COPYCAT TACO BELL NAKED CHICKEN CHALUPA
Sometimes you want the meat on the outside of your taco, right? The Naked Chicken Chalupa was invented by a genius who had that in mind. Salad on the inside golden fried chicken on the outside. Pretty cool.

Steps:
- In the bowl of a blender or food processor combine ingredients for Creamy Avocado Ranch Sauce. Blend until completely smooth. Transfer to a small container, cover and refrigerate until ready to use.
- In the bowl of a food processor combine ingredients for Naked Chicken Chalupa Shell. Process until completely combined and chicken has formed a paste, about three minutes. Transfer mixture to a bowl.
- Line two rimmed baking sheets with parchment, flour liberally.
- Using a 1/3 cup measure lightly sprayed with cooking spray to help, divide chicken mixture into 12 portions, placing each portion on a floured baking sheet. Place both baking sheets in the freezer while you roll out chicken shells.
- Flour a washable cutting board liberally. Transfer one chicken portion to cutting board and flour the top. Using a rolling pin, roll the chicken mixture into a 6-inch circle. If the mixture is too sticky to roll, continue to freeze it for a bit longer. Make sure the rolling pin and the work surface are well floured. Place rolled out chicken rounds back in the freezer, dividing each with parchment.
- In a pie dish or shallow rimmed platter whisk together Wet Ingredients thoroughly.
- In another shallow dish stir together Dry Ingredients.
- In a large heavy bottomed pot or dutch oven, with a deep frying thermometer attached to side, heat oil over medium-high to 340°F.
- Working one at a time, remove a rolled out chicken round from the freezer, dust off excess flour, dip in egg mixture on both sides, then Dry Mixture on both sides.
- Using kitchen twine tie chicken round into "taco" shape. If chicken is too soft after breading, place in freezer again for a few minutes and continue with remaining rounds.
- Before frying make sure to have kitchen scissors and tongs on hand.
- Place Chalupa shells into hot oil one at a time. Fry for 1 1/2 minutes undisturbed. Using tongs, lift Chalupa gently to the surface of the oil. Snip string, and gently remove. Chalupa should now hold it's shape. Continue to fry until golden brown and cooked through another 2 1/2 to 3 minutes. Transfer to a paper towel lined plate. Fill with Creamy Avocado Ranch Sauce, lettuce, tomatoes, and cheddar cheese; serve immediately.

- Preheat oven to 350°F.
- Spray large casserole dish with cooking spray.
- Lay two tortillas in bottom of dish, overlapping slightly.
- Top with a layer of chicken, a layer of cheese, and a layer of salsas.

CHICKEN CHALUPA CASSEROLE
I found several recipes for this and just tweaked it to make it work for me.. Was yummy and my family love it!

- 1. Boil the chicken breast. (I added celcery, carrots, and an onion so that I could use the broth later for soup or fried rice.) After the chicken is cooked allow to cool so that it can be shreaded.
- 2. I'm not a fan of crunchy onions so I always sauté them first with a little butter or margerine but this can be done in the same pot you use to cook the chicken mixture.
- 3. In a large pot add the chicken, rotel tomatoes (I use the generic ones), cream of chicken soup, onion and the sour cream and cook until warm and bubbly. (You can substitute one can of cream of mushroom if you prefer)
- 4. Cut tortillas into quarters. In a large 3 quart baking pan place one layer of tortillas into the bottom of pan. Next spoon on a layer of the chicken mixture. Top this with a layer of the cheese. I used 1 lb of Monzeralla and 1 lb of Monterray Jack mixed together. Then repeat layers until all ingredients are used up.
- 5. Bake at 350 for 45 minutes. I covered mine with aluminum foil to prevent the top from drying out. Let it set and cool for approximately 10-20 minutes then cut and serve.
- 6. Some additions or changes: you could serve with salsa, sour cream, or what ever you like. I'm thinking of adding ranch dressing next time I make it and even possibly some bacon crumbles. Also, you could use corn tortilla's instead of the flower ones. Enjoy!

- Grease a 9x13 inch casserole dish and line with tortilla chips.
- Add cooked chicken.
- Mix soup, sour cream, milk, chilies, cheese, onion, and garlic powder.
- Pour mixture over the chicken and chips.

Steps:
- Preheat oven to 350.
- Put tortillas on baking sheet, spread a thin layer of dressing (1 Tablespoon or so) on each tortilla and cook in oven for about 3 minutes.
- Remove from oven and sprinkle with cheese (enough to cover the tortilla and to your taste), half the chicken, and a few handfuls of tomatoes. Sprinkle with pepper.
- Put back into oven and cook about 8-10 minutes (you can take out earlier, we like ours crispy). Meanwhile, mix lettuce with salad dressing and croutons.
- Serve chalupa with salad. Enjoy!

- Preheat oven to 350. Mix salsas together. Put 2-3 TBSP salsa in bottom of 13X9 casserole dish and spread evenly. Place one layer or tortillas on bottom of dish. You may cut tortillas to fit. Combine rest of salsa, chicken and 1/2 of cilantro. Spread 1/2 of chicken mixture in dish on top of tortillas, top with cheese and repeat layers with tortillas, rest of chicken and cheese. Top with remaining cilantro. Cover and bake 30 min., remove cover and bake additional 10 minutes or until cheese starts to bubble/brown.

Steps:
- First, place tortillas in a deep dish and pour one can of chicken stock over so that they can soak while you prepare the remainder of the dish.
- (use cold stock or tortillas will get mushy) Melt butter in saucepan, stir in flour and then add one can chicken stock and pour off remaining stock from tortillas into this saucepan.
- Cook until slightly thickened over med-high heat and then add jalapenos.
- Turn heat off then stir in sour cream- mix thoroughly.
- Layer ingredients in a 9 x 13 casserole as follows: four (4) tortillas to completely cover bottom (I tear them in half to cover),1/3 of the chicken, 1/3 of the sauce 1/3 of the onions and then 1/3 of the cheese; repeat until all layers are used ending with cheese on top.
- Sprinkle with paprika Cover tightly and place in refrigerator overnight (it will work if left refrigerated for 8 hours).
- Bake at 350 degrees for one hour (remove cover half-way through baking).
- Probably best to let stand for 15- 20 minutes before cutting into serving pieces.

- Set aside about 1 cup cheese. Combine cheese, onions, olives, chiles, soup and sour cream. Set aside 1 cup of this mixture. Add chicken to remaider. Place about 3 tbsp. mixture on each tortilla. - Layer a tortilla, beans, chicken, salsa, and then cheese.
- Continue layering ingredients until your dish is full.
- Top with a last layer of salsa and cheese.

- Boil and shred chicken breast.
- Mix cream of mushroom and cream of chicken soup in large bowl, add shredded chicken, one cup cheese, diced green chili's (optional)
- Crush the bag of Doritos (the fun part for kids)
- Pore half of mixture into large (greased with butter) baking dish, add a layer of crushed Doritos and cheese, then layer mixture, Doritos, and cheese again putting lots of cheese on the very top.
- Cover with tin foil and bake at about 425 for 30 minutes, remove tin foil and bake additional 20 minutes until cheese on top is golden brown and bubbly.
- Enjoy!
