5 poblano peppers
2 cups chicken bone broth
1 (8 ounce) package cream cheese, softened
1 cup sharp Cheddar cheese, shredded
½ cup shredded Monterey Jack cheese
½ cup salsa verde
2 tablespoons butter
¼ cup chopped onion
2 cloves garlic, minced
1 teaspoon ground cumin
1 pound boiled boneless, skinless chicken breast, shredded
salt and ground black pepper to taste

Steps:

  • Roast poblano peppers over open flame on a gas stove or grill until all sides are charred, 5 to 8 minutes. Place blackened peppers into a bowl and cover tightly with plastic wrap. Allow peppers to steam as they cool, about 20 minutes. Remove and discard skins.
  • Combine chicken broth, cream cheese, Cheddar and Monterey Jack cheeses, and salsa verde in a blender. Blend until smooth.
  • Peel the cooled poblano peppers and remove seeds. Finely chop peppers in a food processor.
  • Melt butter in a skillet over medium heat. Add onion, garlic, and cumin. Cook and stir until slightly browned, 3 to 5 minutes. Add poblanos and saute for 2 to 3 minutes. Add chicken and saute for 2 minutes more.
  • Pour cheese mixture into a stockpot over low heat. Add the chicken mixture and bring to a simmer. Cook until heated through, at least 10 minutes. Season with salt and pepper.

Steps:

  • Sauté oil, garlic and onions in large pan or Dutch oven until soft.

1 1/2 teaspoons kosher salt, plus more

1/2 cup shredded Monterey Jack cheese (about 2.5 ounces)
1 small onion, chopped
2 large garlic cloves, finely chopped
4 cups low-sodium chicken broth
1 (14-ounce) can diced tomatoes, preferably fire-roasted
1 teaspoon finely chopped canned chipotle chiles, plus 1 teaspoon adobo sauce
1/2 teaspoon freshly ground black pepper, plus more
1 pound boneless, skinless chicken breasts, cut crosswise into 1/2"-thick strips, strips cut in half lengthwise if large

Steps:

  • Arrange a rack in top third of oven; preheat to 425°F. Arrange 2 tortillas on a rimmed baking sheet and brush with oil. Bake 5 minutes, then flip and continue to bake until crispy, 4-5 minutes more. Carefully spread each tortilla with 2 Tbsp. refried beans; season lightly with salt and dust with cumin. 2 cups chopped cooked chicken

Steps:

  • In a large pot, bring the chicken broth to a light boil.
  • Add in chopped tomatoes; simmer on low.
  • Meanwhile, in a skillet, heat the butter, and saute the onion, add in the chiles; cook 2-3 minutes.
  • Stir in cumin and chili powder, then flour, blending well.
  • Gradually add in the half and half; stir to combine.
  • Transfer the mixture into the pot with the broth; cook at a bare simmer over very low heat for 15 minutes, stirring often.
  • Add in the cheese and sour cream carefully, stirring often.
  • Add in the cooked chicken; mix until combined.
  • Top with crushed tortilla chips, and grated cheddar sprinkled on top.

This is one of the best tasting soups I ever had but it isn't for everyone. If you are one of those people who likes cheese on their cheese then this recipe is for you. ;)

5 -6 chicken tenderloins, bite sized pieces
1 (6 ounce) box uncle ben's wild rice
1 (15 ounce) can campbell's chicken broth
1 (15 ounce) can water
1/2-1 teaspoon salt
1/2-1 teaspoon black pepper
1 cup half-and-half cream
4 -6 ounces Velveeta cheese, cut into cubes
1/2 cup shredded sharp cheddar cheese
2 tablespoons cornstarch

Steps:

  • Cut the tenderloins into bite size pieces then sprinkle with salt & pepper. Spray a large pot with cooking spray & cook the chicken until no longer pink.
  • Pour the broth & water in the pot then add the rice & seasoning packet. Bring to a boil then lower heat & simmer for 20 minutes, covered.
  • Note: If using quick cooking rice the time will be lowered to 10 minutes.
  • Mix the salt, pepper, & half-and-half in with the broth. Then add the Velveeta & shredded cheese to the pot. Stir until the cheese is melted.
  • Mix the cornstarch & a small amount of water in a cup to form a running paste. Pour this into the broth, stirring until it thickens.

