Number Of Ingredients 13

2 cups all-purpose flour
2 tablespoons salt
2 tablespoons pepper
1 tablespoon dried thyme
1 tablespoon dried tarragon
1 tablespoon ground ginger
1 tablespoon ground mustard
1 teaspoon garlic salt
1 teaspoon dried oregano
2 large eggs
1/2 cup milk
1 broiler/fryer chicken (2-1/2 to 3-1/2 pounds), cut up
Oil for frying

Steps:

  • Combine the first nine ingredients; store in an airtight container. Yield: 2-1/2 cups coating mix (enough for 3 batches of chicken)., To prepare chicken: In a shallow bowl, beat eggs and milk. Place 3/4 cup coating mix in a large resealable plastic bag. Dip chicken into egg mixture, then add to the bag, a few pieces at a time; shake to coat. , Heat 1/4 in. of oil in a skillet over medium-high heat. Brown chicken on all sides; transfer to an ungreased 15x10x1-in. baking pan. , Bake, uncovered, at 350° for 45-55 minutes or until juices run clear.

This is a great chicken coating mix, it taste almost the same as Shake and Bake! When I made this I use seasoned salt but that is optional. For a kick, add in some cayenne pepper! If desired you reduce the salt slightly

4 cups dry breadcrumbs
1/3 cup vegetable oil
3 teaspoons salt
1 tablespoon paprika
1 tablespoon celery salt
1 1/2 teaspoons black pepper
1 teaspoon garlic powder
1/2 teaspoon onion powder
1 pinch dried basil
1 pinch dried parsley
1 pinch dried oregano

Steps:

  • In a large resealable bag combine the oil with all remaining ingredients; seal the bag and shake vigorously.
  • Remove half or more of the mixture for another time and store tightly sealed in the refrigerator.
  • Add in desired amount of chicken pieces; shake to coat.
  • Place on a greased baking sheet in a 425 oven for 45 minutes.

84 finely-crushed salted crackers (such as "Christie's Premium Plus )
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 teaspoon granulated sugar
1 teaspoon pepper

  • Place crushed crackers and seasonings in a plastic bag;Shake well to combine.
  • Makes 2 1/2 to 3 cups,enough to coat 6 pounds of chicken pieces.
  • Store unused portion of crumbs in airtight container in refrigerator.

Number Of Ingredients 10

1 lb boneless, fish, chicken or pork
1/2 c grated parmesan cheese
1/2 c bacon flavored or saltine cracker crumbs or panko bread crumbs
1/2 c yellow corn meal[my preference] (you can use white)
1/2 tsp each salt, pepper, garlic powder
1 1/2 tsp paprika, optional unless you use panko crumbs
2 large eggs, room temperature
1/2 c milk (i use evaporated milk)
1/2 c vegetable oil (omit if baking in oven) but use cooking spray
lemon wedges, chive, tarter sauce

Steps:

  • 1. Rinse meat, fish or chicken and pat dry. Combine parmesan cheese, cracker crumbs corn meal, or panko & spices in a large zip lock bag. Shake to mix.
  • 2. Then beat the eggs with the milk in a medium size bowl, dip meat, fish, or chicken into egg mixture, and then into ziplock bag and shake to coat each piece. Fry in hot oil for 5-7 minutes for fish, or until pork or chicken is done, turning to brown on both sides. If baking in oven spray a pan large enough to accomadate meat, fish or poultry with cooking spray, then add the meats, spray meats or fish lightly with cooking spray. Bake in preheated oven for times specified below.
  • 3. To bake CHICKEN OR CHOPS Preheat to 425 Degrees F. for 35 to 45 minutes for BONE IN, boneless chicken or chops 25 minutes, but check temperature for about 165 degrees F. To Bake FISH preheat oven to 450 degrees F. & bake for 8 minutes.
  • 4. Use a baking rack inside or on pan to allow food to get crispy all around all sides.Spray liberally with cooking spray. Garnish with Lemon wedges chopped chive & serve with tarter or seafood or hot sauce if desired.

KITTENCAL'S CRISPY COATING MIX FOR MOIST OVEN BAKED CHICKEN



Kittencal's Crispy Coating Mix for Moist Oven Baked Chicken image

I developed this coating recipe years ago, it makes the most wonderful crispy moist oven-baked chicken you will ever have, I always serve this chicken with recipe #145064 on the side to drizzle over the chicken *SO* good! Make certain to purchase and use only the already crushed boxed cornflake crumbs for this, and use only Shake and Bake Southern Fried flavor, I have tried many other flavors and brands and they are just not as good! The chicken will cook even more after you remove it from the oven and let it sit, so I like to bake mine for only about 40 minutes, and leave it on top of the stove until ready to serve, I find that it is even moister this way!

3/4 cup chicken coating mix (use only Shake and Bake Southern Fried coating mix , 3/4 cup is exactly one package of mix)
1 1/2 cups corn flake crumbs (the ready-made boxed kind)
2 teaspoons seasoning salt (use only seasoning salt)
2 tablespoons garlic powder (use or less if desired)
1 tablespoon onion powder
1 1/2 teaspoons fresh ground black pepper
2 whole chickens, cut into pieces (about 3 1/2 pounds each)

Steps:

  • Wash chicken pieces in cold water (leave the chicken moist so the coating will hold on to it) set aside.
  • In the plastic mixing bag that comes with the coating mix, combine all ingredients (except the chicken pieces) and shake bag to combine thoroughly.
  • Set oven to 425°F.
  • Set oven rack to lowest-bottom position.
  • Line a large 15-inch baking sheet with foil, and spray with non-stick cooking spray.
  • Shake each piece of chicken in the bag to coat thoroughly with mixture and place on the baking sheet.
  • Repeat with the remaining chicken pieces.
  • Bake for 45 minutes (you might have to bake for about 5 minutes more if the backs are attached to the legs).
  • *NOTE* Sometimes if you are using frozen defrosted chicken there might still be some water left in the chicken that will come out when baking, if you find that there is a lot of water in your pan about halfway through baking, just carefully remove the pan with a towel or oven mitts and hold over the sink to drain the water, and place back in the oven to bake (just enough to drain, careful not to remove the chicken from the pan and throw into the sink!).
  • The less water in the bottom of the pan the crispier you chicken will be).

1 Tbsp ground oregano
1 Tbsp ground margoram
1 Tbsp ground thyme
2 tsp ground rosemary

1 tsp ground sage
1 Tbsp paprika

Steps:

  • 1. Combine all the ingredients in a small bowl until evenly distributed. Spoon mixture into a small airtight container.Label.Store in a cool dry place. Use within 6 months.Makes about 1/2 cup of Mix.
  • 2. Oven Fried Chicken:1 1/2 tsp. Chicken Coating mix,3/4 cup all-purpose flour,1/4cup instant nonfat dry milk,2 tsp.sugar,1 tsp. baking powder,1/2 tsp.salt,2/3 cup hot water,2 Tblsp. vegatable oil. 1 (2 1/2 to 3 lb.) fryer chicken cut up.
  • 3. Preheat oven to 425 degrees.Combine all ingredients except chicken in a medium bowl.Blend well.Dip chicken pieces in batter and place on baking sheet.Bake uncovered 40 to 50 minutes,until golden brown and tender.Or if desired dip chicken in batter then fry in hot oil.
