CHICKEN AVOCADO CHEESE BAKE
Taken from Taste of Home magazine --- delicious crispy breaded chicken topped off with avocados and cheese, this is a delicious recipe and worth making! :)

Steps:
- Using a meat mallet, or the bottom of a small heavy saucepan, flatten the chicken breast halves to 1/4-inch thickness.
- In a bowl, combine the cornstarch, cumin, garlic powder, salt and pepper.
- Dredge the chicken in the cornstarch mixture, then in the egg mixture, then in the cornmeal.
- Heat the butter in a skillet over medium heat, and brown the chicken lightly on both sides (do not over-brown the chicken breasts!).
- Place the chicken in a shallow baking dish, and top with the avocado slices.
- Top with the grated cheese.
- Bake in a 350 degree oven for 15 minutes, or until the chicken is done, and the cheese has melted.
- Serve with a dollop of sour cream and chopped green onions-- DELICIOUS!

Steps:
- Place pancetta in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 5 minutes. Drain on a paper towel.
- Fill a large saucepan with 2 to 3 inches of water and bring to a boil. Reduce the heat to medium-low and keep the water at a gentle simmer. Crack egg into a small bowl then gently slip egg into the simmering water, holding the bowl just above the surface of water. Cook until egg white is firm and the yolk thickens, 2 1/2 to 3 minutes. Remove the egg from the water with a slotted spoon and dab on a paper towel to remove excess water.
- Place prosciutto on the toast. Spread a generous layer of avocado on top; season with salt and pepper. Add pancetta; top with the poached egg.

Steps:
- Preheat oven to 350 degrees.
- Combine flour and seasonings from step one in a large plastic bag. Scramble egg in shallow bowl.
- Coat chicken in egg and than add to bag and shake to coat.
- Melt butter in large fry pan over medium heat. Add chicken and saute untill golden on both sides. Remove and cover to keep warm.
- Using step two ingredients, add butter to fry pan and saute onion, garlic, and mushrooms until softened.
- Whisk in flour, wine, and broth. Cook, stirring occasionally for 5 minutes. Add avocado and 1/2 cup cheese; blend well.
- Place breasts in oven-safe dish and top with avocado mixture. Sprinkle with remaining cheese.
- Bake 10 minutes, or untill chicken is cooked through.

I made this tonight to use up some stuff from the fridge, and everyone loved it! The measurements are approximate, just add amounts to suit your own tastes :)

Steps:
- Divide sauce by 4, and spread over toast.
- Sprinkle a little cheese on each slice, to hold the toppings in place.
- Divide chicken between slices of toast.
- Top with avocado. Sprinkle with salt and pepper.
- Top with remaining shredded cheese, and place under the grill until cheese is melted and bubbling.
- Cut into fingers, and serve hot.