6 slices thick cut bacon
1 pound boneless skinless chicken breast
¼ cup butter
¼ cup flour
2 teaspoons garlic powder
2 teaspoons ground chile de arbol (or cayenne pepper; to taste)
1 teaspoon smoked paprika
1 teaspoon kosher salt
1 teaspoon pepper
1 cup beer, Belgian style wheat beer (Blue Moon)
1 cup chicken broth
2 cups half and half
8 ounces mild cheddar cheese, shredded
1 teaspoon Worcestershire sauce

Steps:

  • Warm an 8 cup pot over high heat. Using clean scissors; cut bacon into pot. Cook bacon until lightly crisp, stirring occasionally. Meanwhile, cut chicken into bite size pieces. Remove bacon from pan and place on a plate. Add chicken into bacon grease to cook. Stir occasionally until chicken is cooked through. Remove chicken onto plate with bacon. Cut butter into 1 tablespoon pieces and add to pan drippings. Whisk in flour and spices. Add beer, broth and half & half. Whisk to combine and bring to a bubble. Add cheese whisk to combine, stir until you have a smooth mixture. Add Worcestershire sauce, chicken and bacon. Stir to combine. Allow to simmer until ready to serve, stirring occasionally. Garnish with chives and croutons. Enjoy!

This a quick meal that is sure to please! 45 minutes from start to finish. A spicy soup with chicken, salsa, and veggies topped with tostitos and a pile of mozza cheese - yum! You can make it as mild or as hot as you like. By omitting the cheese, this dish can be virtually fat free depending on your chicken broth/stock. You can also substitute the chicken for tofu and the chicken stock for vegetable stock and create a vegetarian dish. Be sure to use firm/extra firm tofu for this version. I combined chicken cooking time with prep time.

1 -1 1/2 cup salsa (mild, medium, or hot, whatever you normally use to dip)
1 1/2 cups corn (fresh, frozen, or canned)
1 medium onion
4 -6 cups chicken stock (or less if you are using bone in chicken)
2 cups water
1 -1 1/2 cup vegetables (soft, ie, broccoli, bell peppers, mushrooms, etc)
1 -2 tablespoon chili powder
1 garlic clove (chopped)
1 (260 g) bag Tostitos Scoops
1 -2 cup mozzarella cheese

Steps:

  • Cube and boil chicken in water and chicken stock.
  • While chicken is cooking (15 min) chop onion, garlic and veggies, and measure corn and salsa.
  • Add onion, veggies, corn, salsa, chili powder, garlic. Cover and bring to a boil and let simmer uncovered for 20-30 minutes.
  • Taste and add salt and pepper (extra chili powder) to your liking.
  • Ladle into bowls and top with tostitos and shredded mozzarella cheese. Enjoy!

1 cup elbow macaroni, uncooked
1/4 cup butter
1/2 cup carrot, finely chopped
1/2 cup celery, finely chopped
1 small onion, finely chopped
5 cups milk
8 ounces chicken broth
2 cups cheddar cheese, shredded
2 tablespoons cornstarch
3 tablespoons water
1 cup cooked chicken, chopped
1 (8 ounce) whole kernel corn, drained
1/4 cup frozen baby green pea
salt and pepper

Steps:

  • Boil macaroni noodles in unsalted water until tender. Drain and set aside.
  • Melt butter in a large saucepan. Add carrots, celery and onion. Sautee lightly for 2-3 minutes. Remove from heat and set aside.
  • In a large dutch oven, combine milk and cheese. Simmer on low heat just until cheese melts. Add chicken broth slowly.
  • In a small bowl combine cornstarch in water until a smooth paste; stir slowly into milk mixture. Cook until mixture thickens and comes to a boil. Boil 1 minute stirring constantly.
  • Into dutch oven stir in chicken, macaroni noodles, vegetable mixture, corn and peas. Simmer 2-3 minutes until heated thoroughly.
  • Ladle and sprinkle with cheese. Serve and enjoy!
