2 (8 ounce) packages cream cheese, softened
1 (1 ounce) package ranch dressing mix
1 (5 ounce) can chunk chicken, drained
½ cup chopped pecans

Steps:

  • In a medium bowl, combine cream cheese, ranch dressing mix and chicken. Form the mixture into a ball.
  • On a cutting board or a piece of wax paper, spread the chopped pecans. Roll the ball in the pecans until it is fully coated. Wrap the ball in plastic and chill for at least one hour.

1 package (8 ounces) cream cheese, softened
3 tablespoons Buffalo wing sauce
1 envelope ranch salad dressing mix
1 cup shredded cooked chicken
1 tablespoon finely chopped seeded jalapeno pepper
1/3 cup crumbled blue cheese, optional
1/2 cup finely shredded cheddar cheese
Celery sticks
Additional crumbled blue cheese and Buffalo wing sauce

Steps:

  • In a large bowl, beat cream cheese, wing sauce and dressing mix until smooth. Add chicken, jalapeno and, if desired, blue cheese; beat until combined. Refrigerate, covered, at least 1 hour., Spread shredded cheese on a large piece of plastic wrap. Shape cream cheese mixture into a ball; roll in shredded cheese to coat evenly. Wrap in plastic; refrigerate at least 1 hour. Serve with celery and additional blue cheese and Buffalo wing sauce.

2 tablespoons orange marmalade
1-1/2 teaspoons curry powder
1/4 teaspoon white pepper
2 cups finely chopped cooked chicken
2 tablespoons minced green onions
2 tablespoons minced celery
3/4 cup chopped toasted almonds or chopped fresh parsley

Steps:

  • In a bowl, beat cream cheese, marmalade, curry powder, salt if desired and pepper until smooth. Stir in the chicken, onions and celery. Shape into a large ball. Roll in almonds or parsley. Cover and chill. Serve with crackers.

The chicken spread is from the makers of Underwood devil ham. Based on Erica's review this is how I create the cheese ball. I grate my cheese on plastic wrap and toss the cheese ball on top and bring up the sides to cover the cheese at the same time molding it into the ball shape.

10-13 oz can chicken chunk
2 tsp onion powder (i use this in place of a small grated onion)
2 tsp worcestershire sauce
salt and pepper to taste
dash of garlic salt
1/2 c finely chopped pecans
grated cheddar cheese

Steps:

  • 1. Mix all ingredients (excluding the grated cheddar cheese) with a hand mixer until smooth. Do NOT soften the cream cheese beforehand and make sure the can of chicken is thoroughly drained. Mold into a ball and top with the grated cheddar cheese. This is a delicious served with Wheat Thins or any other type of cracker!
