup, milk and white wine. Pour half of this mixture over the chicken breast rolls, placing the other half in the refrigerator for later. Cover and cook on Low for 4 to 6 hours or on High for 3 to 4 hours.

3 tablespoons butter, divided
2 pounds boneless, skinless chicken breast halves, sliced into thin strips
salt and ground black pepper to taste
2 tablespoons all-purpose flour
2 cups milk
1 cup shredded Swiss cheese
1 egg
1 (16 ounce) package egg roll wrappers
1 (8 ounce) package thinly sliced deli ham
1 (8 ounce) package thinly sliced Swiss cheese, slices cut in half
½ cup vegetable oil for frying

Steps:

  • Melt 1 tablespoon butter in a skillet. Cook chicken strips until no longer pink in the center, about 10 minutes. Season with salt and pepper. Transfer chicken to a plate.
  • Melt the remaining butter in the same skillet over medium-low heat. Whisk in flour until smooth. Cook, whisking constantly, until well combined, about 1 minute. Increase heat to medium. Add milk gradually. Cook, stirring constantly, until thickened and bubbling, about 7 minutes. Add shredded cheese, salt, and pepper. Cook and stir the sauce until the cheese melts, about 2 minutes. CHICKEN ROLL UP
2/3 c fine dry breadcrumbs
1 Tbsp finely chopped parsley
1/2 tsp salt
1/4 tsp pepper
1/4 lb thin sliced ham diced fine
3/4 c jarlsberg or gruyere cheese
8 chicken cutlets
1/2 c flour
2 eggs slightly beaten
SAUCE
1/4 c butter
1/4 c flour
1 1/2 c milk
3/4 c shredded cheese (same as above)
salt and pepper to taste
1 pinch nutmeg

Steps:

  • 1. Mix together the bread crumbs, parsley, salt and pepper. Set aside. In a small bowl, mix together the ham and cheese. Set aside. Pound the chicken cutlets thin. Lay the chicken cutlets out and divide the ham and cheese mixture between them, placing the mixture in the center. Roll up jelly roll fashion using toothpicks if you feel it is necessary. Dredge the rolls in flour. Coat with beaten egg, then roll in reserved crumb mixture covering well.
  • 2. Sauce: In saucepan on the stove, melt butter and then add the flour. Stirring with a wisk until the mixture smells like peanut butter. Yes, put your nose down there and soon as the mixture smells like peanut butter, add the milk all at once. Whip until smooth, thick and creamy. Add spices, cheese and set aside. If you are making ahead, put a skim of butter on the top to keep the sauce from forming a skin.
  • 3. In oil about an inch deep in a skillet, heat oil to 375 degrees. Brown the rolls on all sides being sure not to crowd in the skillet. Remove from skillet and drain on paper towels. Garnish and serve with the cheese sauce over top or on the side.

12 slices deli cut chicken breast
12 slices shaved ham
12 slices baby lace Swiss cheese
12 egg roll skins
1/2 teaspoon corn starch
1 teaspoon water
clarified butter or a butter spray
Mustard or dipping sauce of your choice.

Steps:

  • Preheat oven to 300º F. Mix the water and corn starch to make a paste. Place an egg roll skin on a sheet of waxed paper and layer it with chicken, ham and cheese leaving 3/4" of shin uncovered. Starting from the covered end roll it up and put a little paste on the end to seal. Repeat with remaining slices. Spray a cookie sheet with a nonstick spray. Spray or coat egg rolls with butter. Place egg roll on cookie sheet and bake for 10 to 15 minutes or until skins are golden brown and crisp. Serve with mustard or favorite dipping sauce.

5 thin chicken cutlets
5 slices domestic ham
5 slices American cheese
1 cup breadcrumbs
1/2 cup flour
1 1/2 cups milk
1 egg
8 ounces cream of chicken soup
10 toothpicks
2 tablespoons butter

Steps:

  • Lay down cutlet of chicken and put a slice of ham and a slice of cheese on top and roll it up, sealing it with 2 toothpicks. Dip it in milk bath and then roll it in flour. Then dip it in a beaten egg bath and roll it in bread crumbs. Brown it in frying pan with melted butter. Repeat with other cutlets.
  • In a small pyrex dish combine 1 cup of milk with cream of chicken soup and mix until even. Lay the rolls of chicken in the pyrex and spoon some mixture on top of each.
  • Place pyrex in preheated oven and bake at 375 for 25 minutes.
